HOT WATER CORNBREAD
This is a very old-fashioned recipe. The cornbread is shaped into little cakes and fried, rather than baked. They are served with maple syrup or honey.

Steps:
- In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
- Pour oil or bacon fat to a depth of 1/2 inch in a large skillet and heat to 375 degrees F (190 degrees C).
- Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels. Serve at once with maple syrup or honey.

SOUTHERN CORN PONE BREAD
A bona fide Southern tradition! Authentic Southern corn pone is never sweet, and is baked in a cast iron skillet. Just like Grandma used to make!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Place a 9 inch cast iron skillet on the center rack.
- When the skillet is hot, carefully remove the skillet from the oven. Pour the canola oil into the skillet and gently swirl the pan to coat the bottom and the sides. Return the pan to the oven for ten minutes.
- While the oil is heating, mix together the cornmeal and salt in a medium bowl. Add the eggs and buttermilk and mix together to make a thin batter.
- Carefully pull out the rack with the cast iron skillet and pour the batter into the preheated skillet.
- Bake the corn pone until a toothpick inserted into the center comes out clean, 20 to 25 minutes. If desired, turn the oven to broil for the last few minutes of baking to brown the top.
- Remove the skillet from the oven and shake the pan to loosen the corn pone from the skillet. Serve the corn pone warm from the skillet or turn out onto a plate.

OLD-FASHIONED HOT WATER CORNBREAD

- Gather the ingredients.
- In a heavy iron skillet , melt 1 tablespoon of shortening.
- Place the cornmeal and salt in a bowl.
- Pour boiling water over the cornmeal and salt.
- Add the melted shortening and stir well.
- When the mixture is cool enough to handle, after about 5 minutes, divide it into four portions.
- Shape each portion into a cornbread cake about 3/4-inch thick.
- Heat about 3 tablespoons of vegetable shortening or oil in the skillet over medium heat.
- Place corn cakes in the hot oil and fry until browned, turning to brown both sides every 2 minutes, about 8 to 12 minutes total.

- 1. Preheat oven to 475 F. Mix corn meal, salt and water. Heat oil in a 9 inch round iron skillet, in the hot oven until hot. Remove skillet' Carefully spread mixture evenly in the hot skillet and spoon some of the fat that comes up to the edge, on top the batter. - Line a rimmed baking sheet with paper towels and place a rack on top; set aside.
- In a medium bowl, whisk together the flour, cornmeal, baking powder, salt and sugar.
- Add buttermilk, water and eggs; mix well.
- Heat oil and butter in a cast iron skillet over medium-to-medium high heat and drop batter by 1/8 cup measure into the hot skillet to form small medallions.
- Fry until brown and crisp, turn and brown the other side. Remove and let drain on rack.
- Serve immediately with warm syrup or honey butter for breakfast, as a snack, or as a savory bread. Dip 'em in a mess o' greens to sop up that pot likker (juice from the greens)!

- Mix Cornmeal, water and salt in a bowl. Mixture will be thin.
- Heat bacon grease with butter until melted and hot. Over low to medium heat.
- When grease is hot, spread about 2 tablespoons of cornmeal mixture to pan in small circular cakes. Doing only 2 or 3 at a time, cook 1-3 minutes per side, turning carefully until edges are brown.
- Carefully remove from pan when crispy and brown to drain on a paper towel. Enjoy!

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. - Mix the cornmeal, water and salt with a wire whisk making sure no lumps remain in the mixture. Set aside for a few minutes.
- Heat a flat griddle or skillet over medium heat.
- When the pan is hot, drizzle with one or two tablespoons of peanut oil tilting the griddle so that the entire surface is coated with oil.
- Ladle the batter by tablespoons onto the hot pan. Do not crowd the pan.
- When the edges begin to brown, turn the cornbread with a metal spatula and cook the second side. The cornbread cooks quickly, so watch to make sure it doesn't burn.
- Remove the cooked cornbread to paper towels to drain. Re-oil the skillet and stir the batter in between each batch of cornbread.

FRIED HOT WATER CORNBREAD CAKES
Steps:
- Gather the ingredients.
- Place the water and salt in a medium saucepan and bring to a full boil over high heat.
- Remove the water from the stove and add the cornmeal, bacon drippings or butter, and sugar, if using. Stir until a stiff dough is formed. Let the mixture stand just until it is cool enough to handle, or about 10 to 15 minutes.
- Shape the dough into palm-sized cakes. Set aside.
- Heat a heavy skillet, preferably cast iron , over medium heat. Add enough shortening or bacon drippings to coat the bottom of the pan.
- When the fat is hot, place the cakes in the hot skillet. Fry until lightly browned on the bottom.
- Turn the cakes over and fry until brown. Repeat the process with all the cakes. Serve hot.

- 1. Mix all dry ingredients
- 2. Slowly add boiling water and stir . you want it to be thick enough to pat into a patty. It may not take all the water. Humidity can affect how much is needed
- 3. Heat about 1/2" of oil in skillet
- 4. Take a good spoonful of mix and form into a patty about 2 inch diameter and 1/2 inch thick.
- 5. Make sure oil is HOT and lower patty into oil cooking until browned and flip over. Browning on both sides
- 6. Remove from oil and place on plate with paper towel to drain.
