SKILLET CHICKEN AND PEARL COUSCOUS WITH MOROCCAN SPICES
This one-pan meal, which is inspired by the tagines of North Africa, is prepared in a deep skillet or Dutch oven instead of the traditional clay pot. Briefly marinate bone-in chicken thighs in lime juice, garlic, cumin and olive oil, then brown and set aside. (If you're short on time, skip the marinade; simply add the ground cumin when you're toasting the other spices in the chicken fat.) Stir in harissa, cinnamon and turmeric, toast until fragrant, then add quick-cooking pearl couscous and the chicken, so everything finishes cooking together. Top the finished dish with a fistful of roughly chopped tender herbs and lime zest for a jolt of brightness.

Steps:
- In a large bowl, combine the chicken thighs, lime juice, olive oil, garlic and cumin. Season well with salt and pepper and stir together until the chicken is well coated in the marinade; set aside at room temperature for 25 to 30 minutes.
- In a deep, 12-inch skillet or Dutch oven with a lid, heat the grapeseed or canola oil over medium-high. When it shimmers, lift the chicken out of the marinade, allowing any excess liquid to drip back into the bowl, then add the chicken to the skillet, skin-side down. Working in batches, if necessary, to avoid crowding the pan, cook until the chicken is well browned on both sides, about 6 minutes per side. Remove and set aside on a plate.
- Reduce heat to medium, add the leek and cook, stirring occasionally, until soft and translucent, 3 to 4 minutes, scraping up any brown bits that have formed on the bottom of the pan. Stir in the harissa paste, turmeric and cinnamon, and cook until lightly toasted, 1 to 2 minutes. Season well with salt.
- Add the couscous to the pan and stir until well coated in the spiced leek oil. Add the stock and bring to a boil. Turn heat to low and add the chicken back to the pan, skin-side up, along with any accumulated juices. Cover and simmer until the couscous is al dente and the chicken is cooked through, 10 to 15 minutes. If you're lucky, some of the couscous may slightly stick to the bottom of the pan, creating well-seasoned crispy bites.
- Remove from the heat and remove the lid. Scatter with the herbs, if using, and the lime zest, then serve from the pan.
SKILLET CHICKEN WITH COUSCOUS, LEMON AND HALLOUMI
Salty bits of halloumi, toasted walnuts and shallots bathed in lemon will enliven this simple yet elegant roast chicken and couscous recipe. A dash of red-pepper flakes and a few sprigs of oregano make the dish as fragrant as it is flavorful. This recipe works as a lunch or dinner, and although it calls for chicken, the balance of acid and salt could work well with other proteins, such as fish, tofu, or sliced mushrooms, with adjustments to the cooking time, depending on your protein.

Steps:
- Zest 1 lemon into a small bowl. Slice off the top and bottom of the zested lemon so that they're flat. Place the lemon upright on a cutting board, and, using a sharp knife, thinly slice off the white pith moving down the length of the lemon in sections. Discard the pith and roughly chop the flesh, removing any seeds you come across. Move the chopped lemon (about 2 tablespoons) and any juice to the bowl. Stir in the halloumi, chopped walnuts, sliced shallot, red-pepper flakes and 2 tablespoons oil. Let marinate as you cook the chicken.
- Pat the chicken pieces dry and season generously with salt. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high. Place the chicken pieces skin-side down, and cook until golden brown, about 8 minutes. Flip the chicken pieces, and sear chicken to cook further for another 1 to 2 minutes. Transfer the chicken to a plate and set aside.
- Add quartered shallots to the pan and stir to coat in the pan drippings. Lower the heat to medium and cook until golden brown and just tender, about 4 minutes. Add the couscous and stir to coat in the shallot-flavored chicken fat. Add the broth, season with salt and bring up to a simmer.
- Return the chicken to the skillet, skin-side up, along with any liquid from the plate. Add the oregano sprigs, cover with the lid or seal with foil, and cook until the liquid is absorbed, the couscous is tender and the chicken is cooked through, about 15 to 20 minutes. Remove from heat, fluff the couscous and top with halloumi-walnut mixture.
- Cut the remaining lemon in half, remove any seeds and squeeze over the entire pan. Garnish with a handful of fresh parsley and serve.

SKILLET CHICKEN WITH SILKY PEPPERS AND GREEN OLIVES
Made with diced fresh tomato and colorful sweet bell peppers, this savory chicken dish is lively and bright. Cooked as written, the sauce is on the brothy side, perfect for pouring over rice or couscous, or for sopping up with bread. But if you prefer it to be heartier, remove the chicken pieces from the pan once they're cooked, then simmer to reduce the sauce, stirring occasionally, for another 5 to 8 minutes. Return chicken to the pan and stir in olives, then garnish with herbs to serve.

