My family likes to have bread with lots of meals. This lovely loaf is loaded with nutritious grains so we can indulge in slice after slice.-Judy Cook, Branson, Missouri

Yield 3 loaves (16 slices each).

Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
2-1/4 cups warm water (110° to 115°)
1 can (12 ounces) evaporated milk
1/4 cup canola oil
3 tablespoons honey
2 cups quick-cooking oats
2 cups whole wheat flour
1/2 cup cornmeal
1 tablespoon salt
4-1/2 to 5 cups bread flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, oil, honey, oats, whole wheat flour, cornmeal, salt and 2 cups bread flour. Beat until smooth. Stir in enough remaining bread flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape into loaves. Place in three greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.

These are light, old-fashioned hot rolls just like my Grandmother used to make. I found the recipe in BHG Hometown Cooking magazine. If you like homemade rolls give these a try-you won't be disappointed!

Number Of Ingredients 8

2 packages active dry yeast
2 cups warm water (110-115 degrees)
1/2 cup sugar
1 egg, lightly beaten
1/4 cup melted butter
2 teaspoons salt
6 -6 1/2 cups flour
3 tablespoons melted butter

Steps:

  • 1.
  • In a very large mixing bowl, dissolve the yeast in the warm water.
  • Stir in sugar and let stand for 5 mins.
  • Add egg, the 1/4 c.
  • melted butter and the salt, stirring until mixed.
  • Stir in as much of the flour as you can, using a wooden spoon.
  • 2.
  • Turn dough out onto a lightly floured surface.
  • Knead in enough of the remaining flour to make a fairly stiff dough that is smooth and elastic (6-8 mins).
  • Shape dough into a ball.
  • Place in a lightly greased bowl; turn dough once in bowl to grease surface of dough.
  • Cover; let rise in a warm place until double in size (45-60 mins).
  • 3.
  • Punch dough down.
  • Turn out onto a lightly floured surface.
  • Divide dough in half.
  • Cover and let rest for 10 mins.
  • Meanwhile, lightly grease one 15x10x1 baking pan or 2- 13x9x2 baking pans.
  • Divide each half of the dough into 12 pieces.
  • To shape, gently pull each dough piece into a ball, tucking the edges under.
  • 4.
  • Place the shaped rolls in the prepared pan (s).
  • Cover and let rise in warm place until double in size (30 mins or so).
  • 5.
  • Preheat the oven to 350.
  • Brush the unbaked rolls with the 3 tbsps.
  • of melted butter.
  • 6.
  • Bake in preheated oven for 15-18 mins or until golden brown on top.
  • Brush rolls with remaining melted butter.
  • Cool rolls in pans on wire racks.

CHEF JOHN'S HOT DOG BUNS

Don't get me wrong; if you hand me a hot dog at the ball game, it's not like I'm going to throw it back in your face, but given the choice this butter-crisped, split-topped bun is the way to go. Thanks to its genius design the meat and fixings go in the top, which leaves three relatively flat sides to toast in butter.

1 (.25 ounce) package active dry yeast (such as Fleischmann's RapidRise®)
3 ½ cups all-purpose flour, divided, or more as needed
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons melted butter
3 tablespoons sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
3 tablespoons melted butter, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk 1/2 cup flour and water into yeast until mixture is smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk egg, 3 tablespoons melted butter, sugar, and salt into yeast mixture; add remaining flour and stir.
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled in size, about 2 hours.
  • Transfer dough to a floured work surface and form into a 5x10-inch rectangle about 1/2-inch thick. Cut dough into 8 equal lengths. Turn each slice cut-side up and form into a hot dog bun shape about 5 inches long. Transfer dough, cut-sides up, to the prepared baking sheet about set them about 1/4-inch apart.
  • Cut a slit about 1/8-inch deep down the center of each bun. Brush 2 tablespoons melted butter over the top and sides of each bun. Let rise until almost doubled in size and the buns have risen into each other, about 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake buns in the preheated oven until golden brown, about 20 minutes. Brush tops with remaining melted butter.

  • Add all ingredients to the bucket of a bread machine in the order recommended by the manufacturer. Select the DOUGH cycle and press start. Keep an eye on the dough for the first few minutes of mixing. Add more water if it is dry and crumbly, and more flour if it is too sticky. The dough should be smooth and slightly sticky to the touch but should completely clear the sides and bottom of the bread machine bucket. Allow the cycle to finish.
  • Remove the dough when the machine beeps and cut into eighths with a sharp knife. (It is easiest to divide into half, then quarters, etc.). Gently shape into rolls by pulling down the bottoms of the dough to smooth out the tops.
  • Place the rolls on the baking sheet and flatten them slightly. Cover with heavily greased plastic wrap. Place the baking sheet in a warm place for the rolls to rise, until they are very puffy, about 45 minutes. Towards the end of the rising time, preheat your oven to 375° with the rack in the center
  • Bake for 14-17 minutes until deep golden brown. Rolls will appear very browned due to the egg wash. Remove and cool on a wire rack. Allow to fully cool before slicing and serving with burgers. For best results, toast with butter on a hot skillet turrned to low. Eat within a day, or freeze for longer storage.
