This Cranberry Coconut Mojito is festive, rich, decadent and vegan too! Made with classic mojito ingredients like lime juice, white rum, mint leaves and sweetener in place of sugar, we added a few extras to make it truly special like this time of year.

16 whole fresh mint leaves
2 oz fresh lime juice
1/4 cup sweetener of choice
4.5 oz white rum
1 tsp coconut extract
4 oz full fat coconut milk
2 oz diet cranberry juice
Ice
mint leaves, lime wheel, coconut shreds, cranberries to garnish

Steps:

  • In a cocktail shaker, muddle mint leaves, lime juice and sweetener. Cover with ice.
  • Add in coconut milk, rums and cranberry juice. Shake until shaker is cold. Strain into ice filled glasses, top with seltzer water, garnish with lime wheel, shredded coconut, cranberries and mint. Enjoy!

Number Of Ingredients 10

1/2 tablespoon finely grated lime zest, for rimming
2 tablespoons superfine sugar, for rimming
6 to 8 fresh mint leaves
3/4 ounce freshly squeezed lime juice, from 1/2 lime
1 teaspoon raw granulated sugar
2 ounces light rum
3 tablespoons cream of coconut
2 to 3 ounces club soda, to taste
Fresh mint sprig, for garnish
Lime wheel, for garnish

Steps:

  • Gather the ingredients.
  • If you like, rim a double old-fashioned glass with lime sugar: In a shallow dish, combine the finely grated lime zest with the sugar. Wet the glass rim with a piece of lime then roll the rim in the lime sugar, shaking off any excess.
  • In a cocktail shaker, combine the torn mint leaves, fresh lime juice, and raw sugar. Muddle well to dissolve the sugar.
  • Add the rum and cream of coconut, and fill the shaker with ice.
  • Shake vigorously for at least 30 seconds.
  • Strain into the rimmed glass over fresh ice.
  • Top with soda and garnish with the mint sprig and lime slice.

1 ounce club soda (more if you prefer)

Steps:

  • In a highball glass, muddle 6 mint leaves with cream of coconut.
  • Add in the rum, lime juice, and coconut milk and stir.
  • Fill with ice and top with club soda or sparkling water.
  • Garnish with shredded coconut and a lime wheel.

1 1/2 ounces canned coconut milk, preferably Funkin
1/2 ounce rock candy syrup
Juice of 1 lime
Ice cubes
2 ounces rum, preferably Montecristo Light
1 to 2 ounces club soda
Coconut Rum, preferably cruzan, for serving

Steps:

  • Combine mint, coconut milk, syrup, and lime juice in a mixing glass; muddle for a few seconds. Add ice, rum, and soda; stir to combine. Pour into a highball glass; add enough coconut rum to just float on the surface of the drink. Serve immediately.
