CHICKEN CONGEE WITH TURMERIC AND CUMIN
This dish, which was created for the 2019 NYT Food Festival by Tyler Heckman, the executive chef at Ferris restaurant in New York, combines his interest in Cantonese cooking with his affinity for the flavors of New York City street food - specifically, the chicken and rice plates sold from halal carts. Congee is a rice porridge popular in China and among other Asian cuisines, and this version is heavily spiced with cumin and turmeric, which lend a golden hue and an earthy flavor. If you haven't made congee before, you might balk at the high ratio of water to rice, but give it time, and the rice will break down until creamy. Spiced chicken, tangy yogurt and a punchy blender hot sauce add texture, richness and brightness to the dish.

- Prepare the rice: In a small skillet, sauté the garlic in oil over medium-high heat, until deep golden brown all over, about 3 minutes. Transfer the garlic to a large lidded pot, and discard the oil. Add the rice, onion, turmeric, cumin, 1 teaspoon salt and 10 cups water to the pot and bring to a boil over high. Reduce the heat to medium-high, partially cover the pot with a lid (two-thirds of the pot should be covered) and cook, stirring occasionally, until the rice breaks down and the soup is thick and creamy, 30 to 40 minutes. Remove and discard onion and garlic, if desired. Season congee to taste with salt, remove from heat and cover. (Makes about 7 cups.)
- Meanwhile, prepare the yogurt sauce: In a medium bowl, whisk together the yogurt, mayonnaise and za'atar. Season to taste with salt and pepper, transfer to a squeeze bottle or a spouted measuring cup, and refrigerate.
- Prepare the spicy sauce: Add the roasted bell pepper, hot sauce and Champagne vinegar to a blender and purée until completely smooth. Season with salt to taste, transfer to a squeeze bottle or a spouted measuring cup, and refrigerate.
- Prepare the chicken: In a large bowl, whisk 4 tablespoons olive oil with the turmeric, cumin, cardamom and 1 tablespoon kosher salt. Add the chicken thighs and toss to coat. Heat the remaining 1 tablespoon olive oil in a large cast-iron pan. Working in batches, cook the chicken thighs over medium until a golden crust forms on each side, 6 to 7 minutes per side. Transfer to a cutting board, let rest 5 to 10 minutes, then thinly slice the chicken crosswise.
- Divide the congee among wide, shallow bowls. Top with the chicken, lettuce and tomato, then drizzle with yogurt and spicy sauce. Pass additional sauces at the table so guests can adjust creaminess or heat level according to preference.
LEFTOVER THANKSGIVING TURKEY CONGEE
We make this congee every year for breakfast the morning after Thanksgiving. Take your Thanksgiving turkey carcass and put it to work to make this incredibly delicious rice porridge.

- In a very large stock pot, add the turkey carcass and all the veggies. Pour in the water and the rice, and bring everything to a boil. Let it simmer for 90 minutes. Use tongs to remove any bones, etc. Season with salt, white pepper, and garnish with scallion and cilantro.
- Now, that's the way we've always done it. But if you want a really smooth congee, you can do it a slightly different way. Rather than adding the rice to the pot at the beginning, simply add the carcass, vegetables, and water to the stock pot. Simmer for 2 hours until you have a rich stock.
- Remove any large bones and then strain the stock into a clean pot. Add the rice, bring to a boil, and simmer for another 90 minutes. Stir in some leftover shredded turkey, season with salt and pepper, and garnish with scallions and cilantro.
TURKEY AND RICE CONGEE (JOOK)
Adapted from Not Your Mother's Slow Cooker Recipes for Two. Congee or jook is a staple in China. Instead of making a separate stock, just use a turkey wing or drumstick here to flavor the broth. This is a very bland dish so it is important to serve the condiments if you want more kick. I posted this originally for ZWT 4. Serve with bowls of condiments on the side--chopped cilantro, minced green onion, or peanuts. soy sauce, and any hot chili sauce.

