4 cups frozen Tater Tots
1 pound ground beef
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1/3 cup 2% milk
1 package (16 ounces) frozen chopped broccoli, thawed
1 can (2.8 ounces) french-fried onions, divided
1 cup shredded Colby-Monterey Jack cheese, divided
1 medium tomato, chopped

Steps:

  • Preheat oven to 400°. Spread Tater Tots evenly in an ungreased 13x9-in. baking dish. Bake, uncovered, 10 minutes., Meanwhile, in a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in seasonings, soup, milk, broccoli, 3/4 cup onions, 1/2 cup cheese and tomato; heat through. Pour over potatoes. , Bake, covered, 20 minutes. Sprinkle with the remaining onions and cheese. Bake, uncovered, until cheese is melted, 5-10 minutes.

1 1/2 lbs ground beef (or turkey or venison)
1 cup soft breadcrumbs
1 egg, beaten
1/2 cup onion, chopped
1/3 cup ketchup
1/2 teaspoon salt
1/8 teaspoon pepper
3 cups hot mashed potatoes
1 cup American cheese, shredded, divided (we sometimes use Cheddar)

Steps:

  • Combine meat, bread crumbs, egg, onion, ketchup, salt and pepper.
  • Pat meat into an 8" square baking dish.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Remove from oven.
  • Drain fat.
  • Combine mashed potatoes and 3/4 cup cheese.
  • Spread over meat.
  • Top with remaining 1/4 cup cheese.
  • Bake 20 minutes.

One Pot Ribs-n-Taters image

4 pounds country-style pork ribs
Salt and Pepper
1 cup beef broth
1 cup barbecue sauce
4 medium russet potatoes, scrubbed, unpeeled
3 tablespoons flour
1/4 cup water

Steps:

  • Season ribs with salt and pepper or other seasonings as desired. Place on trivet in cooker. Combine beef broth and barbecue sauce and pour over ribs. Place clean russets atop the ribs, ensuring pot is only 2/3 full. Lock lid and bring to full pressure according to manufacturer's instructions. Cook for 15 minutes. Quick-release pressure. Remove ribs and potatoes from pan and set aside to keep warm. Return sauce to a boil. Whisk flour into water until forms a smooth paste, and then whisk into boiling sauce to thicken. Ladle some of the sauce over the ribs, and serve the rest at the table for gravy.

1 (11 ounce) can Mexican-style corn, drained
1/4 cup minced onion
1 teaspoon salt
1 dash pepper
1 1/2 cups dried mashed potato flakes
1 1/2 cups sour cream
1/3 cup water
1 1/2 cups grated cheddar cheese

Steps:

  • In skillet brown your hamburger, and drain well.
  • Place beef in the crockpot and add tomato sauce, corn, onion, salt and pepper. Mix well!
  • In bowl mix the potato flakes, with sour cream and water.
  • Spread potato mixture over the beef. Top with grated cheese.
  • Cover and cook on Low for 7-10 hours!
