A New Mexico twist on the almighty crab cake. Chunks of crab fried up with roasted green chile into a mouthwatering and spicy treat. "*" See Kitchen Notes for more information or links to special ingredients.

1 ½ cup crab meat, (chunky bits)
1 cup stale bread crumbs, (run through blender until coarse*)
¼ cup minced onion
¼ cup minced bell pepper, (any color)
¼ cup roasted green chile, (peeled and chopped*)
1 tsp. dry mustard
½ tsp. red chile powder
1/8 tsp. garlic powder
Dash of salt
1 small egg, (beaten lightly)
1 Tbsp. fresh parsley or cilantro, (chopped)
½ tsp. Worcestershire sauce
Canola oil for frying
Wedges of lemon or lime

Steps:

  • Mix together all of the ingredients (except for the canola oil and lemon/lime) in a large bowl.
  • Divide the batter to make 4 - 6 crab cakes* and shape cakes, pressing firmly and squeezing out excess liquid. Set in the refrigerator while you make the horseradish sauce and heat up the oil.
  • Make the horseradish sauce (recipe below) and refrigerate. (This step could be done way ahead of time.)
  • Pour about 1/4" of oil in a skillet and heat over medium heat.
  • When the oil is hot (~325ºF), fry the crab cakes about 4 minutes to a nice brown color, then carefully flip and cook another 4 minutes or until brown. (I like the exterior of my cakes a little crispy so I go for a rich brown.)
  • When done, remove from the oil and place on paper towels or a paper bag to drain.
  • Spread a little horseradish sauce on the plate and top with a crab cake. Squeeze juice from a wedge of lime over the crab cake. Enjoy!

3/4 pound jumbo lump crabmeat, picked over
1/4 cup finely ground panko breadcrumbs
2 scallions, finely chopped
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
1 tablespoon chopped dill
1/4 cup mayonnaise
1 large egg
1 lemon, zested and juiced
1 teaspoon kosher salt
Dash cayenne pepper
1/2 cup canola oil
1 fennel, cored
1/4 cup fresh lemon juice
1/4 cup olive oil
Kosher salt
4 large eggs, plus 2 more (see Cook's Note)
1/4 cup cider vinegar
1/2 cup mayonnaise
1/2 cup Greek yogurt
1 heaping tablespoon prepared horseradish, preferably with beets
Kosher salt, for seasoning

Steps:

  • For the crab cakes: In a large bowl, mix together all of the ingredients except for the canola oil. Shape into 4 equal patties.
  • Heat the oil in a large skillet over medium heat until hot. Carefully add the crab cakes and fry until browned, 4 to 5 minutes. Carefully flip and fry on the other side until golden brown, about 4 minutes. Remove to a plate and keep warm.
  • For the fennel: Thinly slice the fennel on a Japanese mandoline. Transfer to a medium bowl; add the lemon juice and olive oil and toss well to combine. Set aside.
  • For the poached eggs: Bring a large saucepan of salted water to a boil and add the vinegar. Reduce the heat to a gentle simmer. While swirling the water with a slotted spoon, slowly add the 4 eggs and poach until the whites are solid and the yolks remains runny, 4 to 5 minutes. Carefully remove the eggs with the slotted spoon and drain on a paper towel-lined plate.
  • For the horseradish sauce: Combine all of the ingredients in a small bowl and stir well. Set aside.
  • Top each crab cake with some of the marinated fennel and 1 poached egg. Dollop with the horseradish sauce and serve right away.

3 tablespoons shallot, minced
½ teaspoon dried parsley
¼ teaspoon garlic powder
1 teaspoon dijon mustard
1 large egg yolk
3 tablespoons mayonnaise
2 teaspoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon kosher salt
1 pinch black pepper
1 pinch cayenne pepper, plus more for garnish, optional
2 cans crab meat, drained and picked for shells
¾ cup panko breadcrumbs
½ cup all purpose flour, for dusting
¼ cup canola oil
4 large eggs
1 tablespoon white wine vinegar
1 large egg yolk
2 teaspoons lemon juice
¼ teaspoon kosher salt
1 stick unsalted butter, melted

Steps:

  • Make the crab cakes: In a large bowl, whisk together the shallot, parsley, garlic powder, Dijon mustard, egg yolk, mayonnaise, lemon juice, and lemon zest. salt, pepper and cayenne, if using. Add the crabmeat and fold to combine. Add the panko and mix until just combined. Cover the bowl with plastic wrap and let sit in the fridge for 1 hour.
  • Shape the crab mixture into 4 equal patties. Dust the cakes with the flour and shake off any excess.
  • Heat a large skillet over medium heat. Add the canola oil, then fry the crab cakes until golden and crisp, 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  • Poach the eggs: Bring a large pot of water to a simmer over medium heat. Add the vinegar.
  • Crack 1 egg into a small bowl. With a spoon, stir the water in a clockwise direction to create a whirlpool. Carefully drop the egg into the center of the whirlpool. Cover the pot and cook for 3-5 minutes, or until egg white is set and yolk is still runny. Remove the egg from the pot with a slotted spoon and transfer to a container of cold water to stop the cooking process. Repeat with the remaining eggs.
  • Make the hollandaise: Add the egg yolk, lemon juice, and salt to a tall glass or container. Use an immersion blender to pulse a few times to blend together. With the machine running, slowly drizzle in the melted butter. Continue to blend until the mixture thickens and lightens in color.
  • Top each crab cake with a poached egg and drizzle with the hollandaise sauce. Garnish with cayenne, if desired.
  • Enjoy!

Mouth-watering Maryland-style crab cakes with remoulade my friends like better than any they've tasted... and I have some well-travelled friends! It's a recipe I perfected over several years, researching and sampling other recipes and finding them lacking.

1 pound lump crabmeat, picked over for pieces of shell
½ cup mayonnaise (such as Hellmann's®)
3 stalks green onion, minced
1 large egg
1 medium lemon, juiced
1 small jalapeno pepper, seeded and finely chopped
2 ½ tablespoons panko bread crumbs
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon hot pepper sauce (such as Tabasco®)
1 teaspoon Worcestershire sauce
½ teaspoon ground ginger
½ teaspoon Dijon mustard
⅔ cup creamy salad dressing (such as Miracle Whip®)
3 tablespoons horseradish sauce
2 tablespoons ketchup
1 cup panko bread crumbs, or as needed
¼ cup grapeseed oil for frying, or as needed

Steps:

  • Mix crabmeat, mayonnaise, green onion, egg, lemon juice, 1/2 of the jalapeno, panko, seafood seasoning, hot pepper sauce, Worcestershire, ginger, and mustard together for crab cakes in a large bowl. Mix creamy salad dressing, horseradish, and ketchup for remoulade with remaining jalapeno in another bowl. Cover and refrigerate both for 1 hour.
  • Remove crab mixture from the refrigerator and portion into 2- to 3-ounce cakes. Roll in panko, coating generously.
  • Heat oil in a large frying pan over medium-high heat. Place crab cakes in the hot oil and fry until they are a crispy golden brown, about 3 minutes per side.
  • Serve immediately with remoulade.
