Cordon Bleu Rollups with Honey-Mustard Wine Sauce image

Rollups of chicken breast, Swiss cheese and ham are baked and topped with a white honey-mustard wine sauce. This is one of my favorites. It was trial and error. Play with the ingredient amounts, because I never use a recipe and these are approximations!

2 cups white wine
1 teaspoon chopped fresh tarragon
1 teaspoon chopped fresh parsley
1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves
½ pound sliced Swiss cheese
½ pound sliced cooked ham
2 tablespoons brown sugar, divided
salt and pepper to taste
1 tablespoon all-purpose flour
2 cups white wine
¼ cup Dijon mustard
3 tablespoons honey
1 tablespoon prepared horseradish
salt and pepper to taste

Steps:

  • To Marinate: Mix 2 cups wine, tarragon, parsley and oil in a nonporous glass dish or bowl and. Add chicken, and toss to coat. Cover dish or bowl, and refrigerate to marinate for at least 4 hours.
  • Remove chicken from marinade, and pour marinade into a large skillet over medium high heat. Cut chicken breasts in half vertically and quickly flatten each piece to 1/2 inch thickness with a meat mallet. Layer each piece a slice of cheese, slice of ham, and a sprinkle of brown sugar. Roll and secure with toothpicks, then brown in skillet with marinade.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place browned rollups in a 9x13 inch baking dish and pour a small amount of marinade over chicken, reserving at least 3 tablespoons in the skillet. Sprinkle chicken with salt and pepper to taste and a small amount of brown sugar.
  • Bake chicken rollups in preheated oven for about 30 minutes, or until cooked through and chicken juices run clear.
  • To Make Sauce: Meanwhile, add flour to skillet with reserved marinade. Add 2 cups wine, stirring constantly, letting sauce thicken. Then stir in mustard, honey, a bit of brown sugar and horseradish. Season with salt and pepper to taste, heat through and serve with chicken rollups.

A clever technique and a few lightened-up touches let you indulge in all the flavor of Chicken Cordon Bleu, without all the fuss or the fat. It all starts with skipping the stuffed chicken breasts. Instead, pound your chicken breasts flat and layer with Swiss cheese, ham and spinach (for an extra boost of veggies). Then, roll them up, so the flavors can melt together. Coating the outside of your chicken roll-ups with a toasty, herby panko crust and baking them, instead of frying, keeps calories down without sacrificing crispy texture. So, you end up with crunchy-on-the-outside and melty-on-the-inside chicken roll-ups packed with classic flavor and fewer than 400 calories per serving!

1/3 cup Progresso™ plain panko crispy bread crumbs
1/4 teaspoon dried thyme leaves
1/8 teaspoon garlic powder
1/8 teaspoon salt
2 teaspoons vegetable oil
2 large boneless skinless chicken breasts (8 oz each)
1/4 teaspoon salt
1/2 cup baby spinach
4 slices (0.75 oz each) Swiss cheese
4 slices (0.5 oz each) deli ham
1 egg white, beaten with 1 tablespoon water

Steps:

  • Heat oven to 375°F. Lightly spray rimmed baking pan with cooking spray.
  • In 8-inch skillet, cook Topping ingredients 6 to 8 minutes over medium heat, stirring frequently, until crumbs are deeply browned. Reserve.
  • Meanwhile, place chicken breasts on cutting board. Cut each breast in half horizontally into two 4-oz pieces. Place each breast piece between pieces of plastic wrap or waxed paper. Beginning in center of each breast, gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • Season chicken pieces with salt; divide spinach, and layer on breasts. Top spinach with cheese and ham. Beginning from narrow end, roll breasts and seal each end with toothpick; place in pan.
  • Brush each breast with egg white mixture; spoon bread crumbs on each roll, pressing gently so crumbs adhere. Roast 25 to 30 minutes or until chicken is cooked through and filling in chicken reaches internal temperature of 165°F. Remove toothpicks before serving.
