4 cups cranberries
1/2 c. cream cheese
1 lemon, for zest/juice
1 tsp. raw sugar
1 box refrigerated ready-to-bake pie crust (2 boxes if your pie pans are shallow)
4 eggs
1/2 c. flour
1/2 tsp. kosher salt
3 c. sugar
2 tbsp. butter
2 tsp. vanilla

Steps:

  • 1. Zest/Grate lemon peel (no white; 1 teaspoon); squeeze lemon for juice (2 tablespoons). Place 1 cup cranberries in bowl with syrup and toss to coat; add 1 cup sugar and stir to coat cranberries. Transfer cranberries and sugar in bowl to an airtight container; chill until ready to use. 2. Unroll one pie crust and place in deep 9-inch pie dish; trim crust, leaving 1/4 inch overhang. Chill until ready to use. 3. Place in large bowl: cream cheese, eggs, remaining 2 cups sugar, and butter; beat with electric mixer 3 minutes or until smooth. Add flour, vanilla, lemon zest, juice and salt; beat 2 minutes more. Gently stir remaining 3 cups cranberries into egg mixture. 4. Pour filling into crust, unroll remaining dough for top crust and place over the filled pie. Trim dough to 1/4 inch beyond edge. Fold top crust under bottom crust and seal the edges by pinching or crimpling with a fork; brush top crust lightly with water and sprinkle with raw sugar. 5. Cut a few slits in the top of crust to allow steam to escape; chill 15 minutes. Preheat oven to 450 degrees. Place pie dish on baking sheet (for ease in handling); bake 10 minutes, then reduce temperature to 350 degrees. Bake 35-40 more minutes or until crust is firm and golden. Cool on a wire rack before serving; garnish with sugared cranberries.

½ cup packed brown sugar
½ cup walnuts
¼ cup all-purpose flour
1 teaspoon shortening
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Smash berries. Stir in sugar and 1/4 cup flour. Pour filling into pie crust.

1-3/4 cups fresh or frozen cranberries
1 tablespoon grated orange zest
1-1/4 cups plus 6 tablespoons sugar, divided
1 cup water
Dash salt
Dash ground cinnamon
4 teaspoons plus 1/4 cup cornstarch, divided
1/4 cup orange juice
2 cups 2% milk, divided
1 tablespoon butter
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar

Steps:

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. , Meanwhile, line a 9-in. pie plate with pastry; trim and flute edges. Line pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. , In a small saucepan, combine the cranberries, orange zest, 1/2 cup sugar, water, salt and cinnamon. Cook over medium heat until berries pop, about 15 minutes. Add a small amount of hot milk mixture; return all to the pan, whisking constantly. , Whisk vigorously over medium heat as mixture begins to thicken (mixture will become very thick). Bring to a boil; whisk 2 minutes longer. Remove from the heat; whisk in butter and vanilla. Transfer custard to crust; spread evenly with reserved cranberry mixture., Add cream of tartar to egg whites; beat on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread meringue over hot filling, sealing edges to crust., Bake at 350° for 12-15 minutes or until meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate overnight.

1 (9") store-bought or homemade prebaked pie crust
12 oz. fresh or frozen cranberries
1½ cups (300 g) sugar
¾ tsp. kosher salt
1 Tbsp. finely grated lemon zest (from 1 lemon)
1 Tbsp. plus 1½ tsp. fine-ground cornmeal
1 Tbsp. all-purpose flour
4 large eggs, room temperature
½ cup heavy cream
4 Tbsp. unsalted butter, melted, slightly cooled
1 tsp. vanilla extract
¼ cup fresh lemon juice
Powdered sugar (for serving; optional)

Steps:

  • Place a rack in middle of oven; preheat to 325°F. Place pie crust on a rimmed baking sheet. Cook cranberries in a medium saucepan over medium heat, shaking pan occasionally, until some have begun to split and burst, 6-8 minutes. Drain off any excess liquid. Remove from heat and let cool (if you're in a rush, transferring to a baking sheet or medium bowl will help them cool faster).
  • Combine sugar and salt in a large bowl, then add lemon zest. Use your fingers to rub zest into sugar until moist and fragrant. Whisk in cornmeal and flour, then add eggs and vigorously whisk until well combined, about 30 seconds, Whisk in cream, butter, and vanilla, then add lemon juice and whisk again. Set a few cranberries aside for the top. Gently fold in remaining cranberries with a rubber spatula, breaking up any clumps.
  • Gently pour mixture into pie crust and dot reserved cranberries over top of custard (this makes for the most photo-worthy dessert). Bake pie until top is golden brown and set but custard still jiggles in the center (about a 3" radius), 60-70 minutes. If your pie isn't as brown as you'd like it, you can increase oven temperature to 350°F for the last 5-10 minutes. Transfer pie to a wire rack and let cool (custard will fall as it cools). Transfer pie to the fridge and chill at least 1 hour.
  • Just before serving, dust with powdered sugar if using. For the cleanest slices, cut with a hot dry knife (just like if you were cutting cheesecake).
  • Do ahead: Pie can be made 3 days ahead. Keep chilled. Return to room temperature to serve if you'd like.

CRANBERRY CURD TART

If you are a fan of lemon curd or the classic French tarte au citron, you will love this cranberry version. To minimize kitchen time, make it in stages, preparing the crust and curd a day or two in advance. The finished tart keeps well for a couple of days too. The wheat-free hazelnut crust is adapted from a cookie recipe from the pastry chef and writer David Lebovitz's popular website.

