COTTAGE CHEESE PEROGIES
Very easy recipe to make, and a wonderful twist to an ordinary perogy. These cheese filled perogies taste great just boiled or fried with a little butter. Eat them with sour cream and you will have a wonderful dinner. You can easily double or triple the recipe and place extras in the freezer.

Steps:
- In a medium bowl, mix together the cottage cheese, egg yolks, and 3/4 teaspoon of salt. Set aside.
- In a separate bowl, mix together the flour, 1 teaspoon of salt, and baking powder. Pour in the vegetable oil and cold water, and mix or knead into a smooth dough.
- Roll dough out on a lightly floured surface, and cut into 3 inch circles using a glass, can, or cookie cutter. Place a spoonful of the cottage cheese filling onto each circle. Fold in half, and pinch the edges together to seal.
- Bring a large pot of lightly salted water to a boil. Carefully drop the perogies into the water, and cook for 3 to 4 minutes, or until they float. Remove from water with a slotted spoon, and place on a cooling rack set over a baking sheet to drain excess water.

A nice change from regular scrambled eggs. These eggs come out creamy and soft. Perfect with a slice of tomato and turkey bacon for a delicious and fast low-carb breakfast.

- Melt butter in a skillet over medium heat. Pour beaten eggs into the skillet; let cook undisturbed until the bottom of the eggs begin to firm, 1 to 2 minutes.
- Stir cottage cheese and chives into eggs and season with black pepper. Cook and stir until eggs are nearly set, 3 to 4 minutes more.

i came across this recipe and remembered my mom making her own recipe (i don't think she even used a recipe)of this when i was growing up.

Steps:
- Blend cottage cheese and mustard.
- Peel shallot, chop finely and mix with cottage cheese blend.
- Wash and dry the chives and snip them finely.
- Stir a/b two-thirds of the chives into cottage cheese mixture.
- Season the mixture with paprika and add salt and pepper to taste.
- Sprinkle remaining chives on top.

COTTAGE CHEESE CHIVE MIX ( MIESZANKA )
My mother made this for us at least twice a week when we were kids. It is so easy, so yummy, and so filling! Now, as an adult, I make it for myself all the time; it is a perfect treat for my Sunday mornings either as, or with, breakfast! The best is this on some fresh bread... yum! In Polish my mom called this: "mieszanka", which literally means "a mixture". Lately I have been experimenting with putting different spices in it, to see how it alters the flavor. Paprika and curry do nicely; experiment yourself and see what you come up with! I hope you enjoy!

- Chop up about 3 or 4 stems of chives.
- Spoon cottage cheese into mixing bowl. Add sour cream, salt, and chives. Mix well.
- Taste! You may want more chives or more salt. After you try the original way, maybe you want to add more spices like pepper or garlic or anything else you like. The taste is rich and lovely. Enjoy it on some hearty bread!
