These spicy cowboy beans are a perfect contribution to a potluck buffet any time of year. Instead of hours on the stove, they cook quickly in the pressure cooker and there's no need to pre-soak the beans. -Joan Hallford, North Richland Hills, Texas

4 bacon strips, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 cups reduced-sodium beef broth
3 cups water
1 package (16 ounces) 16-bean soup mix
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 poblano pepper, chopped
1/4 cup packed brown sugar
1 envelope taco seasoning
TOPPINGS: chopped fresh cilantro, shredded cheddar cheese and sour cream

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 4-5 minutes. Add onion and garlic; cook until tender, 5-6 minutes longer. Add broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel., Add water, soup mix, tomatoes and green chiles, tomato sauce, poblano pepper, brown sugar and taco seasoning. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 90 minutes. Let pressure release naturally., If desired, select saute setting and adjust for low heat. Simmer, stirring constantly, until desired consistency. Press cancel. Serve with toppings of your choice. , Freeze option: Freeze cooled bean mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

1 pound ground beef
4 (16 ounce) cans baked beans with pork
1 (4 ounce) can canned chopped green chile peppers
1 small Vidalia onion, peeled and chopped
1 cup barbeque sauce
½ cup brown sugar
1 tablespoon garlic powder
1 tablespoon chili powder
3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste

Steps:

  • In a skillet over medium heat, brown the ground beef until no longer pink; drain fat, and set aside.
  • In a 3 1/2 quart or larger slow cooker, combine the ground beef, baked beans, green chiles, onion and barbeque sauce. Season with brown sugar, garlic powder, chili powder and hot pepper sauce. Cook on HIGH for 2 hours, or low for 4 to 5 hours.

1 lb dried pinto bean
8 cups water
2 cups beef brisket, burnt ends chopped
1 (14 ounce) can whole tomatoes
1 large onion, chopped
1 cup barbecue sauce
6 garlic cloves, minced
3 jalapeno peppers, seeded and chopped
2 tablespoons chili powder
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground cumin

Steps:

  • Wash beans and pour into large saucepan or dutch oven.
  • Add all other ingredients except the salt.
  • Bring to a boil while stirring.
  • Reduce heat and allow to simmer for two hours, covered.
  • Stir occasionally, bringing up the beans from the bottom.
  • Add salt after 1 hour.
  • Beans are done when soft but still hold their shape.
  • Note: If doubling this recipe, do not increase the amount of chili powder.

2 qt./2 L water
2 cups/475 mL brisket (burnt ends, chopped)
1 14 oz./400 g. can tomatoes (whole)
1 onion (large, chopped)
1 cup/240 mL barbecue sauce
6 garlic cloves (minced)
3 jalapeno peppers (seeded and chopped)
1 tbsp./15 mL chili powder
1 tbsp./15 mL Worcestershire sauce
1 tsp./5 mL salt
1 tsp./5 mL cumin (ground)

Steps:

  • Gather the ingredients.
  • Wash beans and pour into a large saucepan or Dutch oven .
  • Add all other ingredients, except the salt .
  • Bring to a boil while stirring.

1 pound bacon, cooked and crumbled
2 cups barbecue sauce
1 can (16 ounces) butter beans, rinsed and drained
1 can (15-3/4 ounces) pork and beans
1 can (15-1/2 ounces) navy beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 medium onions, chopped
1/4 cup packed brown sugar
1/4 cup molasses
2 tablespoons balsamic vinegar
2 teaspoons ground mustard
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until heated through, 50-60 minutes.

My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
  • Cook on Low, stirring often, about 4 hours.
