1 can Corn Beef - 12oz
1 small Cabbage
2 Tablespoon Bacon Grease
½ teaspoon Salt
½ teaspoon Black Pepper
½ teaspoon Sugar
¼ cup Water

Steps:

  • Rinse the cabbage under cool running water.
  • Cut cabbage into quarters, discarding the stem.
  • Slice cabbage into bite sized pieces.
  • Place a skillet over Medium heat on your stove top and let it heat up.
  • Add the bacon grease and let melt.
  • Add the bite sized pieces of cabbage.
  • Add salt.
  • Add black pepper.
  • Add the sugar.
  • Add the water.
  • Stir well to combine.
  • Cover and let simmer 5 minutes.
  • Crumble the corn beef over the cabbage.
  • Cover again and let simmer 8-10 minutes or until cabbage is done as desired.

1 Lb Corned Beef
1 Yellow Onion (chopped)
1/2 Head Green Cabbage (sliced)
2 tablespoons Grainy Mustard
1 Lb Egg Noodles
3 tablespoons Parsley
2 tablespoons Olive Oil
Salt and Pepper
2 tablespoons Butter

Steps:

  • Cook egg noodles to package directions. In a Dutch oven over medium high heat add 1 tablespoon butter and olive oil. Once butter has melted add onion and pinch of salt. Sweat onions for about 2 minutes. Add sliced cabbage to pot and add another pinch of salt. Put lid on pot and cook for another minute. Remove lid and add the beef with pepper, to taste. Add parsley and begin to combine ingredients. Add remaining tablespoon of butter, noodles, and grain mustard and toss everything together, adding a little of the pasta water if needed. Serve immediately.

1 3- to 4-pound package corned beef brisket
Freshly ground pepper
1 cup balsamic vinegar
2 tablespoons sugar (optional)
1 head green cabbage
2 tablespoons extra-virgin olive oil
Kosher salt
12-ounce bottle Guinness or other stout

Steps:

  • Preheat the oven to 325 degrees F. Unwrap the brisket and place it fat-side up in a large baking dish. If the brisket came with a spice packet, sprinkle it over the top, then sprinkle on 3 tablespoons pepper and rub it in. Cover the dish with heavy-duty foil and bake for two and a half hours, then uncover and continue baking until the brisket is very, very tender (almost falling apart!) and a fork inserted into the meat goes in easily, about 1 more hour. Remove from the oven and cover loosely with foil to keep warm.
  • While the brisket is resting, make the balsamic reduction for the cabbage: Stir the balsamic vinegar with the sugar in a small saucepan over medium-high heat and bring to a boil. Reduce the heat to medium low and simmer until the mixture is reduced by two-thirds and thick like syrup, 10 to 12 minutes. Set aside.
  • Make the cabbage: Increase the oven temperature to 400 degrees. Cut the cabbage into 8 wedges. Working in two batches if necessary, heat the olive oil in a large heavy skillet over medium-high heat. Add the cabbage and sear on both cut sides until the cabbage gets as much color as possible, about 1 minute per side. Use a spatula to transfer the cabbage to a rack placed on a rimmed baking sheet. Season with salt and pepper. Pour the Guinness into the bottom of the pan, then carefully transfer to the oven. Bake the cabbage until tender and deep brown, about 20 minutes.
  • Slice the corned beef and place it on a platter with the cabbage. Spoon the balsamic reduction all over the cabbage.

1/2 cup pickling spice
6 cloves garlic
4 bay leaves
4 cloves
2 pounds raw beef brisket, cut into 4 equal portions
2 heads cabbage, cut into wedges
Salt and freshly ground black pepper
Vegetable oil, for frying
3 medium Idaho potatoes, cut into wedges

Steps:

  • Pour the stock into a large 4-gallon stockpot over medium-high heat and bring to a simmer. Add the pickling spice, garlic, bay leaves and cloves. Reduce the heat to medium, then add the beef and cabbage simmer until tender, 3 hours. Season with salt and pepper.
  • Heat a few inches of oil to 325 degrees F in a deep pot.
  • Fry the potatoes wedges until tender, 6 to 7 minutes. Remove and season with salt and pepper.
  • To build the plate, place wedges of cabbage on a plate with corned beef next to it, then add potatoes and finish with 2 to 3 ounces of the cooking broth on top.

