STEAK SALAD WITH TOMATO VINAIGRETTE

- Make the steak: Preheat a grill or grill pan to medium. Mix the chili powder, brown sugar, cumin and smoked paprika in a small bowl. Season the steaks with salt and pepper and rub with the spice mixture; set aside.
- Make the vinaigrette: Puree the cherry tomatoes, lime juice, adobo sauce and honey in a blender until smooth. With the machine running, add the olive oil and puree until smooth. Season with salt and pepper.
- Brush the steaks with olive oil and grill 4 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 10 minutes. Meanwhile, brush the red onion slices with olive oil; season with salt and pepper. Grill the onion, turning occasionally, until softened and charred in spots, about 8 minutes. Thinly slice the steak against the grain. Roughly chop the onion.
- Assemble the salad: Divide the lettuce among plates. Top with the onion, steak, avocado, heirloom tomatoes, jicama and queso fresco. Drizzle with about half of the vinaigrette and sprinkle with the cilantro. Serve with the remaining vinaigrette.

- Crush the coriander seeds with the black peppercorns. Add the dried red chilli flakes, then use to coat both sides of the steaks. Set aside. Preheat a griddle pan on a high heat.
- Cut the cherry tomatoes in half then toss with the red onion, olive oil and lemon juice and season with salt, pepper and a pinch of sugar. Toss in the rocket.
- Griddle the steaks for 2-3 minutes each side, allow to rest, and serve with the salad.

- Seal coriander in a zip-top bag and crush using a meat mallet or small skillet. Add bay leaves and 4 teaspoons pepper and shake to combine. Coat steaks with spice mixture, pressing to adhere.

- Combine coffee, chile powder, 2 tsp. salt, 1 tsp. brown sugar, and 1/2 tsp. coriander in a wide shallow bowl. Coat steaks evenly with rub. Let rest at room temperature 1-2 hours.
- Prepare a grill for medium-high heat or heat grill pan over medium-high; oil grate or pan. Grill steaks, turning occasionally, until lightly charred and an instant-read thermometer inserted into the center registers 120°F, 8-10 minutes for medium-rare. Transfer to a cutting board; let rest at least 15 minutes before thinly slicing.
- Meanwhile, lightly brush corn and tomatoes with oil. Grill, turning often, until tender and charred in spots, 5-10 minutes for tomatoes and 10-15 minutes for corn. Let cool slightly. Transfer tomatoes to a large bowl. Cut kernels from cobs and transfer to bowl with tomatoes.
- Whisk lime juice and remaining 3 Tbsp. oil, 1 tsp. salt, 1/2 tsp. brown sugar, and 1/2 tsp. coriander in a small bowl. Pour over tomatoes and corn. Add romaine, pickled onions, cheese, and 1/2 cup cilantro and toss to combine. Top with sliced steak and more cilantro.

- Heat 10-inch skillet or grill pan over med-high heat until very hot. Brush pan with 1 tbsp oil. On waxed paper, mix coriander, pepper, and 1/2 tsp salt -- use to coat both sides of steaks.
- Place steaks in grill pan; cook about 8 min, turning once for medium-rare or desired doneness.
- Meanwhile, in 2-quart saucepan, heat remaining oil over medium-high heat. Add red pepper and onion, cook, stirring occassionally until very soft, about 5 minutes. Stir in corn; heat through. Stir in cilantro, lime juice, cumin, and remaining salt. Makes about 2 1/2 cups.
