French Cabbage Soup from Door County, WI Recipe - (4/5) image

Number Of Ingredients 12

6 tablespoons butter
1/2 cup flour
1 cup onion, diced
1 cup carrot, diced
2 tablespoons butter
2 quarts chicken broth - homemade
1/4 lb Polish sausage, diced
1 cup potato, raw,peeled and diced
1 head chopped cabbage ( about 1 lb)
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
salt and pepper
You can adjust this recipe a bit by adding two teaspoons of herbes de Provence, a pkt of dried onion soup mix and another tsp of thyme

Steps:

  • Make a white roux with 6 tbsp butter and 1/2 cup flour by melting the butter in a medium skillet, stirring in the flour and simmering 3- 5 minutes while stirring constantly. Avoid browning. Set aside. Melt 2 tbsp butter in a stock pot, or Dutch oven. Add diced onions and carrots. Saute until tender. Add chicken broth, diced polish sausage, diced potatoes and chopped cabbage to the pot. Stir and simmer for 20 minutes. Add white roux, thyme, salt and pepper to the pot. Stir until smooth. Simmer for 20 minutes.

6 tablespoons butter
1/2 cup flour
1 cup onion, diced
1 cup carrot, diced
2 tablespoons butter
2 quarts chicken broth
1/4 lb smoked sausage, diced (Polish, German or similar style sausage preferred)
1 cup potato, raw, peeled and diced
1 head cabbage, chopped (about 1 lb)
1 teaspoon fresh thyme, chopped or 1/2 teaspoon dried thyme
salt and pepper

Steps:

  • Make a white roux with 6 tbsp butter and 1/2 cup flour by melting the butter in a medium skillet, stirring in the flour and simmering 3- 5 minutes while stirring constantly.

My cousin gave me a cookbook with some French recipes in it for Christmas one year. This recipe was in it and has been a hit with my family ever since. We even sold it to the pool hall for their daily soup special and it was a hit with the general public too. I like a piece of warm french bread served with it.

2 tablespoons butter
2 large potatoes
1 small head of cabbage
1 (15 ounce) can white beans
3 leeks
2 1/2 quarts water
1 carrot
1 (14 ounce) can chicken broth
1 turnip
1 lb smoked sausage
1 onion
2 stalks celery
1 garlic clove

Steps:

  • Chop up all vegetables.
  • Place butter in soup pot over medium heat.
  • Once melted, add the cabbage, leeks, carrot, turnip, onion, celery and garlic.
  • Stir occasionally until the vegetables are tender, but not browned.
  • Peel potatoes and cut into large pieces.
  • Add potatoes and drained beans to pot.
  • Add the water and broth.
  • Season to taste with salt & pepper.
  • Simmer for 1 hour.
  • Cut smoked sausage into small pieces and fry until browned.
  • To serve, place a few pieces of sausage in the bottom of your soup bowl and ladle the soup over them.

1 can (15 ounces) tomato sauce
3 medium carrots, thinly sliced
2 small onions, sliced into rings
1/2 cup dry red wine or beef broth
2 tablespoons brown sugar
2 garlic cloves, minced
1-1/2 teaspoons dried thyme

Steps:

  • Combine all ingredients in a bowl; transfer to an ungreased 3-qt. baking dish. Cover and bake at 375° for 60-70 minutes or until the carrots are tender.
