- In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy (about 10 minutes).
- Stir in olive oil, whole wheat flour, salt and 4 cups of white flour into yeast mixture.
- Mix in remaining flour 1/2 cup at a time, stirring well after each addition.
- When dough has pulled together, put onto lightly floured surface and knead until smooth and elastic (about 4 minutes).
- Lightly oil another large mixing bowl, place dough in bowl and turn to coat.
- Cover with damp cloth and put in warm place until dough has doubled in size (about 1 hour).
- Deflate the dough and put onto lightly floured surface. Divide dough into 3 equal parts and form into rounds. Cover rounds and let them rest for about 10 minutes. Preheat oven to 425 degrees F.
- Use a rolling pin to roll the dough into desired shape. Cover dough with your favorite toppings and bake for about 20 minutes or until crust and cheese are golden brown.

- Preheat oven 425 degrees.
- In a large bowl whisk together 1 cup flour, yeast, sugar, and salt.
- Add water and oil and mix well until blended.
- Gradually add more flour, 1/4 cup at a time, until dough forms into a ball. (Dough will be quite sticky but with you should be able to handle it with floured hands)
- Turn dough out onto a floured surface and knead for 4-6 minutes until smooth and elastic.
- Place dough in a bowl, cover tightly and allow to rise in a warm place for 10 minutes.
- Divide dough into four equal-size pieces and roll or pat each into a 10-inch circle.

- Prepare both packages of pizza dough according to directions. On a floured surface, knead dough several times; divide into six portions. Roll each into an 8-in. circle. - Make the dough: Combine the flour and salt in a large bowl. Make a well in the center and pour in the warm water. Sprinkle the sugar and yeast over the water and let stand until bubbling, 5 to 10 minutes. Pour the olive oil into the well, then stir with a wooden spoon to make a shaggy dough. Turn out onto a lightly floured surface and knead until smooth and elastic, about 1 minute. Place in a lightly oiled bowl, tightly cover with plastic wrap and let rise in a warm place until doubled in size, about 2 hours.
- One hour before baking, put a pizza stone or large inverted baking sheet on the lowest oven rack and preheat to 500 degrees F. Make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until slightly softened, about 1 minute. Add the tomato puree and 2 cups water. Stir in the oregano and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until thickened, about 20 minutes. (The sauce will keep in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months.)
- Divide the pizza dough into 2 balls. On a lightly floured surface, stretch 1 ball of dough into a 12- to 14-inch round. Transfer the dough to a piece of parchment paper, then slide the parchment with the dough onto a pizza peel or inverted baking sheet.
- Spread about 1/2 cup of the sauce on the crust in a thin layer, then scatter 1 cup mozzarella on top. Slide the pizza (on the parchment) onto the hot stone. Bake until the crust is golden brown and the cheese is bubbling, 8 to 10 minutes. Let cool 1 to 2 minutes before slicing. Repeat to make the second pizza.
PERSONAL PIZZA DOUGH
Steps:
- Gather the ingredients.
- In a medium bowl, stir in yeast, water, sugar, salt, and oil. Mix in enough flour to make a dough that can be kneaded .
- Turn dough out onto the board and quickly knead for 3 minutes, adding more flour if the dough is too sticky to knead.
- Place dough in a greased bowl and flip dough over in bowl so that dough top is also lightly greased.
