The BEST coffee cake muffins recipe made with Greek yogurt and topped with a cinnamon streusel topping and sweet vanilla glaze. So easy!

2/3 cup whole milk (at room temperature)
1/4 cup nonfat plain Greek yogurt (at room temperature)
2 cups all purpose flour
1/3 cup granulated sugar
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1/4 teaspoon kosher salt
2 large eggs (at room temperature)
5 tablespoons canola oil or light olive oil
1/4 cup honey
2 teaspoons pure vanilla extract
Zest of 1 small lemon
1/3 cup all purpose flour
1/3 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
5 tablespoons cold unsalted butter (cut into small pieces)
2/3 cup powdered sugar
1/2 teaspoon pure vanilla extract
1 tablespoon milk

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Coat a standard 12-cup muffin pan with nonstick spray or fit the cups with paper liners and coat the liners with nonstick spray (I find these muffins work best with liners, but if you don't have any on hand, they'll still turn out OK).
  • Start the muffins: In a liquid measuring cup, whisk together the milk and Greek yogurt. Set aside for 5 minutes.
  • Make the streusel: In a medium bowl, whisk together the 1:1 flour, brown sugar, cinnamon, and allspice. Add the butter and working quickly with your fingers, rub the butter into the dry ingredients until you are left with irregular crumbs. The dry ingredients should all feel moist; some crumbs will be like crumbs of wet sand; other crumbs can be as large as small peas. Place the mixture in the refrigerator.
  • Return to the muffins: In a medium bowl, whisk together the 1:1 flour, sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  • To the bowl with the milk mixture, add the eggs, oil, honey, vanilla extract, and lemon zest (if using). Whisk until well blended.
  • Pour the liquid ingredients over the dry ingredients. With a rubber spatula, stir quickly but gently to combine, stopping as soon as the flour disappears. It will look a little lumpy.
  • Divide the batter evenly among the muffin cups, filling them no more than 3/4 of the way to the top.
  • Remove the streusel from the refrigerator and scatter the crumbs over the top of the muffins (use it all!).
  • Bake the muffins for 18 minutes, or until the tops are golden and a toothpick inserted in the center of a muffin comes out clean. Place the muffin pan on a wire rack and let cool in the pan for 5 minutes. Gently remove the muffins from the pan (a butter knife can help) and place them on the wire rack to cool completely. Do not let them sit in the muffin pan for longer than 5 minutes, or they may become soggy. The muffins will be very delicate at first but will firm up as they rest.
  • Make the glaze: In a small bowl, whisk together the powdered sugar, vanilla, and milk. Drizzle over the top of the cooled muffins. Enjoy!

1/2 cup Imperial Sugar Light Brown Sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
1/3 cup canola oil
2 large eggs
1/3 cup Imperial Sugar Extra Fine Granulated Sugar
1/3 cup Imperial Sugar Light Brown Sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
1 1/2 cups all-purpose flour
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 teaspoon milk

Steps:

  • Preheat oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large glass measuring cup or another bowl, whisk together milk, canola oil and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Scoop the batter evenly into the muffin tray. Sprinkle with reserved crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean. To make the glaze, combine confectioners' sugar, vanilla and milk. Whisk until smooth. If the glaze is too thin, add more confectioners' sugar as needed. When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin. Allow glaze to set before serving.

  • Preheat oven to 400°. In a small bowl, combine brown sugar, pecans and cinnamon; set aside. In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In another bowl, whisk egg, milk and oil until blended. Add to flour mixture; stir just until moistened. , Spoon 1 tablespoon of batter into each of 12 paper-lined muffin cups. Top each with 1 teaspoon nut mixture and about 2 tablespoons batter. Sprinkle with the remaining nut mixture. , Bake until a toothpick inserted in center comes out clean, 22-24 minutes. Cool for 5 minutes before removing from pan to a wire rack. Combine glaze ingredients; spoon over muffins. Serve warm.

It is imperative that you use whole milk and that you carefully fold the ingredients together to have the right consistency for your muffins.

