2 (1 ounce) squares semisweet baking chocolate
1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk

Steps:

  • In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Set aside.
  • In a bowl, mix the butter and sugar. Add the eggs one at a time, beating well after each one. Stir in chocolate and vanilla. In a separate bowl, combine flour, baking powder, and salt; add gradually to the butter and sugar mixture, alternating with the milk.
  • Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until crisp.

1 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
3 tablespoons unsweetened cocoa powder
1 cup milk
2 eggs
4 tablespoons butter, melted
1 tablespoon butter, softened
¾ cup confectioners' sugar
½ teaspoon vanilla extract
1 teaspoon milk

Steps:

  • Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs and butter until mixture is smooth.
  • To make hard sauce: stir together softened butter, confectioners' sugar, vanilla extract and milk. Sauce should be fairly stiff.
  • Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with hard sauce.

If you don't have a Belgian waffle iron, use a regular one, but you probably won't need as much batter.

1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup (packed) light brown sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
2 large eggs, room temperature, beaten to blend
2 tablespoons whole-milk ricotta, room temperature
1 1/4 cups buttermilk
2 tablespoons instant espresso powder, plus more for serving
5 tablespoons unsalted butter, melted, plus more for brushing
Pure maple syrup and whipped cream (for serving)
Special Equipment
A Belgian waffle iron

Steps:

  • Whisk flour, granulated sugar, brown sugar, baking powder, salt, and baking soda in a medium bowl to combine. Whisk eggs and ricotta in a large bowl just to incorporate, then add buttermilk and 2 Tbsp. espresso powder; whisk until smooth. Whisk in 5 Tbsp. melted butter, then fold in dry ingredients with a rubber spatula, being careful not to overmix (some lumps are okay). Let batter sit uncovered at room temperature 30 minutes to allow the flour to hydrate.
  • Preheat oven to 200°F. Set a wire rack inside a rimmed baking sheet and place in oven. Heat waffle iron and brush with butter. Pour 1 cup batter onto iron and cook until waffle is golden brown and cooked through, 5-7 minutes. Transfer to wire rack in oven. Repeat with remaining batter, brushing iron with more butter as needed. (Waffles will be limp at first but will crisp up as they sit.)
  • Serve waffles topped with whipped cream, drizzled with maple syrup, and sprinkled with more espresso powder.

1/3 cup hot water
2 cups baking mix (Bisquick)
1/3 cup miniature chocolate chip
1 cup whole milk (or soymilk)
1 large egg
2 tablespoons vegetable oil
syrup
1/4 cup miniature chocolate chip (to garnish) (optional)

Steps:

  • Preheat oven to 200*F.
  • Preheat waffle maker; grease with oil or spray with nonstick cooking spray.
  • In a large bowl, combine coffee packet and 1/3 cup hot water, stirring until coffee dissolves.
  • Add baking mix, chocolate morsels, milk, egg, and oil.
  • Whisk together until well combined.
  • Cook, in batches, according to manufacturer's instructions. (Instructions and times may vary) .
  • Carefully remove waffles from waffle iron, and keep warm in oven.
  • Serve with syrup.
  • Garnish with chocolate morsels, if desired.
  • Enjoy!

  • In a medium bowl, stir together the flour, sugar, baking powder, and salt. Set aside.
