4 cups (1 pound) fresh or frozen cranberries
1 cup sugar
1 cup water
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
1-1/2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1 cup chopped tart apple
1/2 cup golden raisins
1/2 cup diced celery

Steps:

  • In a large saucepan, combine the first eight ingredients. Cook over medium heat until berries pop, about 15 minutes., Add the apple, raisins and celery. Simmer, uncovered, until thickened, about 15 minutes. Transfer to a small bowl; refrigerate until chilled.

Baked Brie with Cranberry-Pecan-Bacon Crumble image

This easy melted cheese dip is a crowd-pleaser, so you might want to double the recipe to have a backup ready! Feel free to change up the dried fruit-cherries, raisins, dates and figs would all work nicely.

4 strips bacon
2 tablespoons candied pecans or walnuts, finely chopped
2 tablespoons dried cranberries, finely chopped
6 dried apricots, finely chopped
1 tablespoon fresh rosemary leaves, finely chopped
2 teaspoons red wine vinegar
Kosher salt and freshly ground black pepper
One 7- to 8-ounce round high-quality Brie, preferably from France
Sliced baguette, crackers and apple and/or pear slices, for serving

Steps:

  • Preheat the oven to 325 degrees F. Lay the bacon in a large skillet, then cook over medium heat until golden and crisp, 4 to 5 minutes per side. Drain the bacon on paper towels, let cool, then finely chop.
  • Combine the bacon, pecans, cranberries, apricots, rosemary, vinegar, pinch of salt and a few grinds of pepper in a small bowl.
  • Remove the Brie from its packaging. Cut off the top rind of the round of Brie, leaving a 1/4-inch border around the edges (use a sharp knife and go in from above at a slight angle). Discard the rind you have removed. Put the Brie in a small baking dish. Top with some of the cranberry-pecan-bacon crumble, and scatter the rest around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
  • Serve with bread, crackers and apple and/or pear slices for dipping.

I think this came from the L.A. Times. It makes a nice change from the traditional cranberry-orange relish. Though this is called a chutney, I've characterized it as 'Western U.S.' cuisine rather than Indian. It strikes me as sort of 'West-Coast Fusion', in the spirit of ringing all kinds of changes on the traditional American holiday foods. Also, I don't think cranberries are very typical of the subcontinent. But it would probably be fun to serve it with a chicken or turkey curry.

1 inch fresh ginger, peeled & grated
3 cloves garlic, minced
1/2 cup cider vinegar
1/4 cup sugar
1/8 teaspoon cayenne
1 (16 ounce) can whole berry cranberry sauce
salt & pepper

Steps:

  • Combine first five ingredients in a medium sauce pan.
  • Bring to a boil, then cook over medium heat until reduced to about 1/4 cup.
  • Stir in cranberry sauce, heat through, and simmer for 10 minutes.
  • Add salt and freshly ground pepper to taste.
  • Cover and refrigerate.
  • Serve as a condiment with turkey, chicken, or pork.
  • Also good as a topping for vanilla ice cream.

2/3 cup sugar
1/3 cup cider vinegar

1 round Brie cheese (8 ounces)
Slivered almonds, toasted, if desired

Steps:

  • Mix cranberries, sugar, vinegar, water, gingerroot, cinnamon and cloves in 1-quart saucepan. Heat to boiling; reduce heat to low. Cook uncovered about 20 minutes, stirring frequently, until thickened. Cool slightly. (Chutney will thicken as it stands.)
  • Heat oven to 350°F. Lightly brush ovenproof plate with vegetable oil. Place unpeeled cheese on center of plate. Bake uncovered 8 to 10 minutes or until cheese is soft and partially melted.
  • Spoon half of the chutney over cheese. Sprinkle with almonds. Serve with crackers. Spoon remaining chutney onto cheese as needed, or save for future use.

1 onion (minced)
1 teaspoon salt
¼ cup brown sugar
¼ cup red wine vinegar
½ cup cranberry juice
½ cup dried cranberries

1 baguette (sliced)
8 ounces cheddar cheese (smoked and sliced)
¼ cup fresh parsley (for garnish)

Steps:

  • Preheat oven to 400 degrees F
  • Cover a half baking sheet in foil and lay bacon in a single layer in the pan. Bake for 20-25 minutes, or until crispy.
  • Remove bacon from the oven and transfer to a plate lined with paper towels to absorb excess grease. Use another paper towel to blot the top of the bacon to absorb grease.
  • Coarsely chop or crumble cooked bacon; set aside.
  • Heat 2 tablespoons of bacon fat from the baking sheet to a skillet over medium heat. Add onion and cooked for 5-10 minutes, or until it begins turning golden brown.
  • Add salt, brown sugar and red wine vinegar and stir until combined. Add cooked bacon, cranberry juice, dried cranberries and season with salt and pepper, as desired.
  • Stir and cook for 10-15 minutes, or until the jam thickens and turns brown in color. Store jam in an airtight container in the refrigerator until ready to use.

6 slices of bacon
1/2 cup brown sugar, lightly packed
1 tablespoon fresh rosemary, chopped coarsely
pinch of kosher salt
pinch of freshly cracked pepper
1/2 cup orange juice
12 oz. fresh cranberries
1 tablespoon tawny port

Steps:

  • Cut the bacon up into a fairly small pieces. Add the bacon to a medium-size saucepan. Set on the stove over medium-high heat. Cook for a few minutes, stirring occasionally. If it starts to burn or smoke, turn your heat down. Your goal is to brown and crisp the bacon. When your bacon is crisp, turn the heat off. Drain off most of the rendered bacon fat, leaving just a teaspoon or two in the pan with the bacon. Save the fat (let it cool, then cover it and stick it in the fridge). Put your pan back on the stove over low heat. Add the brown sugar to the bacon and fat in the pan. Toss in the rosemary, kosher salt, and freshly cracked black pepper. Stir your pot to combine the ingredients well. Break up any lumps of brown sugar against the side of the pot with the back of your spoon. Don't fret if anything is sticking to the bottom of your pot. Your heat is on low, so it shouldn't burn. And you're going to deglaze the pot next. Pour in the orange juice. Watch your face and hands, as the pot may give off a big poof of steam, depending on how hot it is. Stir well, scraping at the bottom of the pot with a wooden spoon to loosen any browned bits. Raise the heat to medium-high so your mixture can start to come up to a simmer. Add the cranberries to the pot. Cranberries freeze really well and can go straight from freezer to pot for this recipe. Give the pot a good stir to combine everything. Add the port. Stir to combine. Cook over medium-high heat until the mixture comes up to a simmer. When it does, turn the heat down a little and cover the pot tightly. Simmer covered for about 5 minutes. Keep an eye on your pot. If it starts to bubble over, turn the heat down a little. After 5 minutes, uncover the pot. Stir the mixture. As you stir, smoosh the cranberries against the side of the pot to pop them. Keep the heat on medium as you do this. It will cook as you stir, evaporating some of the liquid and thickening your chutney. It should be really thick at this point. If you have liquid left in the pot, cook over medium heat for a minute or two more, stirring constantly to evaporate it. Turn the heat off and transfer the chutney to a bowl to cool. When it's totally cool, cover and stick it in the fridge. The chutney will keep in the fridge for about 3 days.