5 -6 lbs corned beef
1/2 medium onion, with skin on
2 cloves garlic, crushed
5 whole cloves
1 1/2 teaspoons pickling spices
2 bay leaves
1 head cabbage, remove outer leaves and cut through stem into 8 wedges
2 small turnips, peeled and cut into 1 inch chunks
6 large carrots, peeled,cut in one inch chunks
8 medium potatoes, peeled,cut in one inch chunks

Steps:

  • Place corned beef in a large pot, cover with cold water.
  • Bring to a simmer, simmer for 5 minutes, then remove and rinse meat, empty the water out of the pan.
  • Place meat back in the pan along with the onion, garlic, the cloves, pickling spice and bay leaves.
  • Cover with 12 cups cold water, or more to cover the meat.
  • Bring back to a simmer, partially cover the pan, simmer for 3- 4 hours (adding more water as necessary to keep beef covered), until beef is tender, but not falling apart.
  • Remove the beef from the pot, wrap in foil, and keep warm.
  • Strain the cooking liquid, and add it back to the pot, discarding the onion and spices.
  • Bring the liquid back to a simmer, and add the vegetables in this order-- (you should end up with all the veggies in the pot together) cabbage--give it about 4 minutes, then add turnips--give them about 5 minutes, then add carrots--give them about 3 minutes, and then add potatoes, simmering for about 10-15 more minutes.
  • They should all be fork tender.
  • David serves it this way--slice corned beef thinly against the grain, place in a shallow soup bowl with vegetables, and ladle about 1/2 cup stock over all, with mustard and/or horseradish on the side.
  • We have it in dinner plates sliced, with our veggies on the side, and plenty of butter and salt and pepper on them.
  • Also great with crusty bread, and maybe some mustard or horseradish on the side.

2 bay leaves

  • Discard bay leaves, if used.
  • Remove meat from pot. Thinly slice meat across the grain.
  • Transfer meat and vegetables to a serving platter.

The original Irish recipe actually used a type of lean bacon, made with a cut of pork similar to Canadian bacon. Corned beef came into the picture as a lower-cost substitution, to replace the more expensive and harder to find cut.

3 quarts water
1 onion, quartered
3 carrots, cut into large chunks
3 stalks celery, cut into 2-inch pieces

  • Combine corned beef and spice packet contents, water, onion, carrots, celery, and salt together in a large pot or Dutch oven; bring to a simmer, skimming off any foam that rises to the surface.

Steps:

  • In a very large pot, combine the water, kosher salt, brown sugar, pink curing salt, garlic, ginger, cinnamon stick, bay leaves, mustard seeds, peppercorns, allspice berries, juniper berries, and cloves. Stir and bring to a boil over high heat.
  • Once the brine is boiling, remove from the heat and add the ice to bring the temperature below 45˚F (7˚C).
  • Place the brisket in a large plastic storage container with a lid. Pour the cooled brine over the meat. Cover and brine the beef in the refrigerator for 5-7 days, flipping once a day.
  • Once the brisket is brined, remove the beef from the liquid and transfer to a pot large enough for it to sit flat on the bottom. Add the onion, celery, carrot, ginger beer, and beer. Bring to a boil over high heat, then reduce the heat to low, cover, and gently simmer for 2½-3 hours, or until the meat is fork-tender. Remove the meat from the pot and let cool. If making corned beef and cabbage, reserve the cooking liquid. Otherwise, discard.
  • Thinly slice the brisket against the grain for sandwiches or corned beef and cabbage, or dice for corned beef hash.
  • Return the corned beef cooking liquid to a boil over medium-high heat. (If starting with new cooking liquid, combine the chicken broth, water, chopped carrots, celery, and onion in a large pot and bring to a boil.)
  • Once the cooking liquid is boiling, add the potatoes and cook for 10 minutes, until half-cooked. Add the halved carrots and cabbage, cover, and cook for 10-15 minutes more, until the vegetables are tender.
  • Transfer the vegetables to a serving platter with the sliced brisket and ladle the cooking liquid over.
  • Enjoy!
