1 cup sour cream
1/2-1 cup chopped clifty farm cooked country ham
1/4 cup finely minced onion
1/2 teaspoon garlic powder
1 tablespoon butter
1 cup chopped pecans
1/2 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Combine cream cheese, sour cream, country ham, onion and garlic powder, place in a baking dish.
  • Saute butter, pecans and Worcestershire sauce and sprinkle over baking dish.
  • Refrigerate until serving time.
  • Bake for 20 minutes.
  • Serve hot with crackers or raw vegetables (also good served cold.).

2 tablespoons olive oil
1 small sweet onion, chopped
2 cloves garlic, grated
1 pound spaghetti
8 to 10 ounces country ham, cut into small dice, recipe follows (see Cook's Note)
2 cups freshly grated Parmesan
1 cup heavy cream
4 large eggs
Freshly ground black pepper
One 18- to 20-pound smoked ham, water added, ham hock removed
One 16-ounce box light brown sugar
1 cup (one 8-ounce jar) clover honey

Steps:

  • Bring a large saucepan of salted water to a boil.
  • Heat the oil in a medium saucepan over medium-low heat. Add the onion and saute, stirring occasionally, until soft and starting to caramelize, about 20 minutes. Add the garlic and continue to cook until softened, 3 to 5 minutes.
  • Meanwhile, put the spaghetti in the boiling water and cook according to the package instructions, about 8 minutes.
  • Add the ham to the pan with the onions and garlic and cook until just warmed through, about 2 minutes. Whisk together the Parmesan, cream, eggs, 1 1/2 teaspoons salt and some pepper in a bowl.
  • Drain the pasta and transfer to the saucepan with the onion mixture and toss well. Immediately stir in the egg and cheese mixture until well combined. Serve immediately.
  • Adjust the oven racks to accommodate a large covered roasting pan. Fit the pan with a shallow rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with the lid and bake for half the estimated cooking time (total cooking time is about 20 minutes per pound, so 6 hours to 6 hours 40 minutes total).
  • Halfway through the estimated cooking time, add the sugar and honey to a saucepan, cooking over medium heat until smooth and the sugar is dissolved. Pour the mixture over the ham and continue baking the ham, basting occasionally with the drippings in the roaster. Check for doneness at the end of the estimated cooking time by inserting a meat thermometer at a meaty point (not into fat or touching the bone). It should register 160 degrees F.

1 country ham (14 to 16 pounds)
2 cups packed dark-brown sugar
1/3 cup cider vinegar
2 tablespoons stone-ground white cornmeal

Steps:

  • Put ham in a very large container, such as a bucket, and cover with water. Let soak 3 days, changing water at least twice a day. Scrub with a stiff brush; rinse well.
  • Preheat oven to 350 degrees. Put ham in a large, deep, heavy roasting pan; transfer to oven. Add enough boiling water to come half-way up sides of ham. Cover with foil. Bake until an instant-read thermometer inserted in the thickest part registers 160 degrees, about 20 minutes per pound. Check occasionally to ensure cooking liquid is just simmering; adjust oven temperature as needed. Remove from oven; let cool in cooking liquid. Remove skin, leaving a small amount of fat on surface.
  • Preheat oven to 500 degrees. Place ham on a baking sheet lined with foil. Score fat in a crosshatch pattern, if desired. Cook sugar and vinegar in a small saucepan over medium heat, stirring occasionally, until sugar has dissolved. Spread over ham. Sprinkle with cornmeal. Bake 5 minutes. Remove from oven, and brush with glaze from pan. Bake until sugar has caramelized and is bubbling, 3 to 5 minutes more. Cut into very thin slices. Serve warm or at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil.
  • Set ham into the prepared roasting pan and pierce several times with a fork.
  • Stir brown sugar, peach preserves, and mustard together in a bowl; spread over the ham. Cover the ham with a sheet of aluminum foil.
  • Roast ham in preheated oven, basting regularly, for 90 minutes. Remove the aluminum foil cover and continue baking until hot in the center, 30 to 45 minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

2 (8 ounce) packages Philadelphia Cream Cheese, room temperature
2 (5 ounce) cans canned flake ham (Hormel Chunky not deviled, like canned tuna, and chicken)
1/2 cup Hellmann's mayonnaise
1/4-1/2 cup sour cream (to thin)
4 -5 green onions, chopped, tops and all (more or less to your taste)
5 -6 dashes louisiana hot sauce, to taste
1 dash Accent seasoning (optional)

Steps:

  • Mix the cream cheese, ham and mayonnaise with mixer.
  • Add the chopped Onions, Louisiana Hot Sauce and Sour Cream by hand to thin to the right consistency.
  • Chill until set, several hours.
  • When set this can be rolled into a ball, or a half moon, and rolled/topped with chopped nuts if you want to fancy it up a bit.
  • But we don't usually wait for that.
