Homemade German Chocolate Cake Recipe image

Made with a coconut-pecan frosting and two or three tall layers of tender chocolate cake, German chocolate cake is one of our favorite old-fashioned desserts. Most people agree that the sticky, sweet, ultra rich frosting is the best part of the cake, and this recipe makes more than enough to cover the entire cake. Or you can frost the top of the cake and in between the layers, which will give you a little leftover frosting-never a bad thing. Fun fact: The name of this classic cake comes Baker's German's Sweet Chocolate, the brand of chocolate used, not the country.

2 (4-oz.) Baker's German's Sweet Chocolate Baking Bars, chopped
1/2 cup strong-brewed hot coffee
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
4 large eggs, separated
2 teaspoons vanilla extract
1 cup low-fat buttermilk
Vegetable shortening
1 (12-oz.) can evaporated milk
3/4 cup butter
3/4 cup granulated sugar
3/4 cup packed light brown sugar
6 egg yolks, lightly beaten
2 cups sweetened flaked coconut
2 cups chopped toasted pecans
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F. Grease (with shortening) 3 (9-inch) round cake pans; line bottoms with parchment paper, and lightly grease paper with cooking spray. Dust pans with flour.
  • Stir together chopped chocolate and hot coffee in a medium microwavable bowl; microwave on HIGH until melted and smooth, 30 seconds to 1 minute, stirring mixture after 30 seconds. Set aside.
  • Whisk together flour, baking soda, and salt in a bowl. Beat butter and sugars with a heavy-duty stand mixer on medium speed until light and fluffy, about 3 minutes. Add yolks, 1 at a time, beating just until blended after each addition. Add melted chocolate mixture and vanilla; beat on low speed until blended. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture. Beat on low speed just until blended after each addition.
  • Place egg whites in a separate clean bowl, and beat with an electric mixer on high speed until stiff peaks form, about 3 minutes; gently fold into batter. Divide batter among prepared pans.
  • Bake in preheated oven until a wooden pick inserted in center comes out clean, 24 to 28 minutes. Remove pans from oven; gently run a knife around outer edge of cake layers to loosen from sides of pans. Cool in pans on wire racks 15 minutes. Remove from pans to wire racks; discard parchment paper. Cool completely, 1 hour.
  • While the cake cools, prepare the Coconut-Pecan Frosting. Stir together evaporated milk, butter, granulated sugar, packed light brown sugar, and lightly beaten egg yolks in a heavy 3-quart saucepan. Cook over medium heat, stirring constantly, until butter melts and sugars dissolve, 3 to 4 minutes. Cook, stirring constantly, until mixture is bubbling and thick, 12 to 14 more minutes. Remove pan from heat; stir in sweetened flaked coconut, chopped toasted pecans, and vanilla extract. Transfer to a bowl. Let stand, stirring occasionally, until slightly warm and spreadable, about 40 minutes.
  • Spread slightly warm Coconut-Pecan Frosting between layers and on top and sides of cake, if desired. Let stand until frosting is completely cool and set, about 15 minutes.

2 cups all-purpose flour
2 cups sugar
3/4 cup cocoa
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
1 cup boiling water
2 cups evaporated milk
2 cups white granulated sugar
6 egg yolks (beaten with 2 teaspoons water)
1 cup butter or margarine
2 teaspoons vanilla extract
2 cups chopped pecans
2 cups sweetened flaked coconut

Steps:

  • Preheat oven to 350º F. Grease 3-8 or 9 inch round cake pans and lightly dust with cocoa powder. I like to make a 2 layer cake and set the 3rd aside for kids that don't like the frosting and my sisters with nut allergies.
  • In mixing bowl (I use my Kitchen Aid), add flour, sugar, cocoa, baking powder, baking soda, and salt. Stir until well combined.
  • Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well mixed. Reduce the speed to low and add boiling water to the cake batter a little bit at a time. Once the water is all mixed in, beat on high for about 1 minute.
  • Evenly distribute cake batter between the prepared cake pans.
  • Bake for 30-35 minutes, or until a toothpick or cake tester inserted in the center comes out clean.
  • Remove from the oven and allow to cool for about 10 minutes. Remove from the pan and cool completely.
  • Make frosting while cake is baking, as it needs an hour to cool.
  • In a large saucepan combine evaporated milk, sugar, egg yolks, margarine, and vanilla. Cook over low-medium heat until it reaches a slow boil. Stirring constantly until thick, about 12 minutes from when it starts to slowly boil. Remove from heat and stir in pecans and coconut, this frosting will thicken up as it cools.
  • Let cool 1 hour then spread on cooled cake. I use 1 1/2 cups in between each layer and then use the rest to frost the outside. For easier cutting, place the frosted cake in the fridge for 30 minutes before slicing and serving. Enjoy!

