How to Make Bordelaise Sauce image

This is a simple version of the classic French red wine and shallot reduction sauce. It's fantastic on a steak, roast beef, or whatever!

1 teaspoon butter
4 large shallots, peeled and sliced
1 pinch salt
1 cup red wine
2 cups veal stock
salt and freshly ground black pepper to taste

Steps:

  • Place butter and shallots into a saucepan with pinch of salt; cook and stir shallots over medium-low heat until caramelized and browned, about 20 minutes. Stir occasionally. Add red wine and bring to a simmer.
  • Reduce heat to low; cook until wine is nearly evaporated and pan juices are thick and slightly syrupy. Watch carefully, mixture burns easily. Add veal stock, return to a simmer, and cook until reduced by half and sauce is slightly thickened, about 10 minutes.
  • Pour sauce through a fine mesh strainer set over a container. Tap the strainer with a spoon while straining and squeeze out the last remaining drops of sauce from the residue. Season sauce to taste with salt and black pepper.

3 sprigs fresh flat-leaf parsley
2 sprigs fresh thyme
1 dried bay leaf
1 pound beef chuck, cut into 1-inch cubes
Coarse salt and freshly ground pepper
3 tablespoons vegetable oil
6 medium shallots, thinly sliced (about 1/2 cup)
1 head garlic, halved horizontally
1 bottle (750 ml) dry red wine
3 cups Veal Stock Veal Stock

Steps:

  • Make a bouquet garni: Tie parsley, thyme, and bay leaf in a small square of cheesecloth. Season meat with salt and pepper. Heat oil in a Dutch oven over medium-high heat, just until beginning to smoke. Add meat and sear until brown, about 3 minutes per side. Add shallots, garlic, and bouquet garni, and cook until shallots are translucent, about 3 minutes.
  • Add red wine, and bring to a boil, scraping any browned bits from the bottom of the pan with a wooden spoon. Cook until liquid is dark and syrupy and reduced by one-third, about 10 minutes.
  • Add veal stock, and bring to a boil. Reduce to a simmer, and cook, skimming as necessary, until the liquid has reduced by two-thirds, about 40 minutes. Strain through a fine-mesh sieve. Store, refrigerated, in an airtight container for up to 1 week or frozen for up to 3 months.

1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon celery seed
1 teaspoon kosher salt
1 tablespoon butter (or olive oil, for dairy-free)
2 tablespoons olive oil
1 tablespoon lemon juice
Finely chopped Italian parsley, for garnish

Steps:

  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, celery seed, and kosher salt. Pat the cod dry and sprinkle all sides with the seasoning.
  • Heat a large skillet over medium high heat and add the butter and olive oil. When butter is melted, add the cod and cook for 2 minutes.
  • Flip the cod and pour the lemon juice over the fish. Cook an additional 1 to 2 minutes until the cod is tender and starts to flake when you prick it with a fork (adjust based on the thickness of the fillets). Remove from the heat and sprinkle with the parsley. Serve immediately, drizzled with the sauce.

4 fillets cod, skinless, preferably center cut, about 1.5 lb total
Sea salt
1 teaspoon ground espelette pepper, divided, available at specialty markets or online; may substitute unsmoked hot paprika
1 teaspoon paprika, divided
4 tablespoons extra-virgin olive oil, divided, plus more for garnish
1 link Spanish chorizo, cut into ¼-inch coins; about ½ cup
1 small red onion, thinly sliced
1 small red bell pepper, thinly sliced, about ¾ cup
1 small yellow bell pepper, thinly sliced, about ¾ cup
1 small green bell pepper, thinly sliced, about ¾ cup
Freshly ground white pepper
2 cloves garlic, finely chopped, about 1 tablespoon
1 teaspoon tomato paste
1/2 cup high-quality white wine, preferably from the Basque region
2 plum tomatoes, blanched, peeled, seeded, cut into strips

Flat-leaf parsley leaves, for garnish

Steps:

  • Season one side of the cod fillets with a pinch of salt, a pinch of espelette pepper, and a pinch of paprika. Heat 2 tablespoons olive oil in a large skillet over medium heat. Once oil is hot, arrange chorizo coins around the edge of the pan; then place the cod fillets, spiced side down, in the center. Sear the fillets until they are lightly golden on one side, about 30 seconds; then remove from the pan and set aside, spiced side up. Flip chorizo coins and continue to sear until they release some fat, 1 minute.
  • Add 1 tablespoon oil to the pan. Add sliced onions and peppers; stir, then season with a pinch of salt and freshly ground pepper. Toss or stir to combine, then add a pinch of espelette pepper and a pinch of paprika. Stir and sweat until vegetables are soft but have taken on no color, 6-8 minutes.
  • To the vegetables, add chopped garlic and 1 more tablespoon olive oil; toss and stir. Add the tomato paste and white wine, stir, and simmer for about 30 seconds. Add the sliced tomatoes. Continue simmering until the pan is nearly dry ("au sec"), 5-7 minutes. Add water, then nestle cod fillets into the vegetables, spiced side up. Reduce heat to low and poach the fish, uncovered, until cooked, 10-15 minutes.
  • Cod is done when it's no longer translucent. Garnish the dish with parsley leaves and a drizzle of olive oil. Serve immediately.

1 tablespoon shallot, finely chopped
1 ounce mushroom, button, sliced
1 garlic clove, small, peeled and crushed
1 carrot, small, peeled and diced
1/2 teaspoon parsley, chopped
1 pinch fresh thyme
1 bay leaf, small
1/2 cup cabernet sauvignon wine
1 1/2 cups veal stock (available frozen at specialty food stores)
1 pinch black peppercorns

Steps:

  • In a small pot, sweat mushrooms, garlic, carrot and shallots until soft.
  • Add parsley, thyme bay leaf and wine and cook- stirring- until all liquid evaporates (do NOT boil!).
  • Add veal stock and continue cooking. Stir constantly until liquid is reduced by half.
  • Add peppercorns and continue to reduce until sauce is of desired consistency.
  • Strain through sieve. Discard solids.
  • Keep warm until ready to serve.
  • Divide sauce among 8 plates and place one grilled rib-eye steak on top of sauce.

A CHEAT'S BORDELAISE SAUCE



A Cheat's Bordelaise Sauce image

Classic bordelaise sauce, which can transform shoe leather into strip steak, is made with veal stock, demi-glace and time -- a lot of time. Here, though, you'll use pan drippings from pork chops, simmering them with a red wine reduction until the two combine into an unctuous, rich sauce that flanks the old methods. Strain the whole thing, stir in a little butter and seasonings, and drizzle it over the pork chops. This takes most of a bottle of pinot noir, so choose the one you won't mind finishing off in the kitchen yourself, alone with your heat and creativity.

2 tablespoons extra-virgin olive oil
1 shallot, chopped
1 clove garlic, chopped
2 stems fresh thyme
1 bay leaf
3 cups pinot noir or other red wine
Pan drippings from pork chops or 2 tablespoons demi-glace, preferably homemade
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper to tast

Steps:

  • Pour the olive oil into a large saucepan, place over medium-high heat and add the shallot and garlic and then the thyme and bay leaf. Cook until the shallots are light brown, then add the wine, lower the heat and simmer until reduced to about 1/2 cup.
  • Add the pan drippings from the chops or the demi-glace if you have it. Simmer for an additional 5 to 10 minutes and then strain into a clean saucepan. Return to medium heat until warm and whisk in the butter and season with salt and pepper to taste. Serve immediately drizzled over the pork chops.
