CREAMY CORN AND PEPPER RELISH



Creamy Corn and Pepper Relish image

6 cobs fresh corn, shucked or (28-ounce) can corn
1 red pepper
1 large poblano pepper (poblanos are called pasillas in California and the Southwest)
2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, diced
1 yellow pepper, diced
1 orange pepper, diced
4 Roma tomatoes, diced
1 to 2 ounces cream cheese
1/4 cup milk or cream
Salt and freshly ground black pepper
1 bunch fresh cilantro leaves, chopped
1 bunch fresh chives, chopped

Steps:

  • Heat grill to medium.
  • Place corn in foil, sprinkle with water, wrap and put on the grill, with the red and pablano peppers. Char the peppers, remove, peel and dice for relish. Remove the corn to a cutting board, cut off the kernels and reserve in a medium bowl.
  • Add oil to a large skillet and saute the garlic and onion. Saute for a minute, then add the roasted and fresh peppers, tomatoes, and corn heat for another quick minute. Add cream cheese and stir in milk very slowly until the cream cheese is melted and the mixture is smooth. Pour into a serving bowl, fold in cilantro and season with salt and pepper, to taste. Serve garnished with chives.

12 ears fresh corn
2 cups water
1 1/2 cups green pepper, chopped
1 1/2 cups roasted red pepper, chopped
1 cup onion, chopped
2 1/2 cups vinegar
1 3/4 cups sugar
4 teaspoons dry mustard
2 teaspoons black pepper
2 teaspoons pickling salt
3 tablespoons cornstarch
2 tablespoons water

Steps:

  • Cut corn from cobs. Measure out 8 cups of corn in a 10 quart Dutch oven pot. Combine corn and water. Bring to boil and reduce heat. Simmer, covered for 5 minutes. Drain corn. In same Dutch oven combine with corn, red and green peppers and onions. Stir in vinegar, sugar, mustard, salt and black pepper. Bring to a boil. Boil gently, uncovered for 5 minutes, stirring occasionally. Stir together cornstarch and 2 tablespoons water. Add this mixture to corn mixture. Cook and stir until slightly thickened and bubbly. Cook for 2 minutes more. Ladle relish into hot sterilized jars leaving 1/2-inch headspace. Remove any air bubbles. Wipe jar rims and adjust lids and rings. Process in hot boiling water canner for 15 minutes.

2 tablespoons chopped green bell peppers
1 tablespoon finely chopped onion
1 jar (2 ounces) diced pimientos, drained
1/2 cup sugar
1/2 cup white or cider vinegar
1/2 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon mustard seed
1/4 teaspoon red pepper sauce

Steps:

  • Mix corn, bell pepper, onion and pimientos in medium heatproof glass or plastic bowl.
  • Heat remaining ingredients to boiling in 1-quart saucepan, stirring occasionally. Boil 2 minutes. Pour over corn mixture.
  • Cover and refrigerate at least 4 hours to blend flavors but no longer than 5 days. Black Bean-Corn Relish: Stir in 1 can (15 ounces) black beans, rinsed and drained. Makes 3 1/2 cups relish.

2 1/2 cups apple-cider, or distilled white vinegar
1 1/4 cups sugar
4 teaspoons coarse salt
1 1/2 teaspoons mustard seed
1 teaspoon fresh thyme, leaves
1/2 teaspoon celery seed
1/2 teaspoon crushed red-pepper flakes
2 to 3 bay leaves (optional)
8 to 10 black peppercorns (optional)
1 to 2 pieces whole allspice (optional)
Kernels from 10 ears corn (about 8 cups)
2 small red bell peppers, stemmed, seeded, and cut into 1/4-inch dice
2 small white onions, thinly sliced

Steps:

  • In a medium saucepan, combine vinegar, sugar, salt, mustard seed, thyme, celery seed, and red-pepper flakes, bay leaves, black peppercorns, and allspice. Bring to a boil. Add corn, bell peppers, and onions. Return to a boil, stirring occasionally. Cook just until color of corn brightens, 1 to 3 minutes.
  • Ladle into clean jars. Cover, and refrigerate until cold. Will keep, refrigerated, for up to 1 month.
