15-Minute Homemade Donuts image

These homemade donuts taste just as good any cake donut you could buy at your local bakery but you can make them at home in just 15 minutes!

1 1/4 cups (176g) all-purpose flour ((scoop and level to measure))
2 tsp baking powder
1/4 tsp salt
1/2 cup (120 ml) buttermilk*
1/4 cup (50g) granulated sugar
3 Tbsp (42g) melted butter
3 - 4 cups vegetable oil, (for frying)
1/3 cup (66g) granulated sugar**

Steps:

  • Pour about 1/2-inch oil into a large saute pan or pot and heat over medium heat to 355 degrees F. (keeping an eye on it as it is heating). Meanwhile prepare donut dough.
  • In a medium mixing bowl, whisk together flour, 1/4 cup sugar, baking powder and salt.
  • Separately whisk together buttermilk and melted butter. Pour buttermilk mixture into flour mixture and using a fork, stir in dry ingredients and mix just until combine (be careful no to over-work dough).
  • Roll dough into 1/2 Tbsp balls. Once the oil has reached 355 degrees F, fry about 1/2 the dough balls at a time.
  • Fry until just golden brown on bottom, then flip and cook reverse side until golden brown.
  • Carefully remove with a spider strainer or metal tongs drain onto a paper towel lined baking sheet.
  • Pour 1/3 cup sugar into a dish, roll donuts in sugar. Repeat this process with remaining dough.

I was searching on this site for the Krispy Kreme original recipe so I could PinchIt! and couldn't find the right recipe. You can tell the original recipe because it has nutmeg in the recipe. I have also included the glaze recipe that dries and crackles and their marshmallow creme recipe.

DOUGH
2 c scalded milk
1/2 c salted butter (not margarine)
2/3 c white sugar (divided)
1 tsp salt
2 Tbsp active dry yeast or two packets
4 eggs beaten
1/4 tsp nutmeg
7 c sifted flour
GLAZE
3 Tbsp salted butter (melted)
1 1/2 c powdered sugar
1 tsp vanilla extract
2 1/2 Tbsp warm water
MARSHMALLOW CREME FILLING
1 c marshmallow cream
1 1/2 c powdered sugar
1/4 c salted butter softened
1/2 tsp vanilla extract
1/2 to 2 tsp warm water ( i used 2)

Steps:

  • 1. Scald Milk...add butter, 1 tsp. sugar, and salt ......... cool so you don't kill the yeast.
  • 2. Beat warm milk mixture, yeast, nutmeg, eggs, remaining sugar, 3 c. flour in mixer until smooth. Add remaining flour.
  • 3. Knead 5 min then cover and let rise for 1-1 1/2 hours or until double.
  • 4. Roll out dough about 1/2 inch thick or just under 1/2 inch, then cut into shape.
  • 5. Allow cut doughnuts to rise another 30-45 min.
  • 6. Fry 1-2 min. each side at 365 F. (I used brand new lard to fry them) Once golden brown on one side, turn and cook other side till golden brown. Place on paper towel to drain grease. Once cooled for a few min dip in Glaze and set on cooling rack or plate to cool.
  • 7. GLAZE and MARSHMALLOW CREME: Mix the ingredients together and whip till combined and smooth. Same directions for both glaze and marshmallow creme.

I used to make these with Mom as a little girl. She would make dozens a week and give to neighborhood kids. I would coat them with that ooey good frosting. I recently won a blue ribbon with this recipe. It was also featured and put in newspapers all over the U.S. Then it was voted as 1 of 100 top recipes to be put in the 2011 Members Choice cookbook. They are like eating a flavored cloud. So light and fluffy. Hope you enjoy them as much as we do.

½ cup warm water (100 to 110 degrees F/40 to 45 degrees C)
2 (.25 ounce) packages active dry yeast
1 teaspoon white sugar
¾ cup milk, lukewarm
⅓ cup vegetable shortening
¼ cup white sugar
1 teaspoon salt
2 eggs
4 cups sifted all-purpose flour
2 quarts vegetable oil for frying
1 tablespoon warm water
½ teaspoon vanilla extract
1 cup confectioners' sugar, sifted

Steps:

  • Pour 1/2 cup of warm water into a small bowl, and stir in the yeast and 1 teaspoon of sugar. Allow the yeast mixture to stand until it forms a creamy foam layer on top, 5 to 10 minutes.
  • Place milk and vegetable shortening into a small saucepan over medium-low heat and cook until the shortening has melted and the milk has tiny bubbles around the edge. Remove from heat.
  • Place 1/4 cup of sugar and the salt into the work bowl of a large stand mixer and pour the milk and shortening into the bowl. Mix on low speed just to dissolve sugar; and allow mixture to stand until warm.
  • Beat in the yeast mixture, eggs, and 1 cup of flour on low speed until smooth. Gradually beat in remaining flour to make a soft dough.
  • Continue beating the dough on low speed until dough leaves the sides of the bowl, 2 to 3 minutes.
  • Turn the dough out onto a well-floured work surface and knead until smooth and elastic, 2 or 3 more minutes.
  • Form the dough into a ball and place into a large greased bowl. Grease the top of the dough, and cover the bowl with waxed paper. Set the bowl into a warm place; let the dough rise until doubled in size, 1 to 1 1/2 hours.
  • Punch down the dough and roll out on a floured work surface to 1/2 inch thick. Cut doughnuts out of the dough with a 3 1/2-inch round doughnut cutter with a 1-inch smaller cutter in the center. Let the doughnuts rise on the work surface until very light and fluffy, 40 minutes to 1 hour.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently pick up and drop the doughnuts into the hot oil, working in small batches of 2 or 3 at a time, and cook until the doughnuts are light golden brown, turning once, about 2 minutes.
  • Drain the doughnuts on paper towels to absorb oil.
  • In a bowl, mix 1 tablespoon of warm water and vanilla extract, and stir in the confectioners' sugar to make a glaze. Spread a thin layer of glaze over the warm doughnuts.