- Put slow cooker liner into slow cooker.
- Place the rice, turkey wings, water, salt, ginger, carrots, celery, and mushrooms into the slow cooker.
- Stir well.
- Cover and cook on HIGH for 1 hour, then reduce the temperature to LOW and cook for 6 to 8 hours, until creamy, thick, and translucent white in consistency.
- Remove and discard the ginger.
- Remove the turkey wing and place on a plate to cool for 15 minutes.
- Remove and discard the skin.
- Pick the meat off the bones and discard the bones; return the meat to the soup.
- Taste test; add soy sauce and sesame oil.
- Keep WARM until ready to serve, with bowls of cilantro, green onion, and peanuts on the side for garnish choices.

- Place rice into a large container and cover with several inches of cool water; let soak 8 hours to overnight. Drain and rinse.
- Bring 4 quarts water and chicken broth to a boil in a large pot. Add turkey carcass; bring back to a boil. Reduce heat to medium to bring liquid to a simmer; cover partially and cook, stirring occasionally and adding water as needed, until rice is partially dissolved, about 3 hours.
- Season congee with salt and pepper. Discard bones before serving.

- 1. Chop a leftover turkey carcass in 6 large pieces. Place in a pan with water and bring to a boil then simmer, covered, 2 hours. Remove bones and skim off excess fat. 2. Wash rice (see HOW-TO, _Rice: To wash). Place in a saucepan with turkey broth. (Since congee boils over easily, always cook it in a deep pot.) 3. Bring to a boil. Then reduce heat to low and simmer, covered, until rice thickens and becomes porridge-like (about 2 hours). Stir occasionally to prevent rice from sticking to the bottom of the pan and burning. Stir in ginkgo nuts only to heat through.4. Season with salt to taste. Serve either in a large tureen or in individual bowls. Garnish with turkey and ham, both shredded and scallions, minced. Serve with salty or spiced accompaniments (see *Rice Dishes). NOTE: Depending on the proportion of water to rice, congee can be made thick or thin. If it becomes too thick during cooking, just add more water. This is the ultimate comfort food! It is a breakfast dish in most countries in Asia. I always make it when I have a turkey or chicken carcass. My family loves it!

- Break up the carcass into a large soup pot or Dutch oven.
- Add the chicken broth and bring to a boil.
- Add the rice (it does not need to be washed first if it is American style).
- (The more rice you use, the thicker the soup will be.) Bring it again to a boil.
- Then turn down the heat and simmer until thickened (at least one hour).
- Remove the bones and scrape off any meat to return it to the pot.
- Add salt, pepper and soy sauce (sparingly) to taste.
- To serve: placed chopped green onions, soy sauce and sesame seed oil (a few drops) into a serving bowl.
- Ladle in the congee (jook) and use your choice of the garnishes to add flavor and color to the dish.

- Make the stock: Bring water and turkey carcass to a boil in large Dutch oven over high. Reduce heat to medium-low. Add mirin, ginger, fish sauce, soy sauce, garlic, and scallions; simmer 2hours, occasionally skimming foam from top. Pour through a fine wire-mesh strainer into a bowl; discard solids. Cover to keep warm until ready to use.
- Make the congee: Place rice in a mini food processor. Process until rice is broken into very small pieces, about 3 minutes. (This can also be done in a spice grinder.) Set aside.
- Combine scallions, sesame oil, ginger, and garlic in a large Dutch oven over medium; cook, stirring often until fragrant and beginning to brown, 2 to 3 minutes. Add shredded turkey, and cook, stirring often, until warmed through, about 2 minutes. Stir in rice. Gradually stir in Turkey Stock.
- Cover, and increase heat to high; bring to a boil, and cook 6 to 7 minutes. Remove lid, and reduce heat to medium. Cook, stirring often, until rice is tender and stock is thickened, 18 to 20 minutes. Stir in peas, cilantro, mint, and lime juice; serve immediately.
