6 tablespoons butter or margarine, softened
1/4 cup granulated sugar
1/4 teaspoon salt
1 cup Gold Medal™ all-purpose flour
2 eggs
1 teaspoon vanilla
1 cup packed brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
1 cup flaked coconut
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. In small bowl, beat butter, granulated sugar and 1/4 teaspoon salt with electric mixer on medium speed until light and fluffy. Stir in 1 cup flour. Pat in bottom of ungreased square pan, 9x9x2 inches. Bake 12 to 17 minutes or until very light brown.
  • Meanwhile, in medium bowl, beat eggs slightly with wire whisk. Stir in vanilla. Gradually beat in brown sugar just until blended. Beat in 2 tablespoons flour and 1/2 teaspoon salt; mix well. Stir in coconut and pecans. Carefully spoon coconut mixture evenly over baked layer.
  • Bake 20 to 25 minutes or until golden brown and filling is set. Cool 10 minutes. Run knife around edges of pan to loosen. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

1 cup butter, softened
1 cup sugar
1 large egg, room temperature
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups sweetened shredded coconut, divided
Pecan halves

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg. Combine the flour, baking soda and salt; add to creamed mixture and mix well. Stir in 2 cups coconut., Divide dough in half; shape each into a 7-in. long roll. Roll in remaining coconut. Wrap tightly in waxed paper; refrigerate 1 hour or until firm., Unwrap dough; cut into 1/4-in. slices. Place 3 in. apart on ungreased baking sheets. Place a pecan half in the center of each. Bake at 325° for 20-25 minutes or until lightly browned. Cool for 2-3 minutes before removing to wire racks to cool completely.

2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt

1-1/2 cups sweetened shredded coconut

Confectioners' sugar

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, salt and baking powder; gradually add to the creamed mixture and mix well. Stir in coconut and pecans (batter will be thick). , Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.

1/4 cup sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1 cup 2% milk
1/4 cup butter, cubed
1 large egg
FILLING:
2 tablespoons butter, melted
1/2 cup sweetened shredded coconut, toasted
1/2 cup sugar
2 teaspoons grated orange zest
ORANGE GLAZE:
1 cup confectioners' sugar
1 to 2 tablespoons orange juice

Steps:

  • In a large bowl, combine 2-1/2 cups flour, sugar, yeast, and salt. In a small saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a firm dough. Cover and let rest for 15 minutes., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Divide dough in half. Roll each into a 12-in. circle. Brush with melted butter. Combine the coconut, sugar and orange zest; sprinkle over dough. Cut each circle into 12 wedges. Roll up wedges from the wide ends and place point side down 2 in. apart on greased baking sheets. Curve ends to form crescents. Cover and let rise until doubled, about 30 minutes., Bake at 375° for 12-16 minutes or until golden brown. Remove from pans to wire rack to cool. 1 tube (11 ounces) refrigerated breadsticks
2/3 cup coconut pecan frosting

Steps:

  • In a small bowl, combine sugar and cinnamon. Remove breadstick dough from tube (do not unroll); cut into 8 slices with a serrated knife. 10-12 medjool dates
2 cups pecans
Pinch sea salt
¼ cup desiccated coconut

Steps:

  • Pit the medjool dates and soak them in warm water for 10 minutes until they soften
  • Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
  • Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  • Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

7/8 c buttermilk or 3 tbs dry buttermilk powder and 7/8 cup water
1 large egg
3 c all purpose flour
1 tsp salt
4 Tbsp butter
1/4 c sugar
1/4 tsp baking soda
1 1/2 tsp active dry yeast
16 oz can coconut pecan frosting
1/2 c chopped pecans

Steps:

  • 1. Place everything in the bread pan except for chopped pecans and frosting.
  • 2. Turn machine on, and when it beeps that the dough is made, take dough out and turn a floured counter top.
  • 3. Gently stretch and roll into a 20 inch rope.
  • 4. Spread frosting on bottom of a 9x13 pan, sprinkle pecans on top.
  • 5. With a sharp knife divide dough into 12 pieces, then roll into a ball. Place into the prepared pan, cover and let rise in a warm place.
  • 6. A good hint to rise is to turn oven on to warm setting, let heat 2 min, then turn off. Place pan in warmed oven and let rise until doubled maybe 45 minutes.
  • 7. Preheat oven to 350 degrees, bake for 25 to 30 minutes, or until golden brown.
  • 8. Invert to serving dish, and don't worry about leftovers, you won't have any
