ROLL-OUT COOKIES
My favorite cookie recipe to use with cookie cutters.There is no need to chill the dough so it is fast.

Steps:
- Pre heat oven to 400F degrees.
- In a large bowl cream butter and sugar with electric mixer.
- Beat in egg and vanilla.
- Mix flour and baking powder.
- Add 1 cup at a time,combining after each addition.
- You will need to add last 3/4 cup by hand.
- Do not chill dough it will be stiff.
- Divide dough into 2 balls.
- On floured surface roll out to 1/8 inch thickness.
- Use any cookie cutter and cut away.
- Bake for 6-10 minutes or until light brown.
- Enjoy!
THE BEST ROLLED SUGAR COOKIES
Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

- In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
- Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
- Bake 6 to 8 minutes in preheated oven. Cool completely.

- Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, shortening, butter, vanilla and egg with electric mixer on low speed 30 seconds, then on high speed 1 minute.
- Divide dough into 4 equal parts. Roll each part 1/8 inch thick on lightly floured cloth-covered surface with cloth-covered rolling pin. Cut with 2 1/2-inch cookie cutters into desired shapes; sprinkle with sugar. On ungreased cookie sheet, place 2 inches apart.
- Bake 5 to 7 minutes or until light brown. Cool 1 minute; remove from cookie sheet to cooling rack. In microwavable bowl, microwave frosting uncovered on High 20 to 30 seconds or until melted; stir. Frost cookies. Stir together small amounts of water and food color. Paint colors on freshly frosted cookies, using fine-tip brush, then swirl colors with brush or toothpick to create marbled designs. Dry completely before storing.

- In a large bowl, cream peanut butter and sugars until light and fluffy, about 4 minutes. Beat in the eggs, milk and vanilla. Combine the flour, baking powder and baking soda; add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with 2-in. to 4-in. cookie cutters. Place 2 in. apart on ungreased baking sheets. , Bake at 375° for 7-9 minutes or until edges are browned. Cool for 1 minute before removing from pans to wire racks to cool completely. - Sift together the flour, cocoa, baking powder and salt; set aside. In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg. Gradually stir in the sifted ingredients to form a soft dough. Divide dough into 2 pieces, flatten and wrap in plastic wrap. Refrigerate for 2 hours.
- Preheat the oven to 375 degrees F (190 degrees C). On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into desired shapes with cookie cutters. Dough is sticky so be sure to add more flour to the rolling surface as needed. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In an electric mixer cream the butter with the brown sugar until the mixture is light and fluffy. Add vanilla and eggs one at a time, mix well. Sift together the flour and salt, add it to the wet ingredients beating until just incorporated. Place the dough in a 1 gallon size plastic bag. Chill the dough in the refrigerator for at least 2 hours and up to 8 hours. Preheat oven to 375 degrees. On a lightly floured board roll the dough to approximately 1/4 inch thick. Remove rolled dough to a lightly floured board and using any shape cookie cutter cut the dough into shapes. Place on a cookie sheet and bake for 7 to 10 minutes (depending on the size of the cookies). Remove to a rack and cool before decorating. Place the rack with the cookies over another pan to catch the excess chocolate. Put the chocolate in a quart size plastic bag. Place the bag with the chocolate in a saucepan with hot water. Allow the chocolate to melt, squeezing the bag to mix occasionally. Snip one of the corners off and drizzle chocolate over the cookies. Allow chocolate to set before serving.;
- To decorate: 4 ounces semi-sweet chocolate, chopped.

Steps:
- Strain together the flour, cocoa powder, baking powder, baking soda, and salt; set aside.
- In a big bowl of a stand electric mixer with paddle attachment, mix the butter on medium-low speed until it is cream and lightened in color.
- Add in the sugar in a steady stream, mixing for 2 minutes to combine.
- Mix in the egg, vanilla, and espresso powder.
- Scrape down side of bowl, as needed, then mix in the melted chocolate.
- Decrease mixer speed to low and blend in the dry ingredients in two additions, mixing only to combine after each addition.
- Remove the dough from the bowl and divide in half; form into two 3 x 4 inch rectangles and wrap in plastic.
- Refrigerate for 2 hours or until firm (the dough may be frozen at this point for up to 1 month).
- Position oven racks in the upper and lower thirds of the oven.
- Preheat to 350°; dab the corners of the cookie sheets lightly with butter and line with baking parchment.
- Sprinkle a pastry cloth and rolling pin with powdered sugar, rubbing it well into the weave.
- Working with one piece of dough at a time, roll it into a rectangle 3/16 inch thick.
- Cut into desired shapes; place cutouts on the cookie sheets.
- Bake for 9-11 minutes, or until the cookies feel set on top.
- To ensure even baking, toward the end of baking time, rotate the sheets from top to bottom and front to back.
- Let cookies rest on the sheet for 2 minutes before loosening with a thin metal spatula.
- Decorate as desired; store in an airtight container, layered between strips of waxed paper, for up to 3 weeks.
- May be frozen undecorated .