Steps:
- Pat chicken dry with paper towels. Season all over with 1 tablespoon oregano, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper. Set aside at room temperature while preparing the vegetables (or refrigerate for up to 24 hours).
- Slice the peppers into 1/4-inch strips, removing the seeds. Peel and thinly slice the garlic cloves. Chop the tomato.
- In a large skillet, heat 1 tablespoon oil over medium-high. When the oil thins out and coats the bottom of the pan, add chicken, skin side down, and sear until browned on both sides, 4 to 6 minutes per side. Do this in batches if necessary; don't crowd the pan. Transfer the chicken pieces to a plate as they brown.
- Add remaining 1 tablespoon oil to the skillet and stir in peppers. Sauté until tender and lightly browned, 6 to 8 minutes. Add garlic, remaining oregano and red-pepper flakes, and cook until garlic is lightly golden, 2 to 3 minutes. Stir in tomato and remaining 1/2 teaspoon salt, and cook until tomatoes begin to release their juices, 3 minutes.
- Lower heat to a simmer and nestle in the browned chicken, skin side up, pouring in any accumulated juices from the plate. Partly cover the pan and cook until chicken is cooked through and peppers are soft and stewy, 20 to 30 minutes. Taste and add more salt if needed. In the last minute or two of cooking, stir in olives to let them heat up. Remove from heat, and sprinkle parsley or other herbs on top. Garnish with lemon wedges, if you like.

- Cut up the chicken pieces and trim off any excess fat or skin. If you're using large chicken breasts, cut them up into small pieces. In a glass bowl, combine the flour, 1/2 tsp. salt and 1/4 tsp. black pepper. Working with 8-10 pieces of chicken at a time, move them around in the flour mixture inside the bowl making sure they are completely coated with seasoned flour. Set aside on a plate and repeat with all the chicken pieces.
- In a very large skillet (with a lid), heat olive oil over medium heat. Add chicken pieces (in batches) and cook, turning once or twice, until they are golden brown on all sides. Remove to a plate as they brown and repeat until all the chicken pieces are cooked. Set aside.
- When the chicken is browned, lower the heat to medium low and add the onion to the pan. Cook, stirring for 3 - 4 minutes or until softened. Add in the minced garlic until fragrant. Return the chicken pieces to the pan, sprinkle with ground ginger and remaining salt and pepper. Stir to coat, then add the chicken broth. Bring to a boil, then lower heat to low, cover the pan and let simmer for 10-15 minutes.
- Meanwhile, using a lemon zester, shave off some of the lemon peel of one of the lemons for a garnish. Squeeze the juice of one of the lemons, over a strainer to keep the lemon seeds out. You should have about 1/4 cup of lemon juice. If you don't have this same amount don't worry, it's not a big deal. Slice the other lemon for a garnish (seeds removed).

- First, prepare 200 g cooked couscous. You can buy it precooked, or you can make it by simply adding 100 g couscous to a bowl, then pouring boiling water to completely cover the grains by about an inch. Wait 5-6 minutes for the water to be absorbed, and the couscous should be done. Taste test to make sure that the grains are soft. If they are still a bit hard, add more boiling water and allow it to be absorbed before continuing.
- Heat up some one calorie cooking spray in a large skillet. Finely dice the onion, and saute for a minute. Dice the chicken breasts and add them to the pan. Add the ras el hanout over the chicken pieces, making sure that the chicken is covered on both sides. Allow the chicken to cook until done, about 5 minutes depending on the size of your pieces. Remove the chicken from the pan.
- To the same pan, add cooked couscous, roughly chopped olives and pomegranate seeds. Drain and rinse 1/2 tin (400 ml size) chickpeas, and add to the couscous. Stir the pan to combine all the ingredients. Allow the ingredients to heat up, then add the chicken pieces on top. Serve immediately, or sprinkle some feta cheese over the top.

- Warm the olive oil in a 10 to 12-inch cast iron or oven-proof skillet over medium heat as you simultanesouly pre-heat your oven to 450°. Add the shallot, garlic, and sausage to the skillet and use a wooden or silicone spatula to break the sausage into small crumbles. Let cook about 6-8 minutes, stirring periodically, until the sausage crumbles brown slightly.
- Once the sausage is lightly browned and cooked through, add the halved or quartered tomatoes, grapes, and all of the seasonings (kosher salt through black pepper). Stir to evenly distribute the ingredients around the pan and let cook another 3 minutes until the tomatoes and grapes begin to soften slightly and release some of their juices.
- After the tomatoes and grapes have softened slightly, add 1/4 cup low-sodium chicken broth to de-glaze the pan (i.e. gently scrape up any tasty brown bits that have formed at the bottom). Then add the couscous and remaining broth and stir briefly to evenly distribute the couscous among the grapes and tomatoes. Sprinkle the feta and pinenuts over top and immediately transfer the skillet to the middle rack of a pre-heated 450° oven. Let bake 10-15 minutes (10 minutes for softer edges and 15 minutes for crispier edges).
- Meanwhile, combine the Yogurt Drizzle ingredients in a small bowl and whisk until thoroughly combined (start with 3 tablespoons milk and add more if needed to achieve desired consistency). When the couscous is done baking, remove the skillet from the oven and top it with a sprinkling of fresh cilantro (if using) and several tablespoons of the Yogurt Drizzle. Serve the couscous directly from the pan (cover the handle to protect hands) with the remaining Yogurt Drizzle on the side. Enjoy!