4 ounces unsalted butter (softened but not melted)
5 ounces granulated sugar
2 large eggs (room temperature)
6 ounces buttermilk (room temperature)
2 teaspoons vanilla extract
15 ounces All-Purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
32 ounces lard or oil (for frying (4 cups))
5 ounces powdered sugar
2 Tablespoons milk (or water)
4 ounces chocolate chips
2 Tablespoons butter
1 Tablespoon corn syrup (or glucose/honey)
2 Tablespoons heavy cream
1 cup granulated sugar
2 Tablespoons cinnamon

Steps:

  • In the bowl of your stand mixer with the paddle or the whisk attachment, cream the softened butter and the sugar on medium high speed until the mixture is light in color and fluffy.
  • While mixing on low, add in one egg, let it mix in and then add in the second egg and mix on medium speed until everything is smooth and combined
  • Add in the buttermilk and the vanilla and mix until combined
  • While mixing on low, add in the flour, salt, baking powder, baking soda, and nutmeg and mix until the dough is combined. Do not over-mix. The dough will be sticky.
  • Lightly flour your work surface and transfer the sticky dough to the floured surface.
  • Press the dough down lightly until its about 1" thick.
  • Fold the dough over onto itself 3-4 times until the dough is smooth.
  • Flatten the dough down to about 1/2" or use a rolling pin. Let the dough rest for 5-10 minutes while your oil is heating up.
  • Turn on your FryDaddy or begin heating your oil to 360ºF-375ºF (182ºC -190ºC). Set up a draining station for the donuts by placing a cooling rack over a sheet pan to catch the oil.
  • Use a donut cutter or ring cutter to cut out the donuts. You can press together the scraps and roll them out again to get as many donuts as you can. Just keep in mind the more you work the dough, the tougher the donuts will get.
  • Add the donut to the hot oil using your slotted spoon to lower it gently. Fry the donut for 2 minutes then flip it over and fry it for 1 more minute.
  • Fry your donut holes for about 1 minute, stirring and pushing them down with your spoon until golden brown on the outsides.
  • Transfer the dough to a cooling rack over a sheet pan to let the oil drain away from the donut
  • Once your donuts are cooked you can roll them in powdered sugar, cinnamon sugar, glaze them with donut glaze or chocolate glaze!
  • Store donuts in a paper bag at room temperature for up to two days. They are best eaten fresh! Do not refrigerate.
  • Sift the powdered sugar into a bowl and add the milk (or water). Whisk together to combine, add more powdered sugar to make it thicker or more milk to make it thinner.
  • In a medium sized bowl, add the heavy cream, butter and corn syrup to the chocolate chips. Microwave for 30 seconds and stir together until the chocolate is melted. Microwave for another 15 seconds if needed.

Oil for frying
Cinnamon & sugar for coating

Steps:

  • In a medium sized mixing bowl, combing flour, sugar, salt, baking powder, and cinnamon. Stir until well combined.
  • Drizzle melted butter in and stir until the mixture is crumbly.
  • Whisk together the milk, half and half, and egg. Pour into the flour/butter mixture and stir until a ball forms.
  • Turn out onto a floured surface and knead for 2-3 minutes, until dough smooths out.
  • Roll out to 1/4 - 1/3 inch thick, cut into donut shapes, and fry at 350° for about 60-90 seconds, flipping halfway through.
  • Remove to cinnamon sugar mixture and toss to coat.
  • ENJOY!

1/2 cup whole milk
2 tablespoons butter, melted and cooled
1/2 teaspoon vanilla extract
2 quarts vegetable oil
Powdered sugar for dusting

Steps:

  • In a medium bowl add the flour, baking powder, and salt. Whisk to combine.
  • In a separate bowl add the sugar, eggs, and nutmeg together and whisk to combine. Add the milk, butter, and vanilla extract and whisk to combine.
  • Slowly add the egg mixture to the flour mixture and stir with a wooden spoon until well combined, but don't over mix.
  • Heat 3 inches of oil in a dutch oven over medium-high heat until the oil reaches 350 degrees. Using two spoons, make a ball of batter about the size of a ping pong ball. Use one spoon to carefully scrape the dough ball from the other spoon into the hot oil. Repeat this 5 or 6 times and then fry the donuts until they are crispy and very brown on all sides, 3-6 minutes total. Be sure to adjust the temperature as needed to keep the oil temperature at 350 degrees.
  • Use a slotted spoon to remove the donuts from the hot oil and place them on a paper towel lined baking sheet. Let the donuts drain while you repeat the process with the rest of the batter. Dust the donuts with powdered sugar and serve warm.
  • These are best eaten right after making.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)
1/3 cup butter, softened
1-1/3 cups sugar, divided
3 large egg yolks, room temperature
1 teaspoon salt
3 to 3-3/4 cups all-purpose flour
3 tablespoons jelly or jam
1 large egg white, lightly beaten
Oil for deep-fat frying

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, butter, 1/3 cup sugar, egg yolks, salt, yeast mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough (do not knead)., Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes., Punch dough down. Turn onto a lightly floured surface; knead about 10 times. Divide dough in half. , Roll each portion to 1/4-in. thickness; cut with a floured 2-1/2-in. round cutter.
