Coconut Crusted Tofu is light, crispy and easy to make in the oven or air fryer! Delicious in salads, grain bowls or right off the pan with sweet chili dip.

1 14 oz extra firm tofu (400g // frozen, defrosted and cubed into 3/4 inch pieces)
3 tbsp soy sauce (45g)
2 tbsp coconut sugar (24g)
1/2 tbsp ginger, grated
1/2 cup non-dairy milk (120ml)
2 tsp lime juice (8ml)
3 tbsp gluten free flour (23g)
1/2 tsp garlic powder (optional)
1/2 tsp salt
1/2 cup panko breadcrumbs (45g // gluten free option)
1/2 cup shredded coconut (50g)

Steps:

  • Pre-heat oven to 400 F.
  • In a shallow bowl combine the soy sauce, coconut sugar and ginger. Add in the cubed tofu and toss in the marinate. Let it sit for 5 minutes.
  • In a bowl mix together the non dairy milk, lime juice, gluten free flour, garlic powder and salt. In another bowl, combine the panko and coconut shreds.
  • Dip the tofu into the batter then into the coating and place on a prepared baking tray. Bake for 15 minutes and then flip the tofu and bake for another 10-15 minutes, or until golden brown.
  • Serve with sweet chili sauce, lime juice or with a grain bowl!
  • Follow all instructions above. Instead of baking, place tofu pieces into air fryer at 400 F for 7 minutes. Flip the tofu pieces and then bake for another 5-7 minutes, or until crispy and golden brown.

  • Remove the tofu from the liquid filled package and place it between multiple layers of paper towel or a clean, lint-free dish towel. Place the wrapped tofu between two plates, cutting boards, or baking sheets and place something heavy on top (I use a kettle or pot full of water). Press the tofu for 30 minutes.
  • Once the tofu has been pressed, cut the block in half. Cut each piece into three 1/4-inch thick rectangles (cut the "thickness" of the block into three). Cut each rectangle into two triangles. You should now have 12 1/4-inch thick triangles.
  • Prepare two bowls for the coconut crust. In the first bowl whisk together the egg, cornstarch, water, and a pinch of salt and pepper until a smooth mixture forms. Place the unsweetened coconut in the second bowl.
  • Dip each tofu triangle into the egg mixture first, making sure it is fully coated, then into the coconut flakes. Place the coconut coated triangles on the cutting board until all pieces are coated.

  • Press the tofu with several-layers of paper-towel to remove as much water as you can. Then cut the tofu into 1/2-inch slabs & then press paper-towels.
  • To prepare the marinade, first combine the coconut sugar and soy sauce in a small-mixing-bowl. Microwave at 15second intervals, stirring in between, till the coconut sugar dissolves. This will take under a moment. Then add the fresh ginger & lime juice. Whisk to blend.
  • Transfer the tofu into a shallow baking-dish & pour in the marinade. Move the pieces around so each is totally coated. Cover and put in the refrigerator for at least 2hours. Flipping the pieces over & recovering together with all the marinade half way through. Place can of coconut milk from the fridge at this moment, too.
  • While the tofu is marinating, prepare the batter. Combine the flour, baking powder, cornstarch and water in a medium-mixing-bowl. Whisk to blend. Put in the refrigerator till you are ready to cook the tofu.
