Steps:
- In a medium to large bowl, whisk together the water, onion, celery, carrot, salt, pepper and garlic powder until it is combined.
- Pour the broth into a fondue pot.
- Bring the broth to a rapid simmer over medium-high heat.
- Place a piece of meat or vegetable on a fondue fork.
- Cook in the broth until you have reached your desired level of doneness.
- Serve with your favorite sauces and enjoy!

Steps:
- Combine sweetened cream of coconut and 12 ounces chocolate in heavy large saucepan. Stir mixture over very low heat until chocolate melts and mixture is smooth. Stir in whipping cream and extract. (Fondue can be prepared 8 hours ahead. Cover; store at room temperature. Stir over low heat to rewarm before serving.)
- Transfer mixture to fondue pot. Place over candle or canned heat burner. Serve with fruit for dipping.

- Place the curry paste in a large saucepan or wok with the oil. Fry for 1 min until fragrant. Tip in the vegetable stock, coconut milk and brown sugar. Simmer for 3 mins.
- Add the noodles, carrots and Chinese leaf and simmer for 4-6 mins, until all are tender. Mix in beansprouts and tomatoes. Add lime juice to taste and some extra seasoning, if you like. Spoon into bowls and sprinkle with spring onions and coriander.
