2 cups torn mixed salad greens
1/2 cup mandarin oranges
1/4 cup chopped walnuts, toasted
CITRUS VINAIGRETTE:
3 tablespoons orange juice
2 teaspoons balsamic vinegar
1 teaspoon olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon minced fresh gingerroot
1 garlic clove, minced

Steps:

  • Place greens on two serving plates; top with oranges and walnuts. In a blender, combine the vinaigrette ingredients; cover and process until blended. Drizzle over salads.

Dash pepper
Dash red pepper sauce
1/2 small head lettuce, torn into bite-size pieces (3 cups)
1/2 bunch romaine lettuce, torn into bite-size pieces (3 cups)
2 medium celery stalks, chopped (1 cup)
2 medium green onions, thinly sliced (2 tablespoons)
1 can (11 oz) mandarin orange segments, drained

Steps:

  • In 1-quart saucepan, cook almonds and 4 teaspoons sugar over low heat about 10 minutes, stirring constantly, until sugar is melted and almonds are coated; cool and break apart.
  • In tightly covered container, shake all dressing ingredients. Refrigerate until serving time.
  • In large bowl, toss salad ingredients, dressing and almonds. Serve immediately.

Salt and freshly ground black pepper
Lemon juice, to taste

6 large handfuls mixed greens (recommended: butter lettuce, frisee, rocket, radicchio, endive, romaine, mache, etc.)
2 handfuls toasted walnuts, finely chopped
Generous handful barely chopped fresh dill

Steps:

  • In a small bowl, whisk together the vinegar and mustard. Whisk in the walnut oil, drop by drop. Season the vinaigrette with salt and pepper. If acid is needed, add lemon juice. If more oil needed, add olive oil.
  • Tear the greens into large bite-size pieces in a flat bowl. Add the nuts and dill. Just before serving, add only enough dressing to coat lightly when tossed. Toss and serve.

6 cups mixed salad greens or 6 cups romaine lettuce, shredded, your choice
3/4 cup feta, crumbled
1/2 cup fresh jicama, peeled and grated
1/2 cup fresh carrot, peeled and grated
1/2 cup red onion, cut into crescents
2 -3 tablespoons of fresh mint or 2 -3 tablespoons fresh cilantro, chopped
2 tablespoons extra virgin olive oil
3 tablespoons lime juice (to taste)
1 teaspoon lime zest, minced
1/4 teaspoon raw sugar
2 tablespoons white balsamic vinegar
1 dash garlic powder (salt-free)
1 pinch salt

Steps:

  • Whisk together the vinaigrette ingredients in a small glass bowl and set aside.
  • Wash the greens well to remove any dirt and spin dry in salad spinner. Place the greens on a large serving platter.
  • Layer the feta, jicama, carrots and red onion crescents on top of the greens in rows.
  • Drizzle mixture with the lime vinaigrette* and sprinkle with fresh ground black pepper. Garnish with mint leaves or cilantro.
