4 Bananas (very ripe)
3/4 cup Sugar
1/4 cup Oil
1 Egg
1 1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 1/2 cup Flour
1/4 teaspoon Cinnamon
1/4 cup Walnuts (Optional)

Steps:

  • Place 4-5 bananas in the mixer and run on low until bananas are mashed
  • Add egg, sugar, and oil to mixture. Mix for about two minutes until sugar is dissolved.
  • Mix in baking soda, baking powder, and flour.
  • Once completely mixed in add cinnamon and walnuts.
  • Mix for about 1-2 minutes stopping once to scrape sides of bowl.
  • Pour dough into a 9 x 5 pan and bake at 350 degrees for about 50 minutes.
  • Remove from the oven and allow to cool for about 2-3 minutes.
  • Place the banana bread in a large zip-lock bag in fridge to lock in moisture.
  • Serve when cooled. Enjoy!

1/2 teaspoon salt
3 ripe bananas (mashed with a fork (about 1 1/2 cups))
2 large eggs (beaten)
1/2 cup sour cream (use full fat for best results, but lower fat also works)
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts (optional)

Steps:

  • Begin by preheating your oven to 350 degrees.
  • Grease a loaf pan (9 x 5 inch).
  • In a mixing bowl combine your dry ingredients. Stir well with a large spoon or spatula.
  • Add in your wet ingredients.
  • Mix well with a hand mixer for about 2 minutes or until the batter is smooth.
  • Stir in one cup the nuts with a large wooden spoon or spatula (optional). Pour into a greased loaf pan.
  • Bake at 350 degrees for 55 to 60 minutes or until a toothpick comes out clean from the middle.

1 cup butter (at room temperature)
1 cup sugar
4 eggs
8 over-ripe mashed bananas
1 (5.1 oz) box vanilla instant pudding mix
1 cup whole milk
4 cup flour
4 teaspoon baking powder
1 teaspoon salt
2 cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees.
  • Cream butter and sugar. Add eggs and beat until smooth and add mashed bananas. Mix in pudding mix and milk. Add dry ingredients (salt and baking powder and flour, one cup at a time). Stir in nuts.
  • Grease or lightly spray two loaf pans with cooking spray. Pour batter into loaf pans and bake for 1 hour and 20 minutes. If it seems as though your bread is getting too brown, too fast, you can tent it slightly with a piece of foil the last 15 minutes or so. Insert a toothpick. If it comes out really doughy, bake another 8 minutes and check it again. Toothpick should come out fairly clean.
  • Let bread stand for 10 minutes and then run a knife around the edges to loosen it up. Turn out onto a wire rack and let cool for 15 minutes then wrap in plastic wrap. Allow to rest on a cooling rack 6-8 hours.

This recipe came to me in an email today regarding a new copycat recipe. " Pancakes baked with pecans and sliced fresh bananas, covered in a warm, caramel sauce." Secret Recipe Tips - Be sure to let the pecans and bananas show for a nice presentation. For a more intense flavor, use a banana-flavored pudding in place of vanilla. 2 cups prepared vanilla pudding
2 cups cream cheese, room temperature
1/2 cup pancake batter, prepared, for 2 pancakes
2 tablespoons honey-roasted pecans
1 banana, sliced into 1/2-inch thick slices
1 teaspoon caramel sauce
1 tablespoon powdered sugar
1 tablespoon whipped topping

Steps:

  • Make Vanilla Cream Cheese mixture: Mix vanilla pudding with cream cheese until well blended and creamy (no lumps). Cover and refrigerate immediately. This mixture will store (covered) in the refrigerator up to 5 days.
  • Prepare pancake batter and preheat griddle. Ladle batter onto hot griddle and sprinkle evenly with pecans and banana slices. When they bubble and edges are dry, flip to cook second side.
  • When done, place pancake on plate, top with 4 tablespoons Vanilla.
  • Cream Cheese mixture and top with second pancake. Ladle with caramel sauce and sprinkle with confectioners' sugar. Garnish with whipped topping.
