CHINESE COCONUT PUDDING



Chinese Coconut Pudding image

Here is the recipe for the lusciously light, snow-white, squares of coconut pudding that is served at Chinese dim sum. Simple to make and delicious! Because of the risk of salmonella in raw egg whites, I would substitute the appropriate amount of pasteurized egg whites, or egg whites reconstituted from a powder.

2 tablespoons unflavored gelatin
1 ⅜ cups boiling water
1 (5 ounce) can evaporated milk
1 cup white sugar
1 teaspoon coconut extract
2 egg whites

Steps:

  • Lightly grease a 1-quart mold.
  • In a large bowl, dissolve gelatin in boiling water. Stir in evaporated milk, sugar and coconut extract. Allow to cool to room temperature.
  • Meanwhile, whip egg whites until fluffy. When gelatin mixture has cooled to room temperature, place gelatin bowl in an ice bath. When mixture begins to set, fold egg whites into it. Spread in prepared mold and refrigerate until set.

1/2 cup butter or 1/2 cup margarine, softened
1 cup flour
1 tablespoon brown sugar
2 eggs, beaten
1 1/2 cups brown sugar, firmly packed
1/2 teaspoon vanilla
1 cup coconut
1/2 cup chopped nuts
1/2 teaspoon baking powder

Steps:

  • Combine the first three ingredients and pack the mixture into a buttered 8 inch square pan.
  • Bake at 350 degrees for 15 minutes.
  • Combine ALL remaining ingredients and pour over baked layer.
  • Return to oven and bake 30 minutes longer.
  • Cool completely and cut into squares.

Creamy coconut pudding dessert bars built on a pecan shortbread crust, and sweet cheese layer. Finished with whipped topping and a toasted coconut topping.

1/4 cup butter
1/2 cup flour
1/4 cup pecans (finely chopped)
4 ounces cream cheese
1/2 cup powdered sugar
2 cups whipped topping
3.4 ounce coconut pudding (instant, small box)
1 1/2 cups milk (2%)
1 1/2 cup whipped topping
1/3 cup coconut (shredded, toasted)

Steps:

  • Preheat oven to 350°F.
  • Cut butter into 1/4 inch cubes. Use pastry blender to press butter into flour. Continue to press butter into flour until you see no loose flour when you lift the pastry blender. Mixture should be crumbly. Mix in pecans.
  • Press crust mixture evenly into bottom of baking pan.
  • Place pan on bottom rack of oven. Bake for 15 minutes until crust starts to brown. Remove crust and cool for 30 minutes or until crust is cool to the touch.
  • While crust is baking, spread shredded coconut in a thin layer on a baking sheet lined with parchment paper. Place on upper rack of oven. Bake for 5 minutes and check. Stir coconut and bake for 5 minute times until the coconut is golden brown. This may only take 8-10 minutes. Remove from oven and allow to cool.
  • Mix cream cheese with powdered sugar until creamy with a hand mixer. Fold inn whipped topping until well blended. Consitency should be spreadable. Add a tablespoon or more whipped topping if needed.
  • Spread cheese layer over cooled crust. Set aside.
  • Mix pudding and milk in a large bowl with a hand mixer for 2 minutes. Pour over cheese layer. Spread evenly.
  • Spread whipped topping over pudding in an even layer. Sprinkle top with toasted coconut.
  • Store in refrigerator until ready to serve.

1 cup dried bread crumbs
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
  • Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
  • Bake 25 to 30 minutes. Let cool before cutting into bars.

1-1/2 cups finely chopped pecans
2/3 cup packed brown sugar

1 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed, divided
3 cups cold milk
1 package (5.9 ounces) instant chocolate pudding mix
Colored sprinkles, optional

Steps:

  • In a bowl, combine the flour, pecans and brown sugar. Stir in butter. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 375° for 15-20 minutes or until lightly browned. Cool on a wire rack., In a bowl, beat cream cheese and confectioners' sugar until smooth. Fold in 1 cup whipped topping. Spread over crust. In another bowl, whisk milk and pudding mix for 2 minutes. 1-1/2 cups cold 2% milk

1 cup sweetened shredded coconut, divided

Steps:

  • Place cake cubes in a greased 13-in. x 9-in. dish. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes (mixture will be thick). 1 cup BAKER'S ANGEL FLAKE Coconut, divided

Steps:

  • Combine graham crumbs and butter; press onto bottom of 9-inch-square pan sprayed with cooking spray.
  • Beat pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup COOL WHIP and 3/4 cup coconut; pour over crust.
  • Refrigerate 4 hours. Meanwhile, toast remaining coconut. (See tip.)
