4 cups cooked chicken ((fully cooked and shredded))
10.5 oz cream of chicken soup
1 cup sour cream
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt ((or to taste))
1/8 teaspoon pepper ((or to taste))
1 sleeve Ritz crackers ((crushed))
6 tablespoons butter ((melted))

Steps:

  • Preheat your oven to 350 degrees F. Prepare a casserole dish with non stick cooking spray and set aside.
  • Mix cooked and shredded chicken with cream of chicken soup, sour cream, and seasonings. Add to the bottom of your prepared casserole dish.
  • Top your casserole with crushed crackers and melted butter. Bake for 20-30 minutes.

4 skinless, bone-in chicken breast halves
2 stalks celery, cut into thirds
½ teaspoon salt
⅛ teaspoon pepper
1 cup cooked rice
6 ounces sour cream
2 (10.5 ounce) cans condensed cream of chicken soup
¼ teaspoon celery salt
⅛ teaspoon onion powder
¼ teaspoon garlic powder
salt and pepper to taste
2 cups crushed buttery round crackers
½ cup butter or margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring to a boil the chicken breasts, celery, 1/2 teaspoon salt, 1/8 teaspoon pepper, and enough water to cover. Cover, reduce heat to medium low; simmer for 35 minutes. Drain, reserving 1 cup liquid. Cool chicken, remove meat from bones, and cut into bite-size pieces.
  • In a large bowl, stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt and pepper to taste. Mix in cooked rice and chicken. Spoon mixture into a 9x13 inch casserole dish. In a resealable bag, shake together crushed crackers and melted butter. Sprinkle crackers over the top.
  • Bake in preheated oven for 30 to 35 minutes.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
  • Bake in the preheated oven until bubbly, 25 to 30 minutes.

2 cans (10-1/2 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream

Optional: Fresh parsley and sweet red pepper rings

Steps:

This is a wonderful dish! I haven't had the good fortune to have tried the original recipe at Cracker Barrel, but it it's anything like this, it's a winner for sure! Creamy chicken filling with a wonderful cornmeal crust that turns a golden color! It's a keeper for sure!

1 cup yellow cornmeal
1/3 cup flour
1 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons vegetable oil
3/4 cup buttermilk
1 egg
1/2 cup butter, melted
2 1/2 cups cooked chicken breasts (cut into bite- size pieces)
1/4 cup yellow onion (chopped)
1/2 cup celery (thin chopped)
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 (10 3/4 ounce) can cream of chicken soup
1 3/4 cups chicken broth
2 tablespoons butter

Steps:

  • Mix cornmeal, flour, baking powder, sugar, salt, baking soda, vegetable oil, buttermilk and egg together in mixing bowl until smooth.
  • Pour into greased 8" x 8" baking pan and bake at 375°F for 20 - 25 minutes until done. Remove from oven and let cool completely.
  • When cool, crumble corn bread and place 3 cups of corn bread crumbs in mixing bowl. Add 1/2 cup melted butter to crumbs and mix well, set aside.
  • In sauce pan on medium low heat place butter and saute onions and celery until transparent, stirring occasionally.
  • Add chicken broth, cream of chicken soup, salt, and pepper.
  • Stir until well blended and soup is dissolved completely. Add chicken, stir and blend until mixture reaches a low simmer. Cook for 5 minutes,
  • Remove from heat. Place chicken mixture in buttered casserole dish (2 1/2 qt.), or individual casserole dishes (about four).
  • Spoon cornbread crumb topping on top of chicken mixture (do not stir in chicken filling) and place baking dish in preheated oven at 350°F for 35 - 40 minutes. The crumbs will turn a golden yellow.

2/3 cup milk
4 tsp. GREY POUPON Dijon Mustard
1/4 tsp. black pepper
1-1/2 cups chopped cooked chicken
1 pkg. (10 oz.) frozen mixed vegetables (carrots, corn, green beans, peas)
1/2 cup chopped onions
30 round buttery crackers, crushed (about 1 cup)
1 Tbsp. butter, melted

Steps:

  • Heat oven to 350°F.
  • Mix soup, milk, mustard and pepper until blended. Combine next 3 ingredients in large bowl. Add soup mixture; mix lightly.
  • Spoon into 2-qt. casserole sprayed with cooking spray.
  • Combine cracker crumbs and butter; sprinkle over chicken mixture.
  • Bake 25 to 30 min. or until heated through.

2 (4 ounce) sleeves round butter flavored crackers
1/2 cup butter, melted
4 chicken breasts, cooked and cut into small pieces
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1/2 cup water
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon minced dried onion
2 cups egg noodles, cooked
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees. Grease a 9x13 casserole dish.
  • While the crakers are still enclosed in the plastic sleeve, pound them with a rolling pin to crush them into crumbs. Pour in bowl and mix in melted butter. Set aside.
  • Mix chicken, soups, water, mayonnaise, lemon juice, onion, noodles and sour cream in a bowl.
  • Spoon half of the crumb mixture on the bottom of baking dish and spread evenly. Top with all of the chicken mixture. Spread the rest of the crumbs over the top of the casserole.
  • Bake for 30 to 35 minutes until bubbling.
