CHERRY PIE-IN-A-JAR

Cherry Pie-in-a-Jar image

Provided by Kelsey Nixon

Categories     dessert

Time 1h15m

Yield 4 jars

Number Of Ingredients 11

5 cups fresh or frozen pitted cherries
Juice of 1 lemon
1 cup sugar
3 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1 teaspoon almond extract
Pie crust recipe making 1 (9-inch) pie crust or use a store-bought variety
4 tablespoons cold butter, cubed
Melted butter, for topping
Sugar, for topping
Special equipment: 4 (1/2-pint) oven-safe glass jars

Steps:

  • For the cherry filling: In a heavy-bottomed skillet cook fresh or frozen cherries and lemon juice over medium-high heat, stirring, until slightly softened, about 2 minutes. Add the sugar, cornstarch, and cinnamon. Bring the mixture to a simmer, stirring, until thickened, about 3 minutes. Remove the mixture from the heat, stir the almond extract into the cherries and cool. For the pies: Roll out the dough on a well-floured surface. Using the ring from the lid of the jar, cut out 4 circles of dough, that will be the tops of your pies. With the remaining dough, use a 6-inch inverted pie plate to cut 4 circles that will line the inside of each 1/2 pint glass oven-safe jar. Working with the dough as little as possible, make sure that the dough covers the surface area inside the jar with the exception of a 1/2-inch at the top. Once each jar is lined with pie dough, fill each with 1/2 a cup of cherry pie filling. Place a small pat of butter on top of each pie, and top with the pie dough circles or make a lattice pattern. Make sure you vent the top of the crust by creating a slit so that the steam can escape. Using your finger or a fork, press the 2 pieces of dough together around the perimeter. Brush each pie crust with melted butter and sprinkle with sugar. Seal each jar with its metal lid and place in the freezer for up to 3 weeks. Baking instructions: If baking pies fresh, preheat the oven to 400 degrees F. Bake 40 to 45 minutes or until the crust is golden brown and filling is bubbly. If baking pies that have been frozen, bring them to room temperature before placing in the oven.

FRESH ORANGE PIE

Fresh Orange Pie image

I love the fresh strawberry and blue berry pies, in which the fresh fruit is enfolded in a glistening glaze. Would any other fruit work in this same way, I wondered. Then I found not one, but two, such pies with unusual fruit. One is a fresh pineapple pie (posted) and the other is this one in which fresh orange segments rest in a luscious glaze and just invite you to give it a try.

Categories     Pie

Time 50m

Yield 1 pie, 6-8 serving(s)

Number Of Ingredients 9

1 pastry dough, for a 1-crust pie
1 teaspoon grated orange zest
9 large navel oranges
1/2 cup sugar
1/8 teaspoon salt
3 tablespoons cornstarch
3/4 teaspoon vanilla
2/3 cup apricot jam
1/2 cup toasted coconut

Steps:

  • Preheat oven to 425 degrees. Prepare dough for a 1-crust pie, adding grated orange zest. Line pie plate with pastry. Prick pastry with fork to prevent puffing during baking. Bake in preheated oven until golden, about 12 minutes; cool.
  • Meanwhile, peel oranges and section into segments. Squeeze membrane and reserve juice; you should have about 1 cup. Pour sugar over segments and let stand 1 hour. Drain liquid from segments, add to reserved juice to make 1-1/2 cups (add extra juice if necessary).
  • Place juice in a double boiler with salt and cornstarch. Cook until thickened. Add vanilla. Cool to room temperature.
  • Spread apricot jam on baked pie shell. Add orange segments, spreading over jam. Pour cooled sauce over orange segments. Chill at least 1 hour before serving.
  • To serve: garnish with toasted coconut.

TRADITIONAL PECAN PIE IN A JAR

Traditional Pecan Pie in a Jar image

Traditional Pecan Pie in a Jar has a deeply toasted, sweet, luxurious flavor. Just break through the caramelized, crispy pecan topping to expose the amber-colored rich filling and flaky crust inside. Serve with sweetened whipped cream or vanilla ice cream, if desired.

Provided by Culinary Envy

Categories     Desserts     Pies     Pecan Pie Recipes

Time 1h43m

Yield 8

Number Of Ingredients 11

2 cups pecan halves, broken into coarse pieces
1 cup white sugar
¾ cup light corn syrup
¾ cup dark corn syrup
4 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread pecans on a baking sheet.
  • Bake pecans in the preheated oven until lightly toasted, 6 to 8 minutes. Cool to room temperature.
  • Bring sugar, light corn syrup, and dark corn syrup to a boil in a saucepan; boil for 2 minutes. Remove from heat and cool slightly, about 10 minutes.
  • Whisk eggs in a large bowl until frothy. Add syrup mixture slowly, whisking constantly to prevent eggs from curdling. Whisk in butter, vanilla extract, and salt until batter is smooth.

