COCONUT AND LIME PALEO YOGURT (A-LIKE)



Coconut and Lime Paleo Yogurt (a-like) image

This coconut milk based paleo yogurt-a-like is simple, nutritious and doesn't require either cultures OR a yogurt maker! Top it with your favorite fruit and enjoy! This is very IMPORTANT: follow the instructions on your gelatin! I used Great Lakes grass fed gelatin and my instructions reflect this.

Number Of Ingredients 4

2 cups coconut milk
2 - 3 tsp grass fed gelatin
Juice of 1 lime
1/2 tsp vanilla extract

Steps:

  • Sprinkle the grass fed gelatin over 1/2 cup of coconut milk. Stir until the gelatin is a smooth paste.
  • Add the rest of the coconut milk to a saucepan and heat gently - add the gelatin paste, lime juice and vanilla extract.
  • Keep warming the saucepan and whisking constantly until all ingredients are smoothly combined.
  • Pour the liquid into a container and refrigerate until chilled: at least 1 hour and up to overnight.
  • When you are ready to eat, add the set Paleo Yogurt mixture to a food processor and process until smooth and creamy.
  • Serve and eat immediately.

I love the hint of coconut flavor in this plant-based yogurt with an extra citrus kick of lime. Nothing else necessary! I think it is perfect spooned onto granola for an instant breakfast bowl.

Zest of 1 lime plus 1 teaspoon freshly squeezed lime juice

Steps:

  • Mix all the ingredients together in a large bowl. Keep sealed in fridge for up to 5 days.

  • Shake the can of coconut milk then open it and pour it into a 2-cup glass jar. Twist open the probiotic capsules and empty the powder into the coconut milk. Discard the capsules.
  • Stir the probiotic into the coconut milk using a plastic, ceramic, or wooden spoon. Cover the jar with cheesecloth or a piece of paper towel and secure it with an elastic band.
  • Set the jar aside in a warm spot that is out of direct sunlight. After two days, move the jar to your fridge. It will take 8-12 hours for the yogurt to chill and thicken.

  • Place the milk into a sauce pan on the stove. Sprinkle the gelatin over the milk and let sit for a minute. Turn the burner on to medium heat and whisk the gelatin into the milk. Let the milk heat, stirring occasionally, until it’s hot to the touch and the gelatin is completely dissolved. It’s ok if it bubbles a bit, but don’t let it come to a complete boil.
  • Let the milk cool off for a few minutes, until it just feels warm to the touch (if you have a thermometer, It should be around 110 F.
  • Add the maple syrup (if using) then break apart and empty the contents of the probiotic capsule into the milk and whisk thoroughly. Pour the mixture into a pint-sized glass canning jar then do ONE of the following:
  • Put the jar of milk into the basin of the IP. Turn the Instant Pot on, choose the Yogurt Setting, and then manually adjust the time to 18 hours. You can of course do less, but it won’t be as tangy and may not set up as well. I wouldn’t go less than 10 hours.
