BANANA-COCONUT DAIQUIRI

Steps:

• Freeze the banana slices on a plate until firm, at least 3 hours or overnight.
• Transfer the banana slices to a blender. Add the rum, cream of coconut, lime juice and 3 cups ice. Blend until smooth and thick, adding more ice if needed. Pour into large glasses; garnish each with a cherry.

FROZEN PINEAPPLE COCONUT DAIQUIRI

Steps:

• Place all the ingredients into a blender and process for about 1 minute until thick and creamy.
• Pour into a large glass and enjoy immediately whilst icy-cold.

COCONUT DAIQUIRIS

Steps:

• Combine the ingredients in a blender and whiz until smooth. Serve immediately without garnishes.

COCONUT NATURAL DAIQUIRI

Steps:

• Bring the sugar and coconut water to a boil in a small saucepan over medium heat. Simmer until the sugar is completely dissolved, about 2 minutes. Remove from the heat and let the coconut simple syrup cool completely. (This recipe makes approximately 3/4 cup coconut simple syrup, which can be used to sweeten other things if not used for making daiquiris.)
• Add the white rum, coconut rum liqueur, lime juice, 3 to 5 ounces of the cooled coconut simple syrup (depending on desired sweetness) and the shaved ice to a large martini shaker or pitcher. Shake or stir the ingredients until thoroughly mixed. Strain into 6 chilled martini glasses and garnish the rims of the glasses with lime wedges.

PINEAPPLE DAIQUIRI

Steps:

• Place all ingredients in a blender and blend until smooth. Serve immediately, garnished with a pineapple chunk or lime wheel and cocktail cherry if desired.
