CRAB STUFFED MUSHROOMS - AIR FRYER AND OVEN OPTIONS
Dad's easy seafood stuffed mushrooms are cheesy and delicious. A butter and breadcrumb crust gives it an awesome texture to compliment the mushrooms.

Steps:
- If cooking in the oven preheat your oven to 400 degrees.
- Chop up the fresh basil or measure out dried basil.
- Roughly chop the imitation crab into chunks and set aside.
- Wash and dry the mushrooms.
- Remove the stems from the mushrooms by twisting and pulling on them.
- Scrape out the interior of the mushrooms using a spoon. Be careful not to scrape to hard or too much. You want the mushroom to retain its shape.
- Add the crab, cream cheese, mozzarella cheese, minced garlic, garlic powder, onion powder, sea salt, fresh basil and black pepper in a food processor.
- Process until the mixture clumps up and forms a ball.
- Remove the filling from the food processor and fill the hollowed out mushrooms. You can fill them above the edge of the mushroom, the filling holds its form when cooked.
- Add the butter, breadcrumbs and olive oil to a small bowl. Mix well with a fork or with your hands until a crumbly texture is achieved.
- Place the crumb mixture on top of the mushrooms, pushing it down with your fingers so it sticks.
- If cooking in an air fryer place the mushrooms directly in the air fryer basket. If cooking in the oven place the mushrooms in an oven safe container.
- Spray the mushrooms with some vegetable oil from a mister.
- Cook the mushrooms for 10 minutes at 400 degrees in the air fryer or 18-20 minutes in the oven. You are looking for golden brown tops.
- Serve and enjoy!

Steps:
- Using a damp cloth, gently clean mushrooms. Remove stems and discard.
- Mince scallions and separate white and green parts.
- Preheat an air fryer to 360 degrees F (182 degrees C).
- Combine cream cheese, Cheddar cheese, the white parts from the scallions, paprika, and salt in a small bowl. Stuff filling into the mushrooms, pressing it in to fill the cavity with the back of a small spoon.
- Spray the air fryer basket with cooking spray and set mushrooms inside. Depending on the size of your air fryer, you may have to do 2 batches.
- Cook mushrooms until filling is lightly browned, about 8 minutes. Repeat with remaining mushrooms.
- Sprinkle mushrooms with scallion greens and let cool for 5 minutes before serving.

CRAB STUFFED MUSHROOMS
This tasty appetizer seasoned with thyme, oregano, and savory. Choose good sized mushrooms, about 2 inches across. When cleaning mushrooms, don't run them under water. They are like little sponges, and will absorb it; just wipe them clean with a damp towel. The filling can be made with fresh, canned, or imitation crabmeat. If using canned, be sure to rinse it first.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine crabmeat, green onions, herbs, and pepper. Mix in mayonnaise and 1/4 cup Parmesan cheese until well combined. Refrigerate filling until ready for use.
- Wipe the mushrooms clean with a damp towel. Remove stems. Spoon out the gills and the base of the stem, making deep cups. Discard gills and stems. Fill the mushroom caps with rounded teaspoonfuls of filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Parmesan and paprika.
- Bake for 15 minutes. Remove from oven, and serve immediately
