SMOKY BLACK BEAN BISQUE

2 tablespoons extra-virgin olive oil
1/2 cup chopped carrot
1/2 cup fresh or frozen corn kernels (if fresh, from about 1 ear of corn)
1/2 cup chopped onion
Kosher salt
2 cloves garlic, finely chopped
2 teaspoons chile powder
1 teaspoon ground cumin
Two 15-ounce cans black beans, rinsed and drained
1 canned chipotle pepper in adobo sauce, chopped, plus 2 tablespoons adobo sauce
1 quart (4 cups) hot vegetable or chicken stock
2 tablespoons fresh lime juice
Fresh cilantro leaves, for garnish
Sour cream, for garnish

Steps:

  • In a large saucepan, heat the oil over medium heat. Add the carrot, corn and onion and cook until the vegetables being to soften, about 8 minutes. Season with salt.
  • Add the garlic, chile powder and cumin and cook until the spices are fragrant, about 1 minute. Add the beans, chipotle and adobo sauce and stir just to combine. Pour in the stock and 1 cup water. Bring to a simmer and cook until thick and creamy, 35 to 40 minutes.
  • Stir in the lime juice and season with salt, if necessary. Puree the hot soup with a hand blender, if desired, or leave chunky. Serve in soup bowls with the cilantro and a dollop of sour cream.

1 small onion
1 chipotle chile (either canned in adobo or dried)
two 15- to 16-ounce cans black beans
2 teaspoons olive oil
3/4 cup fresh orange juice

Steps:

  • Mince onion. If using dried chipotle, in a bowl soak in boiling-hot water to cover 5 minutes and drain. Wearing protective gloves, mince soaked or canned chipotle. In a colander rinse black beans well and drain.
  • In a 2- to 3-quart heavy saucepan cook onion in oil over moderately low heat, stirring, until softened. Add chipotle and cook, stirring, 2 minutes. Add beans, 1 cup water, and orange juice and simmer, mashing mixture 3 or 4 times with a potato masher, until slightly thickened, about 15 minutes. Season beans with salt.

My daughter and I love the black beans found at a popular fast food chicken restaurant, but I could not find a recipe for that particular taste. I think I came pretty close with this one. A little spicy, a little sweet but oh, so good!!! These beans go great with almost any meat but are especially good with grilled chicken.

1 pound dry black beans, soaked overnight
4 teaspoons bacon drippings
1 onion, chopped
2 teaspoons hickory-flavored liquid smoke
2 tablespoons dark molasses
½ cup packed brown sugar
4 slices pickled jalapeno peppers

Steps:

  • Drain the black beans from their soaking water and place in a slow cooker. Fill with enough fresh water to cover them. Cover and set to High.
  • Heat bacon drippings in a skillet over medium heat. Add onions; cook and stir until tender. Stir this into the beans along with the brown sugar, liquid smoke, molasses and jalapeno slices. Stir to blend, then cover and cook on High for 5 to 6 hours, or until beans are tender.

3 pounds sliced bacon, diced
3 medium sweet onions, chopped
6 cans (28 ounces each) baked beans, undrained
6 cans (16 ounces each) kidney beans, rinsed and drained
6 cans (16 ounces each) butter beans, rinsed and drained
4 packages (12 ounces each) miniature smoked sausages, cut in thirds
3 cups packed brown sugar
1-1/2 cups ketchup
1-1/2 cups cider vinegar
1 tablespoon garlic powder
1 tablespoon ground mustard

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 3 tablespoons drippings. Saute onions in reserved drippings until tender. , In a very large bowl, combine the beans, sausages, bacon and onions. Combine the remaining ingredients; stir into bean mixture. , Pour into four greased 13-in. x 9-in. baking dishes. Bake, uncovered, at 350° for 45-55 minutes or until heated through.

These smoky black bean beet burgers feature beans, quinoa, mushrooms and beets that, together, create an extremely satisfying dish. Protein is usually the "star" of any dish, and often times we find protein in the form of meat, eggs or dairy, but there's a whole world of plant-based proteins that are equally as delicious and satisfying. These burgers have a hint of smokiness from the paprika. The smoked paprika is crucial to pulling the flavors together in these patties. We paired our burgers with a purple cabbage slaw for a nice crunch and topped them with pea shoots and a spicy ketchup. Burgers of any kind are always fun to make in a group because no matter the age or size of the crowd, everyone can customize them with cheese, condiments and other fixins!

