Steps:
- Preheat the oven to 350ºF.
- Heat a grill pan over medium heat. Brush the corn with olive oil and grill, turning occasionally, until well browned, about 10 minutes. Set aside to cool slightly.
- One at a time, place each cob on the thin end of a Bundt pan hole and, using a sharp knife, remove the corn kernels from the cobs, cutting downwards so the kernels fall into the base of the pan.
- Put the corn kernels in a bowl with the cream, sliced butter, hot sauce and some salt and pepper, then mix together. Tip into an 8-by-8-inch dish and bake until brown and bubbling, 25 to 30 minutes.

Steps:
- Preheat the oven to 350 degrees F.
- Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. In a saute pan, add the oil and the onions and saute until translucent. Add the onions to the corn mixture. Add the beaten eggs, milk and half of the grated Cheddar and combine. Use 2 teaspoons of oil to coat a 13 by 9-inch baking dish. Transfer the corn mixture to the dish and top with the rest of the grated Cheddar. Place the dish in the oven and bake for 30 to 40 minutes or until the top of the casserole is golden brown.
CORN AND SQUASH PUDDING
This tasty side dish gets a twist with the added bonus of squash. Not only does the squash add a vibrant color and tons of vitamins to the dish, it provides a creamy texture that plays well off the crisp corn kernels.
