This homemade Pork Sausage Meat Spice mix is such a versatile mix to have on hand that you might want to multiply each ingredient by 4 and store it in a small mason jar.

COUNTRY SAUSAGE RECIPE

Steps:
- Mix all ingredients except the olive oil into a large bowl and massage with your hands until well combined. Divide the meat mixture into eight equally sized patties.
- Put the olive oil in a large cast-iron pan or skillet over medium-high heat.
- Pan-fry the patties for 2 to 3 minutes on each side or until golden brown, making sure there is enough space between each patty.

- Use immediately or store in a sealed container at room temperature for up to 2 months.
- This blend is the right amount for 5 pounds of uncooked ground meat (ground pork or ground turkey are the best). You can also use this seasoning on other things, like sprinkled on your bagel and cream cheese, or into soups or onto roasted potatoes. It makes everything taste like breakfast!

BREAKFAST SAUSAGE

- Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.
COUNTRY SAUSAGE
Steps:
- If your meat grinder comes with a coarse and a fine grind attachment, grind the meat first through the coarser disk. Put all the remaining ingredients in a spice mill or blender and process until ground evenly. Add the ground seasonings to the meat and mix in well. In a frying pan on top of the stove, fry a little piece of the sausage and taste for seasoning. Correct the seasoning to your own taste. If you think the sausage is too fatty, you may add some more lean meat (and it needn't be pork: veal is fine, and oysters are delicious); you may want more hot peppers.
- Put the properly seasoned forcemeat through the fine grinder.
- If you are stuffing the sausage into casings: Run the mixture through the meat grinder set on the fine setting (and with the sausage stuffer attached and the casings tied at one end and placed over the end of the funnel, ready to be filled). Tie off stuffed sausages into 4-inch links. Cover the sausages and place immediately in the refrigerator.
- You can smoke some or all of the sausage - or partially smoke it. And you can freeze the sausage as well.
HOMEMADE SAUSAGE SEASONING BLEND
A dry herb blend for giving any ground meat a "sausage" flavoring. Try this not only with ground pork, but also ground turkey, beef, or chicken. Adapted from a recipe that came with one of my pizza pans. Recipe can be doubled, tripled, etc as needed. Each batch is enough to season 1 pound of meat. Leave out the crushed red pepper flakes for milder sausage.

- Blend all ingredients together in a spice grinder or mini-food processor (or you may also just stir together if you like some chunkier bits of fennel in your sausage).
- Store in an airtight container until ready to use.
- To use, mix with 1 pound ground meat.
- Chill seasoned meat 3 hours before using.
- Or you may also use this in any recipe calling for sausage seasoning.
