1 cup graham cracker crumbs
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
1/2 cup sugar
1/4 cup flour
1 tsp. vanilla
3 eggs

Steps:

  • Heat oven to 325°F.
  • Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Increase oven temperature to 450°F.
  • Beat cream cheese and cottage cheese in large bowl with mixer until blended. Add 1/2 cup sugar, flour and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 15 min. Reduce oven temperature to 250°F; continue baking 1 hour. Run knife around rim of pan to loosen cake; cool before removing rim. Cool completely. Refrigerate 4 hours.

12 graham crackers, crushed
½ cup butter, melted
24 oz cream cheese, at room temperature
¼ cup sugar
4 eggs, beaten
1 tablespoon vanilla essense
mixed berry, to serve

Steps:

  • Preheat oven to 350ºF (180ºC).
  • In a bowl, add the crushed graham crackers and melted butter and stir to combine.
  • Place the graham cracker mixture in a greased 8-inch (20-cm) springform pan, spreading them in an even layer. Bake for 20 minutes or until in turns slightly golden on the top.
  • In a bowl, mix the cream cheese and sugar using a hand mixer until smooth.
  • Add the eggs and vanilla, and continue beating until all ingredients are fully incorporated.
  • Add the cream cheese mixture to the top of the graham cracker crust.
  • Bake for 1 hour, or until it looks semi-jiggly in the center and set on the edges.
  • Refrigerate for 12 hours, or overnight.

¼ cup finely chopped walnuts
3 tablespoons brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
5 tablespoons butter, melted
3 (8 ounce) packages cream cheese
1 cup white sugar
1 cup sour cream
1 cup heavy cream
3 tablespoons all-purpose flour
1 tablespoon vanilla extract
3 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, chopped walnuts, brown sugar, cinnamon, nutmeg and melted butter. Mix well and press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool.
  • In a large bowl, beat cream cheese and sugar together until smooth. Beat in sour cream and heavy cream. Blend in the flour and vanilla. With mixer on low speed, add eggs one at a time. Pour batter over crust.
  • Bake in the preheated oven for 60 to 70 minutes, or until center is almost set (filling will be soft). Refrigerate at least 6 hours or overnight before removing from pan.

6 tablespoons butter, melted
2 packages (8 oz each) cream cheese, softened
2 containers (8 oz each) whipped cream cheese spread, softened
1 1/4 cups sugar
2 teaspoons vanilla
2 tablespoons lemon juice
5 eggs
2 tablespoons Gold Medal™ all-purpose flour
1 pint (2 cups) sour cream
1/3 cup sugar
1/2 teaspoon vanilla
1 tablespoon lemon juice
Sliced fresh strawberries
Strawberry sundae syrup
Whipped cream

Steps:

  • Heat oven to 325°F. In small bowl, mix crust ingredients; press in bottom of ungreased 10-inch springform pan. Bake 10 minutes. Cool 3 to 5 minutes.
  • Meanwhile, in large bowl, beat both kinds of cream cheese, 1 1/4 cups sugar, 2 teaspoons vanilla and 2 tablespoons lemon juice with electric mixer on medium speed until smooth and well blended. On low speed, add eggs 1 at a time, beating well after each addition until blended. Add flour; beat until smooth.
  • Pour filling over crust. Bake 55 minutes. Cool on cooling rack 10 minutes. Meanwhile, in small bowl, mix sour cream layer ingredients.
  • Spoon and spread sour cream mixture evenly over top of cheesecake. Bake 10 minutes longer. Run knife around edge of pan to loosen cheesecake. Cool completely on cooling rack, about 2 hours. Cover; refrigerate at least 3 hours or overnight.
  • Before serving, remove side of pan. Garnish each serving with fresh strawberries and a drizzle of strawberry sundae syrup and a dollop of whipped cream. Store in refrigerator.

1 teaspoon grated lemon zest

1 large egg yolk

1-3/4 cups sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract

4 large eggs
2 large egg yolks
1/4 cup heavy whipping cream

Steps:

  • In a bowl, combine the flour, sugar, pecans and lemon zest, cut in butter until crumbly. Combine egg yolk and vanilla; stir into flour mixture. Press onto the bottom of a greased 10-in. springform pan. Bake at 400° for 8-11 minutes or until edges are lightly browned. Cool on a wire rack., Fill a 13x9-in. baking dish with 8 cups water; place on lowest oven rack. Reduce heat to 325°., In a bowl, beat cream cheese until smooth. Gradually beat in sugar. Add the flour, vanilla and salt. Lightly beat eggs and egg yolks; add to cream cheese mixture just until blended. Beat in cream just until combined. Pour over crust. , Bake on middle rack at 325° for 70-75 minutes or until center is almost set (top of cheesecake will crack). Cool on a wire rack for 10 minutes. Steps:

  • Heat oven to 350 degrees. Stir together graham cracker crumbs and sugar. Mix in butter thoroughly. Press mixture evenly in bottom of 9 inch spring form pan. Bake 10 minutes. Cool. Reduce oven temperature to 300 degrees. Beat cream cheese in large mixer bowl. Gradually add 1 cup sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs, one at a time. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in cherries and 4 drops red food colour. Cool thoroughly. Strawberry Glaze Mash enough fresh strawberries to measure 1 cup. Blend 1 cup sugar and 3 tablespoons cornstarch in small saucepan. Stir in 1/3 cup water and the strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute. Cool thoroughly.

2 egg yolks
1/4 cup heavy whipping cream (35%)

Steps:

  • Set oven to 400 degrees.
  • Lightly coat a 10-inch springform pan with vegetable spray OR use a 9" x 13" pan instead.
  • For crust: Combine 1-1/2 cups flour, 1/3 cup sugar, 1 egg and 1/2 cup butter; mix well.
  • Spread evenly on the bottom and to the edges of prepared pan.
  • Prick all over with a fork; bake 15 minutes at 400 degrees, allow to cool.
  • Increase oven temperature to 475 degrees.
  • In a large bowl, combine cream cheese, 1-3/4 cups sugar, 3 tbsp flour, 5 eggs and yolks; beat until thoroughly mixed.
  • Add in the whipping cream, ONLY enough to blend.
  • Pour the filling over crust; bake for 10 minutes at 475 degrees.
  • Reduce temperature to 200 degrees, and continue baking for 1 hour.
  • Turn off the oven, but leave cake in the oven for another hour.
  • Remove, and cool.
  • Chill in refrigerator overnight.
  • Top with favorite fruit or just serve plain.