2 ¼ cups all-purpose flour
¾ cup white sugar
3 tablespoons ground cinnamon
1 ¼ tablespoons baking powder

¾ cup whole milk
2 tablespoons whole milk
10 tablespoons unsalted butter, softened
2 large eggs, beaten
½ tablespoon vanilla extract
1 ⅞ cups all-purpose flour
½ cup unsalted butter, melted
¼ cup white sugar
2 tablespoons white sugar
4 ½ tablespoons brown sugar
¾ teaspoon pumpkin pie spice, or more to taste
¼ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix then sift flour, sugar, cinnamon, baking powder, and salt together in a large bowl.
  • Mix milk, butter, eggs, and vanilla extract together in a large bowl with an electric mixer. Carefully fold in flour until combined but slightly lumpy. Pour batter into the prepared muffin tins, leaving a little room at the top for muffins to rise.
  • Combine flour, melted butter, sugar, brown sugar, pumpkin pie spice, and salt for the topping in a bowl; mix until crumbly. Add a generous amount on top of each muffin.
  • Bake in the preheated oven until tops spring back when lightly pressed, 20 to 30 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

1 (18 ounce) package Pillsbury yellow cake mix
1 (3 ounce) box instant vanilla pudding
4 eggs
1 cup sour cream
1 cup vegetable oil
1 cup chopped pecans
1 cup packed brown sugar
3/4 cup Kahlua

Steps:

  • In a small bowl combine pecans, brown sugar and Kahlua, mix well and set aside for now.
  • In a large mixing bowl, combine yellow cake mix, dry pudding mix, and beat in eggs one at a time beating well after each addition.
  • Add in sour cream and vegetable oil; mix well.
  • Beat for a couple minutes on medium speed then blend in your pecan mixture; mix well.
  • Grease with solid Crisco, very well, a bundt pan. Being sure to get into all the creases in the pan so that it is very well covered with solid shortening. As cake can stick if not a well greased pan.
  • Pour your cake batter into the pan, and put into a preheated 350°F oven.
  • Bake at 350°F for 45-60 minutes or until toothpick tests done.
  • Allow to cool in pan for 10 minutes then remove to a cooling rack to cool completely. Serve.

I found this recipe at Bed & Breakfast Online, a neat site that features B&B's from all over the U.S. and their favorite recipes. This recipe is from Highland Croft B&B in Guthrie, OK. It is an awesome recipe that fills the house with a wonderful aroma while baking and be warned, you won't be able to eat just one!

1 box yellow cake mix
1 (3 ounce) box vanilla instant pudding mix
4 eggs
1 cup sour cream
1 cup vegetable oil
1 cup chopped pecans
1 cup brown sugar
3/4 cup Kahlua

Steps:

  • In a small bowl combine pecans, brown sugar and Kahlua.
  • Let sit until needed.
  • In a large bowl,and I do mean large, combine the cake mix, pudding mix, vegetable oil and sour cream, and mix on low speed until moistened.
  • Add the eggs, one at a time and mix well after each.
  • Beat for 2 minutes on medium speed, the mixture will be very thick, don't panic.
  • Slowly mix in the pecan mixture, until well mixed.
  • Pour into very well greased muffin cups, see note below.
  • Bake at 350 for 15 to 20 minutes, or until toothpick comes out clean.
  • Pop out of pan and cool on rack, if you can wait that long to eat one.
  • NOTE: Make sure you use well greased muffin tins, if you're using non-stick pans.
  • I spray mine with Baker's Ease and am sure to run my finger all around the inside and rim.
  • I find the darker the pan, the better the muffin.
  • If they stick, you did not grease enough.
  • Just run a spatuala around the edge to release.
  • I noted these make 18 regular size muffins.
  • These do not rise a lot so you can fill 2/3 way full without spill over.
  • When I make, I make 12 regular muffins and 6 mini-bundt size, or I might make 48 mini muffins and 6 regular muffins.
