1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup room temperature butter
1/2 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
1/2 cup whole milk
1/2 cup orange marmalade (thinned with a TBS orange juice or water)
2 TBS orange juice
1 tsp orange zest
1/4 cup light brown sugar (packed)
2 tablespoons flour
1 tablespoon butter (cold and cut into tiny pieces)
1 tsp orange zest
A pinch of salt
1/3 cup sliced almonds

Steps:

  • Preheat oven to 350°. Grease an 8-inch square baking pan or spray with baking spray.Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  • Using an electric mixer on medium, beat butter, sugar, and brown sugar until light and fluffy. Mix in egg and vanilla.
  • With mixer on low, add the flour mixture a third at a time, alternating with the milk. Mix until just combined.
  • Transfer half of batter to prepared pan. Spread it out in an even layer. I found a small offset spatula useful to spread the batter into the corners.
  • Spread marmalade over batter, leaving a 1/2-inch border around the edges.
  • Top with remaining batter and gently spread over the marmalade.
  • Use a fork to mix brown sugar, flour, butter, orange zest, and salt until crumbly. Stir in almonds.
  • Sprinkle topping evenly over cake.
  • Bake 35 to 40 minutes, or until the edges are browned and a wooden skewer to toothpick inserted into the center comes out clean.
  • Cool completely in pan before serving.

1/2 cup orange marmalade
1/4 cup sliced almonds
3 tablespoons butter or margarine, melted
2 tablespoons light corn syrup
2 1/4 cups Gold Medal™ all-purpose flour
1/4 cup sugar
1 tablespoon grated orange peel
3 teaspoons baking powder
1/2 teaspoon salt
About 1 cup half-and-half

Steps:

  • Heat oven to 375°F. In 9-inch round cake pan or 8-inch square pan, mix marmalade, almonds, butter and corn syrup.
  • In medium bowl, mix flour, sugar, orange peel, baking powder and salt. Stir in just enough half-and-half so dough leaves side of bowl and forms a ball. Drop dough by 12 spoonfuls onto marmalade mixture; flatten slightly.
  • Bake 30 to 35 minutes or until golden brown. Immediately place heatproof serving plate upside down onto pan; turn plate and pan over. Let pan remain about 1 minute so marmalade mixture can drizzle over coffee cake. Serve warm or cool.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon freshly grated nutmeg
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup orange marmalade
3/4 cup confectioners' sugar
2 tablespoons orange juice
1 teaspoon finely grated orange zest plus orange slices, for serving

Steps:

  • Combine the flour, brown sugar, nutmeg and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the marmalade on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.
  • When the cake is cool, whisk together the confectioners' sugar, orange juice and orange zest in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

Confectioners' sugar and/or chopped almonds, for topping
3/4 cup granulated sugar

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Brush an 8-inch square baking pan with canola oil. Beat the egg whites and granulated sugar with a mixer until stiff peaks form, about 8 minutes.
  • Meanwhile, whisk both flours, the almonds and baking powder in a bowl. Beat the egg yolks in a large bowl. Whisk 1/2 cup oil, the orange and lemon juices and the marmalade into the yolks until combined. Stir in the dry ingredients, then fold in the beaten egg whites until just combined. Add the raisins, if desired.
  • Transfer the batter to the prepared pan. Bake until the cake is golden and springs back when touched, about 30 minutes.
  • Meanwhile, make the syrup: Bring 3/4 cup water and the granulated sugar to a boil in a saucepan; squeeze in the orange juice and add the peel. Simmer until syrupy, about 20 minutes. Cool slightly.
  • Pour the syrup over the cake while both are still warm. Cool completely, then cover with plastic wrap and let soak overnight. Cut into squares and top with confectioners' sugar and/or almonds.

1 cup butter, softened
6 large eggs, separated
2/3 cup sugar
1 cup ground almonds
2 tablespoons fresh lemon balm leaves
2 teaspoons grated lemon zest
2 teaspoons minced fresh marigold petals
Additional marigold blossoms and fresh lemon balm leaves, optional

Steps:

  • In a large bowl, beat the cream cheese, butter, egg yolks and sugar until light and fluffy. Stir in almonds, lemon balm, lemon zest and marigold petals. , In a small bowl, beat egg whites until stiff peaks form; fold into cream cheese mixture. Spoon into a greased 9-in. springform pan; place pan on a baking sheet. , Bake at 350° for 55 minutes or until golden brown and the cheesecake pulls away from sides of pan. Cool for 1 hour; remove sides of pan and cool completely. If desired, garnish with marigold blossoms and lemon balm. Store in the refrigerator.

8 ounces sultanas, and raisins mixed
1/2 pint cold tea
8 ounces self raising flour
4 ounces caster sugar
1 egg, beaten
3 tablespoons ginger marmalade
1 teaspoon ground ginger
1 tablespoon black treacle

Steps:

  • Soak the mixed fruit in the tea overnight until the fruit swells.
  • Pre-heat the oven to 180C, Gas Mark 4.
  • In a bowl, combine the flour, sugar.
  • In another bowl mix the egg and marmalade, then add the fruit mix, ground ginger and treacle.
  • Mix wet and dry ingredients together.
  • Mix well and place in a lined or non-stick 8x11-inch tin and bake in the oven for approx 40 minutes.
  • Leave to cool before slicing.
