Coconut Protein Balls image

These allergy-friendly protein balls require no baking or chilling before they're ready to be eaten! Free from gluten and nuts, they're also suitable for vegan diets.

1½ cup quick oatmeal
3 soft Medjool dates (pitted)
6 tablespoons pineapple juice
1 cup hemp hearts
1 cup unsweetened flaked coconut
¼ cup unsweetened flaked coconut (for rolling)
4 tablespoons pure maple syrup

Steps:

  • Pulse oats and dates together in a food processor until the dates have been chopped into small pieces.
  • Add remaining ingredients. Pulsing at first to make sure everything is evenly combined, process the mixture until it starts to ball up and come away from the sides of the bowl.
  • Using wet hands, press the dough into approximately 1-inch (2.54 cm) balls. Roll each ball in extra coconut, and enjoy!

  • Reserve 2 tablespoons of coconut flakes for rolling. Combine the remaining coconut flakes, protein powder, extract, and coconut oil in a food processor. Pulse in short bursts to combine. Then scrape down the bowl and pulse again until mostly smooth. Pinch the batter between your fingers — it should stay together. If not, add another teaspoon or so of coconut oil.
  • Use a cookie scoop to portion out the batter and roll it into balls. Roll each ball in shredded coconut flakes.
  • Store in an airtight container in the fridge for up to 1 month. They can be frozen for up to 3 months.
