5 small russet potatoes
olive oil
1 teaspoon sea salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon chili powder

Steps:

  • Cut russet potatoes into thin slices (see pictures for size)
  • Cover a large baking sheet with parchment paper, cut to fit the size of the pan
  • Place potato slices on the parchment paper
  • Using a rubber brush, spread a thin layer of olive oil over both sides of the potato slices
  • Combine salt, pepper, garlic powder, onion powder, cumin, and chili powder in a small cup or bowl
  • sprinkle mixture evenly over potatoes, flipping potatoes, to cover both sides
  • Bake at 450 degrees for 25-35 minutes, flipping halfway through, until crispy
  • Serve with ketchup and enjoy!

Everybody just loves these potatoes, and they're so quick and easy to prepare. I often put this in the oven while I'm preparing the main dish.

1/3 cup butter, melted
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
Salt and pepper to taste
6 medium potatoes, each sliced into 4 rounds
Italian seasoning to taste

Steps:

  • Pour butter into a 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. In a plastic bag, combine flour, cheese, salt and pepper. Shake a few potato slices at a time in the bag to coat with the flour mixture. Place potatoes in a single layer over the butter. Bake at 375° for 30 minutes. Turn slices and sprinkle with Italian seasoning. Bake 30 minutes more or until tender.

I was trying to create an appetizer that could be served at my teenaged daughters birthday party that the kids would love but that would appear elegant enough for the adults to be interested as well. These are made with simple ingredients yet yield a sophisticated result. Feel free to get creative with the flavors. 4 medium potatoes (about 7 ounces each), cut into 1/4-inch slices
3 tablespoons olive oil
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon coarsely ground pepper
TOPPING:
3/4 cup shredded part-skim mozzarella cheese
3/4 cup sour cream
2 green onions, sliced
1/2 teaspoon kosher salt
1/8 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 425°. Toss together first 6 ingredients. Place potato rounds on greased 15x10x1-in. pans. Roast until tender, 12-15 minutes. , Mix the first 5 topping ingredients; spoon onto potato slices. Top with crumbled bacon. Transfer to serving platters. Serve immediately.

1 lb. lean ground beef
3/4 cup finely chopped yellow onions
1/3 cup seasoned dry bread crumbs
1/4 cup KRAFT Sweet Honey Barbecue Sauce
1 egg, beaten
2 tsp. chili powder
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
1 Tbsp. butter or margarine
1 can (5 oz.) evaporated milk
1 Tbsp. chopped fresh parsley
1 tsp. garlic powder
1/2 cup OSCAR MAYER Real Bacon Bits
1/4 cup french-fried onions
2/3 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 375ºF.
  • Mix meat, yellow onions, bread crumbs, barbecue sauce, egg and chili powder just until blended; press onto bottom of 9-inch square baking dish sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160ºF).
  • Meanwhile, microwave potatoes as directed on package; place in medium bowl. Add butter, milk, parsley and garlic powder; mix well. Gently stir in bacon and French fried onions.
  • Remove baking dish from oven. Heat broiler. Spread potato mixture over meat mixture; top with cheese. Broil, 4 inches from heat, 3 to 5 min. or until cheese is melted.

2 large baking potatoes, unpeeled
no-stick vegetable oil cooking spray
1/2-3/4 cup tex-mex cheese
5 slices bacon, cooked,drained and crumbled
2 green onions, diced
1/4 cup barbecue sauce

Steps:

  • Preheat oven to 450.
  • Slice potatoes evenly, about 1/4" thick.
  • Spray baking pan with no stick spray.
  • Place potatoes on pan and bake turning once until golden, about 15-20 minutes Combine bacon, cheese, and green onions.
  • Remove potatoes from oven.
  • Brush tops with barbecue sauce.
  • Evenly spread cheese topping blend on top.

2 large baking potatoes
6 slices bacon
1 cup shredded Cheddar cheese

Steps:

  • Place the potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender when pierced with a fork, about 20 minutes. Drain, and cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Cook bacon in a large skillet over medium-high heat until crisp. Drain, cool, and crumble.
  • Slice the potatoes into 1/4 inch rounds, and arrange them in a single layer on the baking sheet. Sprinkle a few crumbles of bacon onto each round, then top with some shredded Cheddar cheese.
  • Bake for 15 minutes in the preheated oven, or until cheese is melted and lightly browned.

1 pound Yukon Gold (yellow) potatoes
1 fresh jalapeno pepper, sliced
12 ounces baby carrots
4 cloves garlic
1 (10 ounce) package frozen white corn, thawed
¼ cup butter
½ cup shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
  • Stir in corn and butter. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

My family's been making this tasty side dish for years, and I was surprised not to find something similar already here. Goes great with grilled meats, burgers, or sausages. Use any color of bell peppers you have, or a combo.

2 medium potatoes, scrubbed
2 tablespoons olive oil
1/4 cup onion, diced
1/4 cup bell pepper, diced
salt and pepper

Steps:

  • Peel potatoes, if desired (I like to leave the peel on) and cut into 1/2" dice.
  • Heat olive oil in large skillet (you can reduce the amount of oil if using a non-stick skillet). Add the potatoes, spreading into a single layer. Don't stir yet! Let them get golden brown on one side.
  • Stir the potatoes, and let them brown on another side. Stir again, adding the pepper and onion. Continue to cook until the onions and peppers are tender. If the potatoes are not done, reduce heat to low and cover the skillet until they're done.
  • Add salt and pepper to taste, and serve.