⅔ cup cocoa powder
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
¼ teaspoon salt
1 ¾ cups sugar
½ cup vegetable oil
1 cup milk
2 large eggs
1 teaspoon vanilla extract
¾ cup boiling water
¾ cup evaporated milk
4 large egg yolks
⅓ cup unsalted butter, at room temperature
1 ⅓ cups sugar
1 teaspoon vanilla extract
2 ½ cups shredded coconut
1 ½ cups toasted pecans, chopped

Steps:

  • Preheat the oven to 350 F. Grease and line 2 8-inch round cake pans with parchment paper.
  • Sift the flour and cocoa powder into a large mixing bowl. Add the baking soda, baking powder, and salt, and whisk to combine. Add the sugar and whisk again.
  • Add the milk, oil, eggs, and vanilla extract and whisk until just combined.
  • Gradually pour in the boiling water, whisking as you go, until combined.
  • Evenly distribute the mixture between your prepared cake pans. Bake for 35 minutes or until a skewer inserted into the center of a cake comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  • Make the frosting by adding the evaporated milk and egg yolks to a large saucepan and whisk them together (not on the heat).
  • Add the sugar to the saucepan and whisk again until dissolved.
  • Add the butter to the pan and heat on a low-medium setting, whisking constantly until the butter has melted. This will take about 10 minutes.
  • Remove the pan from the heat and add the pecans, coconut, and vanilla extract. Stir everything together and set aside to cool. It will thicken slightly as it cools.
  • Once the cake and coconut pecan frosting have both cooled, assemble the cake. Start by spooning/spreading half of the frosting all over one of the cake layers.
  • Place the second cake layer on top and spoon/spread over the remaining frosting.
  • Optionally decorate the cake with the halved pecans, then serve and enjoy.

2 (1 ounce) squares unsweetened chocolate, chopped
6 tablespoons water
1 ½ cups white sugar, divided
1 cup unsalted butter, at room temperature
4 eggs, separated
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk, at room temperature
1 teaspoon vanilla extract
2 cups heavy cream
2 cups white sugar
6 egg yolks
2 ⅔ cups coconut, toasted
2 cups pecans, toasted and finely chopped
1 ½ cups unsalted butter, at room temperature
1 teaspoon salt
1 cup water
¾ cup white sugar
2 tablespoons dark rum
3 (4 ounce) bars semisweet chocolate, chopped
4 ½ tablespoons unsalted butter
3 tablespoons light corn syrup
1 ½ cups heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch cake pans, line with parchment paper, and grease the parchment paper.
  • Place semisweet chocolate, unsweetened chocolate, and water in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Beat 1 1/4 cups sugar and butter until light and fluffy, about 5 minutes. Beat in the melted chocolate. Add egg yolks, one at a time, mixing well after each addition.
  • Combine flour, baking powder, baking soda, and salt in a bowl. Add 1/2 of the flour mixture to the creamed butter mixture and beat until well combined. Add buttermilk, vanilla extract, and the remaining flour mixture.
  • Beat egg whites in a separate bowl until soft peaks form. Add 1/4 cup sugar and beat until stiff peaks form. Fold about 1/3 of the egg whites into the cake batter, then fold in the remaining egg whites, but do not overmix. Divide batter between the 2 prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool for 10 minutes in the pans before inverting onto wire racks to cool completely.
  • Prepare the filling while the cakes are cooling. Combine cream, sugar, and egg yolks in a medium saucepan and mix until well combined. Cook over medium heat, stirring constantly, until custard begins to thicken and an instant-read thermometer inserted into the center reads 170 degrees F (76 degrees C).
  • Combine coconut, pecans, butter, and salt in a bowl. Pour hot custard over the pecan-coconut mixture and stir until butter is melted. Cool completely to room temperature.
  • Make the syrup by heating water and sugar in a small saucepan over medium heat until sugar has dissolved. Remove from heat and stir in dark rum.
  • Combine chopped chocolate, butter, and corn syrup in a bowl for the frosting. Heat cream in a saucepan until it just begins to boil. Remove from heat and pour into the bowl. Let stand for 1 minute, then stir until smooth and chocolate is melted. Cool to room temperature.
  • Cut cake layers in half horizontally using a serrated bread knife. Set the first cake layer on a cake plate. Brush well with syrup. Spread 3/4 cup filling on top, making sure to reach all the way to the edges. Repeat with remaining cake layers, syrup, and filling, including the top.
  • Frost the sides of the cake with chocolate frosting. Spoon remaining chocolate frosting into a piping bag and pipe a decorative border around the top and bottom of the cake.
