3 medium potatoes (about 1-1/2 pounds)
1 cup fat-free cottage cheese
1/2 cup reduced-fat sour cream
1 tablespoon fat-free milk
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon garlic powder
2 tablespoons sliced green onion
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the potatoes in a large saucepan and cover with water. Cover and bring to a boil. Reduce heat; cook for 10-15 minutes or until tender. Drain. Peel potatoes and cut into cubes. , In a blender or food processor, combine the cottage cheese, sour cream, milk, sugar, salt and garlic powder; cover and process until smooth. Transfer to a large bowl; stir in the potatoes and onion. , Pour into a 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 30 minutes. Sprinkle with cheese. Bake 15 minutes longer or until the cheese is melted.

5 potatoes, peeled and cubed
1 small onion, chopped
1 ½ cups chive-flavored cottage cheese
1 cup sour cream
1 cup shredded Cheddar cheese

Steps:

  • Place potatoes in a large pot of water and boil until tender when pierced with a fork.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x3 inch casserole dish.
  • In a large mixing bowl, combine potatoes, onion, cottage cheese, and sour cream. Transfer mixture to the prepared casserole dish. Top with Cheddar cheese.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes.

Steps:

  • Butter an 11x7-inch (2 quart) baking dish and set aside.
  • Slice the peeled potatoes to 1/8-inch-thick circles. Place the potatoes in a large saucepan or Dutch oven; add water to cover by 1-inch. Cook until tender and cool slightly.
  • Heat the oven to 350 degrees.
  • In a 2 1/2-quart saucepan, melt the butter over medium heat. Add the onion; cook 1 minute. Stir in the flour and salt. Cook until the mixture bubbles.
  • Gradually stir in the milk and cook until the mixture boils. Reduce the heat to low.
  • Stir in the sour cream and cheese. Cook on low until cheese is melted, stirring constantly.

1 tablespoon flour
1 cup milk
1 teaspoon salt
½ teaspoon pepper
3 yukon potatoes, peeled
2 tablespoons grated parmesan cheese
fresh parsley, chopped, for garnish

Steps:

  • Preheat oven to 350°F (180°C).
  • In a small pot, melt the butter and fry the garlic until it's just starting to brown. Add the flour, salt and pepper. whisk until there are no lumps.
  • Slowly drizzle in the milk while constantly whisking to make sure the mixture is smooth.
  • Bring to a boil, then remove from heat.
  • Slice the potatoes into about ⅛-inch (3 mm) thick slices, then fan them out in a small baking dish.
  • Pour the sauce on top of the potatoes, then sprinkle with parmesan.
  • Bake for about 1 hour, until the top is bubbly and golden brown.

12 large potatoes, peeled and diced
8 ounces Velveeta, cubed
1 large onion, finely chopped
1 large green pepper, chopped
1 jar (2 ounces) diced pimientos, drained
1 slice bread, torn into crumbs
3 tablespoons minced fresh parsley, divided
1/2 teaspoon salt
1/2 cup 2% milk
1/2 cup butter, melted
1-1/2 cups cornflakes, crushed

Steps:

  • Place the potatoes in a large saucepan or Dutch oven and cover with water. Bring to a boil; reduce heat to medium. Cover and cook for 5-7 minutes or until tender; drain. In a bowl, combine the cheese, onion, green pepper, pimientos, bread, 2 tablespoons parsley and salt. , In a greased shallow 4-qt. baking dish, layer a third of the potatoes and a third of the cheese mixture. 1/8 to 1/4 teaspoon garlic powder
Dash of pepper
1/4 cup finely chopped onion
1/2 cup shredded reduced-fat Cheddar cheese (2 ounces)
1/4 cup purchased corn flake crumbs
1 teaspoon margarine or butter, melted

Steps:

  • Heat oven to 350°F. Place potatoes in 3-quart saucepan; add enough water to cover. Heat to boiling; reduce heat to low. Cover and simmer 5 to 10 minutes or until tender; drain thoroughly. Place potatoes in ungreased square baking dish, 8x8x2 inches.
