My grandfather was known for making sausage very similar to this recipe. It is much better than what you buy in the stores. The cook time is really the grinding time.

15 lbs pork, cut up (or any meat)
4 tablespoons salt
3 tablespoons sage
4 tablespoons red peppers
1 tablespoon black pepper
3 tablespoons hot sauce, optional

Steps:

  • Mix all ingredients really well and then grind in a sausage grinder.

A spicy note to your everyday sausages that will be loved by adults and kids alike! Use beef or pork sausages. Serve with either a potato, sweet potato mash, or on a bed of steamed rice with vegetables.

1 tablespoon olive oil
1 pound sausages
½ cup water
1 teaspoon soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon mustard
¼ teaspoon cayenne pepper, or to taste
2 tablespoons tomato paste
1 tablespoon brown sugar

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook sausages, about 15 minutes, until well browned and cooked through.
  • Drain fat, and return skillet and sausages to medium heat. Stir in water, soy sauce, Worcestershire sauce, mustard, cayenne, tomato paste, and brown sugar. Bring contents to a boil; reduce heat, and simmer, stirring occasionally, about 10 minutes.

  • Mix all the ingredients from the marinade list above with chicken. Leave it aside for 30 mins or up to 2 hours (or up to 12 hours in the fridge)
  • Now air-fry them until chicken pieces are golden. It took me 14mins on 390F in my Ninja air fryer. You may need more or less time than this depending on your air fryer and the size of your chicken pieces. Make sure you do not overcrowd the air fryer pan and flip them once to get even browning.
  • Now heat a wok or pan. Add some oil and let it heat. When the oil is hot, add your finely chopped ginger and garlic pieces.

Mix up all sauce ingredients in a jug and add to the snaplock bag along with the sausages if fresh. If you are like us and have frozen homekill sausages, you might be able to pop them out of the packet and put them in the bag still frozen, otherwise just store the sauce bag with instructions for cooking next to your sausages in the freezer, ready to pull out together!