1/2 large red onion, finely diced (~3/4 cup)
1 cup finely chopped mushroom (shitake, baby bella, or white button)
1 pinch salt
1 pinch pepper
1 (15 ounce) can black beans, well rinsed and drained
3/4 cup cooked quinoa
1 cup finely grated raw beet
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika

Steps:

  • 1. Heat a large skillet over medium-low heat and add olive oil.
  • 2. Once hot, add the onion and sauté, seasoning with a pinch each salt and pepper.
  • 3. When the onions are soft (about 5 minutes) turn up the heat to medium and add the mushrooms. Season with another pinch of salt and pepper and cook until the mushrooms and onions are slightly browned and fragrant, about 3 minutes.
  • 4. Remove from heat and add black beans and mash. You're looking for a rough mash, so you can leave a bit of texture if you want.
  • 5. Transfer the mixture to a mixing bowl and add the quinoa, beets, spices and stir.
  • 6. Lastly, add the breadcrumbs a little at a time until the mixture is able enough to form into patties. Set in the fridge to chill while your oven pre-heats to 375 degrees.
  • 7. Coat a baking sheet with nonstick spray or olive oil. Form mixture into roughly 8-9 patties.
  • 8. Arrange burgers on a baking sheet and brush or spray the tops with olive oil. Bake at 375 for a total of 30-45 minutes, gently flipping at the halfway mark. Cook longer to dry them out even more and achieve more crisp, but it's not necessary.
  • 9. Serve on small buns or atop mixed greens with desired toppings.

2 tablespoons extra virgin olive oil
1/2 onion, chopped
3 garlic cloves, crushed
2 cups cooked black beans or 2 cups canned black beans, rinsed and drained
1/2 cup water
1 carrot, chopped in small pieces
2 tablespoons tomato paste
2 chipotle chiles in adobo, minced (set 2 tsp of adobo sauce aside)
1 tablespoon red wine vinegar
1 teaspoon sweet smoked paprika
1/2 teaspoon cumin
1 tablespoon honey or 1 tablespoon sugar
fresh cilantro, minced

Steps:

  • Heat olive oil over medium-high heat until it begins to smoke. Add onions, and cook until translucent. Add carrot and sauté until it begins to soften slightly.
  • Turn heat to medium and add garlic, cumin, paprika, and minced chipotle peppers. Sauté for 1-2 minutes, then mix in water, tomato paste, and reserved adobo sauce. Stir to combine, then add beans immediately.
  • When the beans are hot, add vinegar and honey or sugar. Cover and simmer over low heat for 10-15 minutes, stirring occasionally.
  • Sprinkle with fresh cilantro before serving over rice.

1-2 tsp chipotle paste
400g black beans or kidney beans, drained
small bunch coriander , chopped
4 (or more) tortilla bowls (we used Old El Paso Stand 'n' Stuff)
1 avocado , sliced
1 lime , juiced
soured cream , to serve
grated cheddar , to serve
1 tbsp olive oil
1 small onion , finely chopped
1 garlic clove , crushed
½ celery stick, finely sliced
1 small carrot , finely chopped
500g beef mince , 10% fat
3 tbsp tomato & vegetable purée
200ml passata
50ml milk

Steps:

  • Heat half of the oil in a pan, add the onion and fry until it starts to soften, then add the garlic, celery and carrot and cook until soft. Meanwhile, heat the remaining oil in a separate frying pan and fry the mince in batches, scooping each batch out with a slotted spoon and leave any excess oil behind.
  • Add the mince to the veg, then stir in the tomato purée and cook for 1 min. Stir in the passata and bring to a simmer. Cover and cook over a very low heat for 1½-2 hrs, then add the milk and cook for 30 mins. If you're making the base ahead of time, you can leave it to cool at this stage then freeze for up to a month. (Defrost fully before using in the next step.)
  • Put the mince base in a pan and add 1 tsp chipotle paste, bring to a simmer and taste it - add the other tsp if you need to. Stir in the black beans and cook for 5 mins, then stir in the coriander.
  • Warm the tortilla bowls in a low oven. Serve the bowls filled with chilli and add the avocado, a squeeze of lime, soured cream and cheese.
