1 pound imitation crabmeat, flaked
1 cup Italian bread crumbs, divided
1/4 cup egg substitute
2 tablespoons fat-free mayonnaise
2 tablespoons Dijon mustard
1 tablespoon dill weed
1 tablespoon lime juice
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce

Steps:

  • Combine crabmeat, 1/2 cup of bread crumbs, egg substitute, mayonnaise, mustard, dill, lime and lemon juices and Worcestershire sauce. Shape into eight patties. Place remaining bread crumbs in a shallow bowl; dip each patty into crumbs to cover. Refrigerate for 30 minutes. , In a large skillet coated with cooking spray, cook patties over medium heat until browned on both sides.

2 egg yolks
12 fluid ounces heavy cream
¼ cup butter
1 large yellow onion, minced
1 stalk celery, minced
1 ½ teaspoons salt
½ teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon Creole seasoning
¼ cup all-purpose flour
½ cup shredded Cheddar cheese
½ cup shredded American cheese
1 pound cooked crabmeat
1 cup shredded sharp Cheddar cheese
1 bunch green onions

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x9 inch baking dish. In a bowl, whip together the egg yolks and heavy cream.
  • Melt the butter in a large saucepan over medium heat. Saute the onion and celery about 5 minutes. Season with salt, cayenne pepper, garlic powder, and Creole seasoning. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally, until very tender.
  • Mix the flour into the saucepan, and cook and stir continuously for 5 minutes. Mix in the egg yolk mixture. Stir in the 1/2 cup Cheddar cheese and American cheese until melted. Remove from heat and fold in the crabmeat. Transfer the mixture to the prepared baking dish.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Remove from heat and top with the sharp Cheddar cheese and green onions. Allow the cheese to melt before serving.

16 oz. softened cream cheese
1/2 c. Mayo
1/2 tsp. curry
6 oz. flaked crab
Salt to taste
Pepper to taste
1/2 c. or less of scallions
4 eggs boiled

Steps:

  • Combine the cream cheese, mayo, and curry, and spread on a platter. Top with the crab, and salt and pepper to taste. sprinkle with the scallions, egg whites and then egg yolks. Refrigerate. Serve with crackers.

1/2 cup butter, softened
1 (6 ounce) jar Kraft Old English cheese spread
2 tablespoons mayonnaise
1/2 teaspoon seasoning salt
1/2 teaspoon garlic salt
6 split English muffins

Steps:

  • Mix first 6 ingredients and divide among the split English muffins.
  • Freeze at least 30 minutes before serving. When ready broil until bubbly and golden, about 5 minutes.
  • These will keep 3 months in the freezer. I pack them up in sets of two for easy quick lunches.

1 stick unsalted butter
2 cups jumbo lump crabmeat
1 hard-boiled egg, grated
2 to 3 tablespoons fresh lemon juice
2 tablespoons dry sherry
Tabasco sauce to taste
4 5-inch warm toast squares, crusts removed
1 1/4 cups warm hollandaise sauce

Steps:

  • Melt the butter in a large skillet over medium heat. Add the crabmeat, egg, lemon juice, sherry and Tabasco and stir until just heated through, being careful not to break up lumps of crab. (Make sure mixture is well seasoned.)
  • Place the toast squares in individual 5-inch ramekins. Cover with crabmeat and top with hollandaise sauce.
  • Broil about 5 inches from heat for 3 to 5 minutes, until they are heated through and the tops are lightly browned. Serve immediately.
