2 teaspoons chili powder
1 teaspoon instant coffee granules or crystals
1/2 teaspoon ground cumin
1/2 teaspoon packed brown sugar
1 lb beef flank steak
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb red fingerling potatoes (about 20)
1 tablespoon butter, melted
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons shredded reduced-fat extra-sharp Cheddar cheese
2 tablespoons thinly sliced green onion tops

Steps:

  • Set oven control to broil. Spray broiler pan with cooking spray. In small bowl, mix chili powder, coffee granules, cumin and brown sugar.
  • Sprinkle steak with 1/2 teaspoon salt and 1/4 teaspoon pepper; rub with spice mixture. Place on broiler pan. Broil steak 4 inches from heat 12 minutes or until of desired doneness. Cover loosely with foil.
  • Meanwhile, scrub potatoes; place in single layer in 9-inch square microwavable dish. Cover with microwavable plastic wrap, folding back corner to vent steam. Microwave on High 5 to 6 minutes or until tender. Let stand 5 minutes. Cut potatoes in half; place on cookie sheet. Drizzle with butter. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Top evenly with cheese. Broil 2 minutes or until cheese is melted. Sprinkle with onions.
  • Thinly slice steak across grain. Serve with potato skins.

1 1/2 pounds baby red-skinned potatoes
Kosher salt
1 cup fresh parsley
1 scallion, roughly chopped
1 small jalapeno pepper, seeded and roughly chopped
1 clove garlic, smashed
Finely grated zest and juice of 1/2 lemon
1/4 cup extra-virgin olive oil
1 1/4 to 1 1/2 pounds flank steak
Freshly ground pepper

Steps:

  • Put the potatoes in a medium pot and cover with cold water by 1 inch; season with salt. Bring to a boil and cook until fork-tender, 15 to 20 minutes; drain.
  • Meanwhile, combine the parsley, scallion, jalapeno, garlic, lemon zest and juice, 2 tablespoons olive oil and 1/2 teaspoon salt in a mini food processor; pulse until finely chopped. Transfer to a small bowl and set aside.
  • Heat a large skillet over high heat and add 1 tablespoon olive oil. Season the steak with salt and pepper. Add to the skillet and cook until browned, 5 to 6 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes.
  • Add the remaining 1 tablespoon olive oil and the potatoes to the same skillet; gently smash the potatoes with the back of a wooden spoon. Cook, stirring occasionally, until golden brown and slightly crisp, about 5 minutes. Season with salt and pepper.
  • Thinly slice the steak against the grain. Top with the parsley sauce and serve with the potatoes.

2 garlic cloves
Coarse salt and ground pepper
1/2 teaspoon dried thyme
3 tablespoons olive oil
1 1/2 pounds red new potatoes, sliced 1 inch thick
1 1/2 pounds skirt steak, cut into 4 equal pieces
2 tablespoons red-wine vinegar
1 teaspoon Dijon mustard
2 bunches watercress (about 12 ounces total), thick ends removed

Steps:

  • Preheat oven to 475 degrees. Finely chop garlic, and sprinkle with salt. Using a chef's knife, press flat side of blade back and forth across garlic to make a paste. Transfer to a small bowl; stir in thyme and 1 tablespoon oil. On a large rimmed baking sheet, toss potatoes with garlic mixture; bake until browned on underside, 20 to 25 minutes.
  • Meanwhile, heat a large skillet or grill pan over high. Season steaks with salt and pepper, and cook (in two batches if necessary) until medium-rare, 3 to 6 minutes per side (depending on thickness of steak). Transfer to a plate to rest.
  • While steaks rest, make salad: In a large bowl, whisk together vinegar, Dijon, and remaining oil; season with salt and pepper. Add watercress, and toss to combine. Serve steaks with potatoes and salad.

½ white onion, sliced
1 ½ lb flank steak
2 tablespoons olive oil
4 cups wild rice, cooked, to serve
1 ½ teaspoons salt
1 ½ teaspoons pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder

Steps:

  • Preheat oven to 400°F (200°C).
  • In a small bowl, add the salt, pepper, garlic powder, paprika, and onion powder. Stir until well combined.
  • Place broccoli, onions, and flank steak on a baking tray.
  • Coat broccoli and onions with olive oil.
  • Sprinkle seasoning mix on flank steak, broccoli, and onions until coated.
  • Bake for 15 minutes.
  • Broil for 2 minutes.
  • For medium, internal temperature of steak should reach 145°F (65°C). Let steak rest 10 minutes before cutting.

1 1/2 pounds flank steak
2 large ears corn, cut into 2-inch rounds
1/4 cup pesto

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss potatoes with 1 tablespoon olive oil; season with salt and pepper. Arrange in a single layer and bake until golden and tender, 30 minutes, flipping halfway through.
  • Meanwhile, heat a heavy skillet or grill pan over high. Brush steak with oil; season with salt and pepper. Cook steak, 5 to 8 minutes per side for medium-rare, flipping once. Tent with foil on a cutting board. Let rest 10 minutes before thinly slicing against the grain.
