COCONUT DATE BALLS
Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

Steps:
- Pit the medjool dates and soak them in warm water for 10 minutes until they soften
- Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
- Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
- Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

COCONUT DATE TRUFFLES ENERGY BALLS
These coconut date truffles are actually good for you! They are naturally sweetened with dates - no need for added sugar! Made with raw all-natural ingredients, vegan and gluten-free - these coconut date balls are super healthy and amazingly delicious! Eat them for dessert or as an energy ball for a healthy snack!

Steps:
- Put dates, water, cocoa powder and 1/2 cup of coconut flakes in a food processor fitted with the steel blade (reserve the remaining 1/2 cup of coconut flakes for coating the truffles).
- Process for 1 minute. Scrape down the sides of the food processor. Process for 4 more minutes, or until the mixture forms into a ball. If it hasn't formed into ball or turned into a smooth paste, add more water 1 tbsp at a time and process some more until it does.
- Put the remaining 1/2 cup of coconut flakes on a large plate.
- Line another large plate with parchment paper.
- Take 1 tbsp of date mixture from the food processor and roll with your hands into a ball. Put the ball on a plate with coconut flakes, and roll, pressing slightly, so it's coated with coconut flakes all over. Put the truffle on parchment paper. Repeat with remaining date mixture.

- PREP: Line a baking sheet or plate with parchment paper. Then, place a few spoonfuls of desiccated coconut into a separate small bowl or dish. This is NOT the 1 cup of coconut that goes into the balls, but what the balls get rolled into so that they're coated on the outside! Set aside.
- In a large food processor, add pitted medjool dates, desiccated coconut, cacao powder, hemp seeds, and water. Pulse until it forms a paste-like texture. If things aren't sticking together, feel free to add a splash more water until it does.
- Using a large spoon, take a couple spoonfuls of the mixture from the food processor and place it in your hands. Roll into balls, then roll the balls in the dish with the coconut until the outsides of the balls are fully coated. Place finished ball onto the parchment lined baking sheet/plate. *this part is meant to be a little messy!
- Repeat until all mixture is used up. Recipe as written should make about 10-12 balls, depending on size.
