- Prepare spread: mash diced avocado, mayonnaise, salt, garlic powder, onion powder, and cayenne pepper in a bowl with a fork until well blended.
- Assemble wraps: spread tortillas with a layer of avocado spread. Place diced tomatoes, cucumber slices, bell pepper strips, lettuce, and mozzarella cheese slices onto each wrap, leaving about 2 inches of space at the bottom. Fold bottoms up. Roll tortillas over vegetables firmly to enclose fillings.

- Wash the spinach and spin dry. Clean and peel the carrots and cut them into thin slices with a peeler. Grate the cheddar cheese.
- Mix cottage cheese with salt and pepper. Spread each tortillas with 2 tablespoons of cottage cheese. Spread cheddar, spinach and carrot on the tortillas. Fold the two short sides of the tortilla onto the filling, then fold in the long side and roll up into wraps towards the open side.
- Roast tortillas in a hot pan from both sides for 2-3 minutes until they are browned to the desired degree and serve immediately.

- In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. - For the chicken: Combine the vinegar, honey, olive oil, mustard, garlic powder, basil, salt and pepper in a medium bowl. Place the chicken in a shallow dish or large zip-top plastic bag. Pour the marinade over the chicken and refrigerate for 30 minutes.
- Meanwhile, make the goat cheese spread: Place the garlic in a food processor and pulse until minced. Add the goat cheese, chives, parsley, olive oil and lemon juice. Process until fluffy. Season with salt and pepper.
- For the wraps: Heat a grill pan (or outdoor grill) to medium-high heat.
- Remove the chicken from the marinade and grill until cooked through, 3 to 4 minutes on each side. Remove the chicken from the grill. Add the eggplant, bell peppers and onion. Sprinkle with salt and pepper and grill, turning occasionally, until crisp-tender, 3 to 5 minutes.
- To assemble the wraps, spread the goat cheese spread on the tortillas. Top evenly with the chicken and vegetables. Roll up, burrito-style, and cut in half.

- Bring a pot of salted water to boil for the soba noodles. Carefully remove about 12 intact lettuce leaves from your heads of lettuce, and set aside (save the smaller leaves and use them in a salad).
- Meanwhile, in a medium bowl, combine the sliced vegetables, vinegar and salt, and toss to combine. Let the mixture marinate, tossing occasionally, for at least 10 minutes.
- Cook the soba noodles just until al dente, according to package directions (usually about 4 minutes). Drain the noodles, then return them to the pot (off the heat) and stir in the green onions, sesame seeds, tamari and sesame oil. Set aside.