1 1/4 cups/180 grams raw hazelnuts
1 cup/125 grams rice flour
1/4 teaspoon salt
1/2 cup/112 grams sugar
6 tablespoons/100 grams softened butter, more as necessary
12 ounces/340 grams cranberries
1 cup/225 grams sugar
Peel (orange part only) and juice of 1 orange (about 1/2 cup)
4 ounces/113 grams softened butter (1 stick)
2 eggs plus 2 egg yolks

Steps:

  • Make the crust: Heat oven to 325 degrees. Put hazelnuts on a baking sheet and roast for 10 to 15 minutes, until skins darken and crack. Put roasted nuts in a clean towel and rub off skins. Discard skins and let nuts cool.
  • In a food processor, grind nuts with half the rice flour until mixture resembles coarse cornmeal. Add remaining rice flour and salt and pulse briefly.
  • Cream sugar and butter in a mixing bowl with a wooden spoon for a minute or two until pale and thick. Add nut mixture and combine until dough comes together. If it seems crumbly, add 1 to 2 tablespoons softened butter or a little cold water.
  • Press dough evenly into a 10-inch tart pan; use half the dough for the sides and half for the bottom. Prick bottom with a fork and freeze for 30 minutes (or several days if desired).
  • Heat oven to 350 degrees. Bake chilled tart shell about 15 minutes until lightly brown. Cool.
  • While the crust bakes and cools, make the cranberry curd: Put cranberries, sugar and orange juice and peel in a saucepan over medium heat. Simmer until cranberries have popped and softened, about 10 minutes. Transfer to a food mill or medium mesh sieve and press cooking liquid and solids into a bowl. (Alternatively, for the most vibrant color, purée the cooked cranberry and orange mixture with an immersion blender or in a food processor or blender. Press through a fine-mesh sieve.) Whisk the butter into the warm liquid.
  • Put eggs and egg yolks into a bowl and beat lightly. Slowly whisk a cup of warm cranberry liquid into the eggs to temper, then combine both and whisk together. Wipe out pot if necessary, return liquid to pot and cook over low heat until nearly bubbling and thickened, about 10 minutes. If using immediately, let cool to room temperature. If working ahead, cool to room temperature, cover with plastic wrap (press wrap against curd) and refrigerate. (Curd may be cooked up to 1 day ahead.)
  • Pour cooled cranberry curd into the cooled prebaked tart shell and smooth top with a spatula. Bake at 350 degrees for 10 minutes to set curd. Cool on a rack. Store at room temperature for up to 2 days.

1 12-ounce bag cranberries, slightly thawed if frozen
1 cup granulated sugar
1/2 teaspoon finely grated lemon zest
2/3 cup heavy cream
Confectioners' sugar, for dusting

Steps:

  • Lay 1 sheet of pie dough on a lightly floured surface. Lightly beat 1 egg and brush some on the dough, then place the second sheet of pie dough directly on top. Roll out the double layer of dough into a 12-inch round. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp with your fingers or a fork. Brush the edge with more beaten egg. Refrigerate until firm, about 30 minutes.
  • Preheat the oven to 350 degrees F. Line the crust with foil, then fill with pie weights or dried beans. Bake until lightly golden around the edge, about 15 minutes. Remove the foil and weights and continue baking until the bottom of the crust is dry, about 5 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the filling: Roughly chop the cranberries and combine with 3/4 cup granulated sugar and the lemon zest in a large bowl. Spread in the cooled crust. My husband liked it so much that he has requested it for Christmas. It is a little different from the other cranberry apple pies as the fruit is baked in a custard and the crust contains cream cheese. Try it, you'll love it!

2 cups unsifted all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
2/3 cup cold butter
3 ounces cream cheese
3 -4 tablespoons cold water
4 large granny smith apples, peeled,cored and thinly sliced
3 cups fresh cranberries
1/2 cup chopped walnuts
1 egg
1/4 cup all-purpose flour
3/4 cup granulated sugar
1 cup whipping cream
2 teaspoons vanilla
1/2 cup red currant jelly

Steps:

  • To make the pastry, mix the flour, sugar and salt in a medium bowl.
  • Add the butter and cream cheese and cut in with a pastry blender until the particles are very fine.
  • Stir in the water, mixing until a ball of dough forms.
  • Knead the dough 3 or 4 times on a floured surface into a smooth ball.
  • Wrap and chill 1 hour.
  • Preheat the oven to 400 degrees F.
  • To make the filling, mix together the apples, cranberries and walnuts.
  • Roll out 2/3 of the pastry on a floured surface to a 13-inch circle.
  • Use the pastry to line the bottom and sides of an ungreased 10-inch pie plate.
  • Fill with the apple mixture.
  • To make the custard, beat the egg, flour, sugar, cream and vanilla in a bowl until smooth.
  • Pour the mixture evenly over the apple mixture.
  • Roll out the remaining pastry to an 11-inch circle and cut into 1/2-inch wide strips.
  • Arrange and weave a lattice over the top of the pie.
  • Fold the edge of the bottom pastry over the lattice to hold the strips in place.
  • Bake 50 to 60 minutes.
  • Heat the jelly until it bubbles.
  • Spoon the jelly evenly over the top of the pie.
  • Cool to lukewarm; cut into wedges.