NO-BAKE KEY LIME PIE JARS RECIPE BY TASTY

No-Bake Key Lime Pie Jars Recipe by Tasty image

Here's what you need: graham cracker crumbs, sugar, kosher salt, unsalted butter, cream cheese, sweetened condensed milk, heavy cream, key lime juice, key lime zest, powdered sugar, mason jar

Provided by Alix Trager

Categories     Desserts

Time 1h25m

Yield 4 servings

Number Of Ingredients 11

½ cup graham cracker crumbs
2 tablespoons sugar
1 pinch kosher salt
2 tablespoons unsalted butter, melted
4 oz cream cheese, room temperature
⅓ cup sweetened condensed milk
⅓ cup heavy cream, divided plus 1 tablespoon heavy cream
3 tablespoons key lime juice, about 3 key limes
1 teaspoon key lime zest, about 4 key limes
2 tablespoons powdered sugar
4 oz mason jar, 4 ounces (115

Steps:

  • In a small bowl, mix together the graham cracker crumbs, sugar, and salt. Pour in the melted butter and mix with a fork until the texture resembles wet sand. Set aside.
  • In a medium bowl, beat the cream cheese, condensed milk, and 1 tablespoon heavy cream with an electric hand mixer until smooth and thick and the beaters leave a ribbon when lifted out of the bowl, 3-4 minutes. Using a flexible spatula, fold in the key lime juice and ½ teaspoon key lime zest until just combined.
  • Place the jars on a baking sheet. Spoon 2 scant tablespoons of the crumb mixture into each jar. Reserve the remaining crumbs. Press down firmly on the crumbs in the jars to form a packed, even layer.
  • Divide the filling evenly between the jars, about ¼ cup (25 G) per jar. Cover the jars with the lids and refrigerate for at least 1 hour, or up to overnight.
  • In a medium bowl, whip the remaining ⅓ cup (80 ML) heavy cream and the powdered sugar with an electric hand mixer until soft peaks form.
  • When ready to serve, top each jar with a dollop of whipped cream, the remaining cookie crumbs, and the remaining ½ teaspoon lime zest. Serve immediately.
  • Enjoy!

CRANBERRY & ORANGE MERINGUE PIE

Cranberry & orange meringue pie image

The creamy, citrus filling in this pie contrasts wonderfully with the sweet, fluffy meringue - a sure-fire showstopper

Provided by Good Food team

Categories     Dessert

Time 1h40m

Number Of Ingredients 14

140g cold butter , diced
250g plain flour , plus extra for dusting
100g icing sugar
2 egg yolks
250g fresh or frozen cranberry
3 tbsp cornflour
juice 1 lemon
juice 2 orange
100g golden caster sugar
85g butter , diced
3 egg yolks and 1 whole egg
4 egg whites
200g golden caster sugar
2 tsp cornflour

Steps:

  • For the pastry, put the butter and flour in a food processor and whizz to fine crumbs, then pulse in the sugar. Mix the egg yolks with 2 tsp cold water and, with the blade running, pour in the liquid to bring the pastry together. If it doesn't come together, add 1-2 tsp more water until it does.
  • Tip the pastry onto a lightly floured surface and bring together to make a flat disc, then roll out to line a 23cm loose-bottomed tart tin. Leave the pastry overhanging the tin and prick the bottom of the pastry case with a fork. Chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the pastry case with some crumpled baking parchment, fill with baking beans, then blind-bake for 15 mins. Carefully remove the parchment and beans, and bake for a further 10 mins or until the pastry looks golden and biscuity. Remove the case from the oven and trim the edges of the pastry with a sharp knife. Can be done the day before. Lower oven to 180C/160C fan/gas 4.
  • While the case is baking, make the filling. Cook the cranberries in a shallow pan over a medium heat with 2 tbsp water for 15 mins until pulpy. Push the fruit through a sieve over a bowl; discard the seeds and skins.
  • Put the cornflour in a clean pan and whisk in the lemon and orange juice until smooth. Add the sugar and cranberry purée, and heat until the mixture has bubbled and thickened, stirring constantly. Remove from the heat, add the butter and beat until melted. Add the egg yolks and whole egg to the pan, beat well and return to a medium heat. Keep stirring vigorously for 5 mins until the mixture thickens and drops off the spoon. Remove from the heat and set aside.
  • Meanwhile, make the meringue. Put the egg whites in a large clean bowl and whisk to stiff peaks. Add half the sugar, a spoonful at a time, whisking between each addition until stiff again. Whisk in the cornflour and remaining sugar until shiny and thick.
  • Pour the filling into the pastry case. Put spoonfuls of meringue around the edge of the filling so it just touches the pastry and pile the rest into the centre, spreading so that it covers the filling. Bake for 18-20 mins until the meringue is crisp and slightly coloured. Let the pie sit in the tin for 30 mins, then remove and leave for at least another 30 mins before slicing. Can be made several hours ahead.

  • Make the Crust: In a medium bowl, whisk together the flour and salt. Add the butter cubes, tossing them through the flour until each piece is coated. Cut the butter into the flour by pressing the pieces between your fingers and thumbs, flattening the cubes into big shards.
  • Continue to toss the butter with the flour as you work, re-coating the pieces. Mix until the butter is about the size of walnut halves.
  • Make a well in the center of the bowl and add the water. (Have more at the ready.) Toss the mixture gently to moisten it. Add more water, 1 to 2 tablespoons at a time, until the dough comes together. When it starts to come together, you can mix by gently kneading the dough to make it more homogenous. The dough should hold together easily without feeling dry and crumbly or wet and sticky. Form the dough into a disk and wrap tightly in plastic wrap. Refrigerate for at least 30 minutes (and up to 3 days) before using.
  • On a lightly floured surface, roll out the dough about 1 inch wider than a 9-inch pie plate (it should be about ¼ inch thick). Transfer to the pie plate, gently pushing it into the base. Trim the overhang to about ½ inch around the edge of the plate. Tuck and crimp as desired. Refrigerate for at least 15 minutes before baking.
