JOES CRAB SHACK COCONUT SHRIMP

Steps:
- Mix eggs and water. Set aside. Place 1/3 cup of cornstarch in a bowl for a dusting of shrimp. Mix in separate bowl 1/3 cup (the remainder) of cornstarch, coconut, sugar, salt, and flour, blend well.
- Heat oil for deep frying. Roll shrimp in cornstarch, then in egg wash, then finally roll in coconut mixture. Place shrimp in hot oil and deep fry until done. Shrimp will float to the top when cooked.
- Take care not to overcook shrimp. Serve with Joe's Crab Shack Pineapple dipping sauce or cocktail sauce.

IVAR'S CRAB AND SHRIMP DIP

- Preheat oven to 400 degrees F.
- Combine the first 5 ingredients in a large bowl. Mix on medium speed using a hand mixer until blended. Fold in the crab and shrimp. Transfer to a shallow 2-cup baking dish. Top with Parmesan. Bake for 20 minutes or until top is lightly brown.
- To make toast points, place bread slices on a baking sheet. Brush with olive oil on both sides. Bake in oven for 8 minutes while dip is also baking. Serve crab and shrimp dip with toasted bread slices.
OCEANSIDE SHRIMP AND CRAB DIP
I live on the coast where seafood is plentiful. This dip tastes best if you use fresh blue crab and fresh shrimp. If you like spicy food, adjust the horseradish and chili sauce to suit. This is a great way to use fresh seafood and to feed a party of hungry guests.

- Mix softened cream cheese with mayonnaise and Miracle Whip. Add salt, pepper, garlic salt/garlic, horseradish and Worcestershire to taste.
- Add small amount of milk to make creamy smooth.
- Add shrimp and crab, stirring in carefully.
- Chill for several hours; bring to room temperature before serving on assorted crackers.
- A light sprinkling of fresh chopped parsley on top adds to the presentation.
- Cooking time is chilling time.

I got this recipe off Allrecipes.com I've made this many times and turns out great everytime. You can use whatever kind of dipping sauce you'd like - I use Pina Colada Dipping Sauce and will post recipe for that as well. This is the best coconut shrimp I've ever had-even better than the local seafood restaurant.This was rated 5 out of 5 from 406 reviewers.

Steps:
- In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Mix well.
- Put other 1/4 cup flour in a bowl.
- Put coconut into another bowl.
- Hold shrimp by tail and dredge in flour, shaking off excess flour.
- Dip in egg/beer batter, allow excess to drip off.
- Roll shrimp in coconut and place on baking sheet lined with wax paper. Refrigerate for 30 minutes.
- Meanwhile, heat oil in deep fryer to 350 degrees (175C).
- Fry shrimp in batches: cook, turning once, for 2 to 3 minutes or until golden brown. Carefully remove to paper towels to drain.
- Pina Colada Dipping Sauce.
- 1/2 cup sour cream.
- 1/4 Pina Colado nonalcoholic drink mix.
- 1/4 cup crushed pineapple (canned).
- 2 tablespoons sugar.
- Combine all ingrediants and chill while you prepare the shrimp.
