EASY CRANBERRY ORANGE RELISH



Easy Cranberry Orange Relish image

A delightful change from the ordinary...the only relish most of my family will eat! Relish can be chilled up to 3 days.

1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

1 (18 1/4-ounce) box yellow cake mix
1-1/3 cups orange juice
1/3 cup vegetable oil
3 eggs
1 teaspoon rum flavoring, optional
FROSTING:
1 (12-ounce) carton cranberry-orange sauce
1 (3.4-ounce) package instant vanilla pudding mix
2/3 cup orange juice
1 (8-ounce) carton frozen whipped topping, thawed
sliced almonds, optional

Steps:

  • In a mixing bowl, beat the first five ingredients until smooth. Pour into two greased and floured 9-in. cake pans. Bake at 350° for 25-30 minutes or until the cakes test done. Cool in pans for 15 minutes before removing to a wire rack. For frosting, combine cranberry-orange sauce, pudding mix and orange juice in a mixing bowl. Fold in whipped topping. Split cooled cakes in half horizontally. Spread frosting between layers and over the top and sides of cake. Garnish with almonds if desired. This was originally my daughter's recipe, and she or I will make it for one or more of our holiday get-togethers. It can be served as a fruit salad along with the meal or as a light dessert. It's particularly pretty in a cut-glass bowl on a buffet. -Ruth Bolduc, Conway, New Hampshire

4 cups cranberries
1-1/2 cups sugar
3/4 cup water
1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

1 1/2 ounces absolute lemon-flavored vodka, absolute, lemon
3/4 cup red cranberry juice, red
1/2 cup cranberry ginger ale, cranberry
1 lime, juice of
3 -4 ice cubes
1 slice lemon, garnish
1 slice orange, garnish

Steps:

  • Chill a tall glass in the freezer until ready to use.
  • Place ice cubes into chilled glass.
  • Pour in grand marnia, vodka, cranberry juice, cranberry gingerale and lime juice.
  • Stir to blend well.
  • Garnish with lemon and orange slices.

My favorite gelled salad. I usually only get to make it at Christmas or Thanksgiving though. It is too much for just hubby and me, even though it is a smallish one. Cook time is chill time.

1 cup boiling water
3 ounces orange Jell-O
1 cup small marshmallow
8 ounces Philadelphia Cream Cheese
1/4 cup sugar
1 cup whipping cream
8 ounces crushed pineapple (drained)
1/2 cup pecans

Steps:

  • Pour boiling water over jello and marshmallows. Stir until marshmallows melt. Set aside this mixture until cooled slightly.
  • Cream the cream cheese and sugar; then add whipping cream. Whip until mixture is smooth and thick.
  • Add jello mixture, drained pineapple and nuts. Pour into mold and chill.
