CRANBERRY COCONUT MOJITO RECIPE
This Cranberry Coconut Mojito is festive, rich, decadent and vegan too! Made with classic mojito ingredients like lime juice, white rum, mint leaves and sweetener in place of sugar, we added a few extras to make it truly special like this time of year.

Steps:
- In a cocktail shaker, muddle mint leaves, lime juice and sweetener. Cover with ice.
- Add in coconut milk, rums and cranberry juice. Shake until shaker is cold. Strain into ice filled glasses, top with seltzer water, garnish with lime wheel, shredded coconut, cranberries and mint. Enjoy!

COCONUT MOJITO
Steps:
- Gather the ingredients.
- If you like, rim a double old-fashioned glass with lime sugar: In a shallow dish, combine the finely grated lime zest with the sugar. Wet the glass rim with a piece of lime then roll the rim in the lime sugar, shaking off any excess.
- In a cocktail shaker, combine the torn mint leaves, fresh lime juice, and raw sugar. Muddle well to dissolve the sugar.
- Add the rum and cream of coconut, and fill the shaker with ice.
- Shake vigorously for at least 30 seconds.
- Strain into the rimmed glass over fresh ice.
- Top with soda and garnish with the mint sprig and lime slice.

- On a plate, combine unsweetened shredded coconut, lime zest, and kosher salt. Run a lime wedge around the rim of the glasses and dip them in coconut salt mixture to coat.
- Muddle mint leaves, 3 lime wedges, and sugar in a tall glass or cocktail shaker. Careful not to muddle too much. All we want is to release the minty flavor. Add coconut water, white rum, and coconut rum to the glass/shaker. Squeeze 2 tablespoons of fresh lime juice and stir/shake to combine.
